What's for dinner Thursday?

Had an appointment with my oncologist this morning. Got two thumbs up on my blood work and overall health. Every time I go he mentions what a wonder it is that the cancer hadn't spread to my lymph nodes. Wanted me to have a scan for my lungs since that's the next place the cancer attacks. Already have one scheduled for 12/30 so I don't see any more doctors until January.
Went to Walmart and bought an electric roaster to cook my turkey this year. They had a 16 qt. Rival for $24.84. It got great reviews so I bought one. I'm making Jasdips crockpot dressing so my oven will be free for casseroles and rolls.

Congrats on the good news Patti!

I too am making Jasdip's crockpot stuffing. I made it last year and it was a big hit with my guests and also for freeing up space in my ovens. One less thing to juggle!

Tonight we are having Chicken Marsala and oven roasted potatoes with olive oil and garlic.

Good News! Just keep getting better. I was gone most of the day. Cheryl and I did a little Christmas shopping and we both went to the chiropractor. We also shopped for groceries, should not have to shop next week. Supper and lunch for me was a hot dog with mustard and chopped onion from Steak and Shake. It is raining here.

Lots of variety for dinner this evening! Shirley, I love days that have no interruptions. Even days that I plan to stay home and get caught up on things, there are usually reasons to head out or someone comes over. Stuffed peppers sure sound good! Pam a BLT is good anytime. That's usually what hubby orders when we go out for breakfast (he doesn't do eggs) Angela we had corn on the cob on the weekend and nuked it with the husks on. Have you tried that? OF we were in a store today and the Halloween stuff was out along with back-to-school supplies. Rhizo, I love the sound of your dinner every time you have that! B.e. peas I doubt I would like but that would be easy to leave out. I remember you said once it was a mix that you buy. Phyllis, eating frozen grapes made me smile, then I saw the radish sandwich. I feel sorry for you LOL. Maybe we should all send you a bit of our dinners, and you'd have a feast! KIttiemom, everytime I see you having shrimp scampi I want it. But we never buy shrimp. I'm going to have to just buy a bag of frozen ones once and for all and make it. :)

Soft foods...yuck!!! I had sinus surgery last Friday and still can't do any chewing for another week. I am sick of yogurt, broth, mashed potatoes, oatmeal, etc... My dream meal for tonight is a crusty sourdough baguette slice topped with olive tapenade. My entree will be a steak with sautÃÂ©ed mushrooms and a ceasar salad and more crusty bread! A big peanut butter cookie for dessert!

This won't be the healthiest dinner posted, but I've had about 30 interruptions today and I don't even have sheets back on the bed from this mornings laundry yet. Just sat down to do DH's invoicing, I'm having two Tylenol and a glass of iced tea. Asked DH, would you like bacon, toast and eggs, or do you want to grill hamburgers for us, and he said bacon and eggs ;)

Well, I woke up this morning and hubby had 2 pounds of ground beef and 1 pound of sausage thawing in the refrigerator. Cans of tomato sauce, diced tomatoes and tomato paste were on the kitchen counter next to the stove. I took a guess that was a pretty good hint that he was ready for another big pot of spaghetti sauce. We had a huge shrimp salad, spaghetti, and garlic bread.

Patti, what great news. Just keep taking care of yourself. A whole month of not seeing any Dr that is a wonderful early Christmas present. Hope I can say that real soon.

Dinner for hubby was leftover ravioli & I had a hot dog.

It hit 55 today but they say rain tomorrow & Sat morning then very cold. Can't wait.

Congratulations from me, too, Patti. You've been through so much. I'm holding my breath that a CT scan tomorrow doesn't show any cancer recurrence since I've had a scare with fatigue and right flank pain. I'm always looking over my shoulder at it.

After Happy Hour, we're having raviolis with vodka sauce and grilled Italian sausages. Garlic bread toast.

Still would love to know how Mary3444 makes her baked ravioli!!

Matti, Jasdip's recipe sounds like the kind I make in the oven and I'm sure it's great since she makes it. Your post played a lot in my decision--always a little leery of the crockpot! I love chicken marsala and even bought a bottle of marsala. Then I found it it tastes just like sherry :-)

Sue, thanks. I always love to hear that kind of news even though I'm still a little afraid it's premature. Wish I'd had time to do a little more of my shopping while I was at Wal-Mart. I have a pretty big list for my shopping Sunday. I'm waiting til then because I have no freezer room for a turkey. Hope your visit to the chiropractor gives you some relief! Not a good time of year for cranky bones and backs!

Patti, that's fantastic news!

My family loves the crockpot stuffing, and the bonus is that it's so easy. Don't forget that your bird will cook faster, because it's not stuffed.

I made whole wheat pasta, tomatoes, green beans, sliced onions, all cooked in a large skillet with vegetable broth. It's so easy and delicious! (the pasta is put in dry)

AFTER HAPPY HOUR (woo hoo), steak & portabella.

Interesting to see a few mentions from cancer patients here. I'm one too. But if you walk out of that doctor office, you're a survivor. Next camera scope is 12/23. If good, it will be 12 months cancer free (for one of them). Thinking positive for FA-LA-LA.

A beautiful day here--put out a couple of shrubs before the rain and cold weather gets here.

Boiled shrimp, fried potatoes and baked beans to eat.

Breakfast...

Sausage links, scrambled eggs, fried taters, coffee cake loaf in the oven..

Recipe came from my coffee roaster...hope it's good...smells yummy..

didn't have the oven hot enough so had to finish out breaded chicken in the microwave...good thing I cut into it before plating!! we made sandwiches and salad...I love the sour dough we use...
