Shortbread cookies

I have to admit I've never made shortbread cookies. They're so good, and easy.

I found a recipe for Scottish shortbread, and it said to refrigerate the dough for a couple of hours and then roll out. I did and it was a royal pain to roll; my dough kept breaking up.

I left it alone to warm up a bit and I ended up by rolling small sections. But they do taste good!!

So, do you refrigerate your dough, or not?
