He's full from lunch, a good show, panning for gold, sipping on hot cider and waiting to get on the bus so he can go SHOPPING!

Alaska cole slaw
5 cups shredded cabbage **I buy the preshredded plain, no carrots, etc at WalMart
1/2 cups almond slivers, toasted
1 1/2 cups dried cranberries
1/2 cup celery, diced**don't use
1/4 cup chopped green onions, white and green parts
1/2 cups chopped green bell pepper **don't use

This is the creamy dressing I used and it works great:

mix 1/2 c mayo with 2 Tbl cider vinegar **I used white wine vinegar, 2 tsp sugar, salt and pepper to taste Pour over coleslaw right before serving and toss JUST TO COAT

Combine cabbage, almonds, cranberries, celery, green onions, and green pepper in a large plastic bowl with a snap-on lid.
Combine all dressing ingredients, adding salt and pepper to taste, and refrigerate until ready to serve. Pour dressing over slaw just before serving. Stir well

I like to make coleslaw with a dressing made from a small can of crushed pineapple including the juice and mayonaise. It is yummy.

I'm getting ready to make it this weekend and have a question for you gals that have. Did you add the celery and green pepper? Need to add those to my grocery list if you did since you all liked it.

I don't add the celery and the green pepper, cause my family won't eat it.

In Alaska Skagway, they have the celery and green pepper.

I just add the toasted almond slivers, cranberries, chopped scallions

I saw the notes that you didn't add them, Glenda, but I wonder if anyone else did. Everyone seems to like it so much I'd like to know if they put them in. I'd go light on the green pepper--a little goes a long way with us.

I did add the celery and green pepper. My 24 year old son said the celery "made it" for him! He liked the crunch it added. With that being said, if you know someone does not care for one or the other, I'd leave it out.

Glenda, I made your cole slaw for a family get-together over the week-end. Everyone loved it! I told them I got the recipe from an "invisible" friend! I added the celery, don't really care for green pepper.

Thanks for the tip--we love the crunch of celery so I think I'll just add that and skip the gp.

I've made this for years. It is quite tasty. I omit the onions and add just a touch of mustard. Good stuff.

I admire all you good cooks I don't cook anymore except maybe in the winter time. I do mostly microwave or eating out. I had some realy good cole slaw at Cracker Barrel yesterday

I've been to that Salmon Bake and it's delish and fun! I make a cole slaw that is very similar so I'll try the recipe.
