Help with shortbread recipe please

Hello. I have a desire to try shortbread cookies even though they never come out right for me. I'd love some help confirming that my recipe is accurate. I don't know if I need to adjust for altitude (or attitude!) or not, I'm at 8200 feet.

I will be trying the BH&G recipe which follows but does NOT specify if I need to use salted or unsalted butter nor does it specify whether or not the butter should be chilled or room temp. Since I've never had success with shortbread, I assume theses might be important details that could make a positive difference.

Here goes:

1 1/4 C a&p flour

3 Tbs sugar

1/2 C butter

In a mixing bowl combine flour and sugar. Cut in butter till mixture resembles fine crumbs and starts to cling. Form the mixture into a ball and knead till smooth.

Pat or roll into 8" circle, press with fingers to make scalloped edge, cut circle into 16 pie-shaped wedges, leave wedges in circle shape, bake at 325 for 25 to 30 minutes or till bottom starts to brown and center is set, cut wedges again while warm, cool for 5 minutes, remove from cookie sheet to cooling rack, cool.

Somehow, this has never worked for me. Any suggestions will be welcome!

Thank you in advance!

Jennifer
