Last night's shrimp and rice casserole was incredibly good and made a lot so that is dinner tonight. I will make a salad to go with it.
I highly recommend that recipe for those that like shrimp, but you can easily change it to chicken breast pieces for those that don't.

I have been shopping with the girls today, nasty day with rain and the temps falling. I had some of my beef and vegetable soup with bread, some radishes, a mini banana muffin, and a pint of milk.

I've got homemade lasagna ready for the oven, pan cooked garlic squash, a green salad, and bread for dinner tonight. It's cool and overcast, but not raining.

We're having the pot roast with polenta again. I braised the roast yesterday in beef stock and red wine, tossed in onions, rutabaga, carrots, and parsnips for the last hour. So delicious last night but you know how much better things like that after being reheated the second day!

Raven....a whole stick of buttah? :-) That and a cup and a half of cheese, of COURSE it's delicious!

Temp dropped this morning, with rain. What ever happened to Indian Summer and a trip to the beach? Stupid season. My heartfelt thanks today for others providing the cooking. Lunch was at Ryan's Steakhouse (aka Country Buffet) for a big salad, crispy fried chicken, whipped taters & gravy, macaroni & cheese, a hard shell Taco, cheesecake buried in strawberry sauce with pears, strawberry glazed bananas, and the soft serve ice cream hidden under caramel. Burp. Picked up Crazy Bread from Lil' Ceasers, and a pound of candy from the candy store. Now off to Olive Garden, then end the day with some Kahlua. That should be the 2# I posted about the other day.

I put a pile of sliced onions and some olive oil in the slow cooker this morning and they've been cooking all day. I'll simmer some in beef broth for French onion soup, and a bunch of the onions will get frozen for toppings for hamburgers, pizza, serve with a roast or a steak.

An absolutely gorgeous day today, temperatures nearly broke a record for warmth. Changing dramatically overnight and for the rest of the week and into next week.

Raked leaves, put some laundry on the line, did some cleaning, and decided we'd go out for dinner and use the last of the 2/1 dinner coupon. I'm just headed out to the kitchen to make some butter tarts now.

Ingredients:
browned off hamburger
diced onions
diced red bell pepper
chili powder
seasoning salt

Shredded cheddar....white corn chips

Everything sounds great!! I was lazy, so just made some cold tuna salad, orange jello w/mandarin oranges and homemade popovers. Tomorrow night we'll make some comfort food! Thanks to all veterans around the country. We wouldn't be here without you!
