My son doesn't cole slaw, but he DOES eat this one and goes for seconds.

I originally had it first time I went to AK and the second time as well.

Here you go with my ***showing my rendition

Alaska cole slaw
5 cups shredded cabbage **I buy the preshredded plain, no carrots, etc at WalMart
1/2 cups almond slivers, toasted
1 1/2 cups dried cranberries
1/2 cup celery, diced**don't use
1/4 cup chopped green onions, white and green parts
1/2 cups chopped green bell pepper **don't use

This is the creamy dressing I used and it works great:

mix 1/2 c mayo with 2 Tbl cider vinegar **I used white wine vinegar, 2 tsp sugar, salt and pepper to taste Pour over coleslaw right before serving and toss JUST TO COAT

Combine cabbage, almonds, cranberries, celery, green onions, and green pepper in a large plastic bowl with a snap-on lid.
Combine all dressing ingredients, adding salt and pepper to taste, and refrigerate until ready to serve. Pour dressing over slaw just before serving. Stir well

I thought I had two packages of dried cranberries, but one of them turned out to be dried cherries. So I chopped up some of them. I wonder if anyone will notice. :-)

bet the cherries still add a nice sweetness.

I would not be able to tell the difference between cherries and cranberries when they are dried and chopped. I think it would take a side by side taste test.

I just tasted it, and I can't tell either. It tastes good!

I tried three carrot recipes the other night, and one of the best was also the simplest: Carrots cooked in a little water, some butter, a tiny bit of sugar (though I think that could be skipped), and some dill seed. I'm bringing this side dish too.
