Peanut butter fudge question

My recipe calls for 12oz. peanut butter chips, which I forgot to buy, so I will substitute real peanut butter instead. How much peanut butter do you think I should use?

I don't know but before I found out my son was allergic to peanuts, I made the best peanut butter fudge that uses peanut butter. I think SharonFL posted the recipe here. I blogged about it. The chips add solidity to fudge recipes so I'd be cautious about substituting pb for pb chips in a fudge recipe.

Your description of the candy texture sounds very much like a candy that the Sun Harvest store carries, called "Halvah". But it is made with Sesame seeds. Finely ground, I think. I have done a Google search for Halvah recipes, but didn't find any made with peaunt butter. But I imagine you could substitute peanut butter for the Tahini or ground sesame seeds in one of the recipes for the sesame Halvah. I'll be watching this thread to see if anyone comes up with your recipe. I dearly love the Sesame Halvah, but don't indulge very often, it is quite rich, and very addictive! Rusty

Well, mine has marshmallow cream, Reese's peanut butter chips, but no vinegar. My kids love it, and it's easy and pretty foolproof, as long as you cook to soft ball stage before adding the chips. I find that 5 minutes isn't long enough, I always end up cooking at least 7 minutes. I've made it using a cup of peanut butter instead of the chips and it is a bit softer, but still good. FANTASY FUDGE 3 cups sugar 3/4 cup real butter 2/3 cup evaporated milk 12 oz. Chocolate chips 7 oz. Jar marshmallow cream 1 cup chopped nuts-optional 1 tsp vanilla Bring sugar, butter and milk to a rolling boil for 5 minutes, stirring constantly. (I test it at this point to make sure it has reached soft ball stage, sometimes it takes longer, especially if I make a double batch). Remove from heat and stir in remaining ingredients until chips are melted and fudge is smooth. Pour into a greased 9x13 pan, let cool to room temperature and cut into slices. VARIATIONS: Peanut butter fudge: Sub peanut butter chips for chocolate and omit nuts Cookies and Cream: Sub white chips and stir in 1 cup crushed Oreos instead of nuts Creamsicle Fudge: Sub white chips for chocolate, omit nuts, pour half of the fudge into pan. Stir 2 tsp orange extract, 4 drops yellow food coloring and 3 drops red food coloring into remaining fudge, pour orange fudge over plain fudge and marble in with knife. Candy Cane fudge: Sub white chips, omit nuts and stir in 1/2 cup crushed candy canes, sprinkle top with more crushed candies. Annie

I halved the recipe and use the Velveeta block. Just cut it up and half the amt filled one of those round tins full. Paula Deen's Peanut butter Velveeta Fudge 1/2 pound sliced easy-melt cheese (recommended: Velveeta) 1 cup (2 sticks) butter 1 cup creamy peanut butter 1 teaspoon vanilla extract 1 cup chopped nuts 2 (16-ounce) boxes confectioners' sugar Directions Lightly spray the bottom of a 9 by 2-inch square pan with nonstick cooking spray. In a saucepan over medium heat, melt cheese and butter together, then add peanut butter and stir until smooth. Remove from heat and add vanilla and nuts. Empty confectioners' sugar into a large bowl and pour cheese mixture over sugar. Stir until completely mixed. Candy will be very stiff. Use your hands to squish everything together. Using your hands, remove candy from the bowl and press evenly and firmly into the pan. Because of the amount of butter in this recipe, pat top of candy with a paper towel to remove excess oil. Place the pan in refrigerator until candy is firm. To serve, cut into squares.

I'm not sure what part the milk fat plays in fudge so I think I've always used whole milk in this recipe. I'll substitute if I know there's no 'science' involved but I really have no idea in this case. Alton Brown would probably know!

If you buy the PB chips you use them for this recipe! LOL

Salted Nut Roll Bars

1/2 cup margarine
12 oz bag peanut butter chips
1 can Eagle Brand Condensed milk
dry roasted, salted peanuts
2 cups miniature marshmallows
Butter a 9x13 pan. Put a layer of peanuts in but don't cover the bottom of pan completely. Set aside. Melt margarine, chips and milk over low heat or in microwave. Stir in marshmallows, don't melt. Spread mixture over nut layer and top with another layer of peanuts. Cool and cut.

I would have to make it sans the nuts. Nuts are my fav food, but they tear up my belly because of diverticulosis(sp)? I guess I could make it without though and it wouldn't change the recipe that much.

The best peanut butter fudge recipe "I THINK" is the one that is just like the choc. one that uses marshmello creme in a jar...only instead of choc. chips you use the peanut butter...Best I've ever tasted.

I use the one pattico uses--it really is the easiest and best. Pattico, when I read your posts sometimes it seems like we're "Daryl and my other brother Daryl". (You'll get that if you ever watched Bob Newhart Show.) We seem to have a lot in common.

Pattico, that's the recipe I'm attempting to make, except I don't know how much peanut butter to substitute for the pb chips. I love that recipe.

Before I posted my question I did a search and came up with nothing. After your suggestions, I called Jif and the lady I talked to said she had no idea. At your suggestion I also called Chef Hotline and that costs 9.00 plus per year to use.

I appreciate your help but I sure hope all those caps aren't meaning you're getting snippy with me!!

I will try 8oz. and hope for the best.

Mammie--here's my recipe

PEANUT BUTTER FUDGE

2 c. sugar
2/3 c. milk
1 jar marshmallow cream
1 c. peanut butter
1 tsp. vanilla

Cook sugar and milk to soft ball stage (about 5 minutes after it comes to a boil). Add remaining ingredients,mix well and pour into a 6x10" pan. Makes 2 lbs.

The one from all recipes is very good.Every time i'd go in the kitchen i had to have a piece.So did my GD.My GD told me" Nana i wish you hadn't sent me that recipe,i keep making it,and i can't stop eating it"LOL
