We're doing the same - clearing out the freezer. I had a bit of cooked ground beef, and some green enchilada sauce with red bell peppers, so beef and bean enchiladas.

Roast chicken and gravy, carrots and corn.
I soaked diced onions in olive oil and salt and day, then mixed it into the mashed potatoes. We love these.

Maryc, if you run out of freezer leftovers, come on down. I have enough for an army.

Jas, those onions sound wonderful. I think I'll do some tomorrow only slice them and sprinkle over some tomatoes with the rest of my fresh mozzarella. Your dinner sounds warm and comforting.

Haven't been to Zoe's in a week so: spinach rollups and braised white beans with fresh rosemary. Yummy!

"Bagged Potatoes" which are sliced with the peelings on, dipped in oil and then shook in a bag with S&P,onion & garlic powder and paprika, then baked.

We did french bread pizza. Didn't feel like making the dough so pulled out a loaf of french bread and added all the fixings. It was very good and went great with a Bears win.
