What's for dinner Wednesday?

I'm so ashamed. It's leftovers again tonight here. I've had a busy day. Did all the laundry, got the Christmas cards ready to mail (finally), wrapped up the kids gifts and boxed ready to take to Fed Ex tomorrow. Did a little cleaning and I'm just tired right now.

Traffic was impossible to turn left and go for lunch close to the mall, so right I went and Harley's for chicken breast and baby green limas.

Really wanted braised white beans and spinach rollups :o(

Mike is grilling pork chops. I will make mashed potatoes and a veggie to go with them.

Oh and applesauce...I almost forgot.

Patti, we like that Panera broccoli cheese soup too, but Costco's runs a close second to that. I'm due for a Costco trip, maybe Friday. We're having pork ribs, I trimmed and browned some early today and put them in my slo cooker with a made up sauce- tomato, onion, garlic, bit of vinegar, dash of numeg, pinch of brown sugar, whatever was within reach. I've got one huge baked potato almost finished to share with DH. There should be enough ribs for tomorrow too and then I'll cook some rice to go with them that DH prefers.

I'm donating blood tomorrow, so last night I had spinach. Tonight I'm having liver. Plus a multi vitamin. Because my diet has sucked lately. I just hope it's enough to get my iron up so I can donate. #26!

I'm gearing up for soups, stews, and chowders FINALLY! I just cannot get in the mood until the chill settles in for good. I've got a nice, meaty ham bone in the freezer that waves at me whenever I open the door. Pea soup in the near future, yum. The recipes I've seen for Tuscan bean soup sound 'mahvelous'; I'll have to add that to my list.

Partymusic, it kind of was like a frittata. I was looking for something meatless because I'm going to have ham with a honey glaze to go with it. It was very good but I'm glad I did a trial run. Will do some tweaking. It had cubed hash browns, zucchini, onions, red bell pepper and spinach in it. I think I will cut the spinach in half. It also called for eggs and egg beaters. I just had eggs but didn't know how much to use in ratio to everything. Next time I will use the eggbeaters, too to give it a little more eggy base. With those adjustments, I think it will be great. I never saw a double yolk hard boiled egg either!

I have a roast with tomato gravy cooking and a pot of rice for that gravy. Been busy today trying to pack for our trip to see Mom and the family. And doing laundry that seems to just keep replenishing.

Well, now, Miss Lynn, I hope you have enough to share 'cause I think a lot of us would like an invite ;-) Hope it tastes as good as it sounds!

Ravencajun, have a good trip and a wonderful holiday with your mother. Pack the bags and lock them so the clothes they wear until you travel don't need laundrying again! How far do you have to go?

Nita, hasn't it been great weather for cooking out this late in the season? I love apple anything with pork.

Glenda, now I'm just going to have to find a recipe for those white bean/spinach rollups. They must be fantastic for you to like them so much.

OK, tomorrow I HAVE to cook--no choice as we're officially out of leftovers :-)

I was going to make hamburger helper and veggies but Lauren wanted a broiled chicken to make chicken soft tacos. We all went shopping for Christmas dinner and cookie making this afternoon. So, we had tacos and Spanish rice.

It sounds all fancy but it really isn't. Dredge sole in some flour, brown in butter the add some lemon and parsley to the browned butter and pour it over the fish. Easy, Peasy!!

I absolutely hate cooking fish in the winter because of the smell in the house. So we're boiling some vinegar!

hamburger patties, mashed potatoes and brown gravy over all. Cooked up some sweet yellow bell pepper and onion in the pan with the meat. Oh so good

BLT on a croissant and tomato soup. Was a nightmare drive home last night on icy roads and the hot soup really hit the spot.
