I found the tax shelter in this posting when searching for a gift for my brother. He is a tax preparer and has everything. So I just had to share what I did for him. I took one of those woodcraft houses from Walmart- removed the two screws from the base. I cut a 1" block of wood that fit into the bottom of the house. I glued this block onto the base thus allowing the top of the house to be easily lifted off the base. I cut a 1/2" groove in the center of the block with the table saw so I could set a card of thumb tacks into it. This was hidden in the house until the top was lifted off. I wrote a poem for this & read it to him while my daughter did a Vanna White presentation of the house. Everyone got a good laugh out of this and I finally did a complete craft project! It's been a while. Hope you have as much fun with this as we did. Here's the poem: I drew your name for Christmas It's an honor, don't you know To get my brothers name for Christmas Ah! ashopping I will go. But then I started frettin After searching high and low Whatever will I get 'im (Twas wrong to worry so!) I went into an office shop Maybe something for your desk? I talked to the clerk a lot She tried to aid me in my quest. He could use a tax shelter Is what the lady said It seemed a bit off-kelter But there was nothing left instead. So here's your little shelter All painted so very nice The foundation has been mended The roofs' been polished thrice. The flowers are all blooming In the big pot by the door The bumblebees are buzzing And there's no sawdust on the floor. It seems to be the perfect place I do agree she's right It sure beats a plain old case And your tacks! They're finally safe at night!

Gosh the Italian style meatloaf sounds right up my alley, as well as the Reuben. Of course, any ole time for sausage and gravy over bicuits, is great comfort food. Enjoy pork cutlets as well, and wish I enjoyed eggplant. Hey lazypup, which style dill spears do you like: the new or the old? Marilyn, you are always so busy in the kitchen :o) I love the old, cause I think they have a greater flavor.

Here's a recipe I tried recently for marinated mushrooms that we really liked too. I think it needs way more garlic then it calls for, though - next time I'll double up on the garlic, and maybe add some raw at the end of the cooking time, too. The overall flavor was good so it's worth some tweaking. Ann's Chicken Wings which are rubbed with fresh garlic, pepper, salt and lemon zest. I would serve with some celery sticks and cheat and make some Buttermilk Dip from Penzey's. There is another Garlic Chicken Wing Recipe that I came across on a blog that sounds good too but I like trusted sources. A garden salad and make Roasted Garlic Dressing to go overtop. Also debating on Pastor Ryan's Tomatoes with Ricotta that is posted over on Pioneer Woman's site. I love mussels in wine and garlic and have thought about that. Clams are good that way too. Oh, there is just too much to choose from as I love garlic. I am thinking for dessert that it will be simple and just make some cute cupcakes - chocolate with buttercream or cream cheese icing and decorated. I got the idea from a 'grilling with Bobby Flay' show where one of his guests made this. It becomes very much like like a butter when finished. Is great eaten just as is or spread on crostini. This is how to make one serving of what I call an onion-garlic sandwich: Slice an onion in half crosswise. Cover one of halves with minced garlic and dot it with butter. Season however you like. Place the second half on top of the first like a sandwich. Wrap in foil and grill about an hour over medium heat or even indirect heat. You can also do this in the oven. Everything sounds so good. I don't know which of the recipes I'm going to try. When I can get hold of some smaller eggplants, I'll definitely be making those. They're beautiful! I did my shopping on Tuesday and I was planning on garlic pasta, scampi, and then trying the soup with some baby pasta in it. I just about got my groceries put away and I got the call to rush to hospital because my brothers heart stopped and they called a code on his room. Wow! By the time I got there his heart had stopped 3 times and they couldn't get a pulse back. 51 years old and he died of congestive heart failure. I am still in shock. This is the first time I have lost an immediate family member as an adult (grand parents passed when I was young). I didn't realize that people bring you food. I didn't even realize that I would need it. I am just exhausted. I was told that more food deliveries would be coming tomorrow. I feel like I am on another planet. I have a pantry full of garlic and next week I will probably treat myself to a garlic fest and think of you guys but I will probably miss this weekend. What a drag. Death sucks big time!! My parents are in shock, they never expected to out live their kids. I feel so heavy, sorry to put a burden on the thread. We are going to have a garlic weekend. Started early last night by rubbing garlic on the pizza dough after it's first bake and including roasted garlic on the finished pie. Yum. Christys pie had fresh italian sausage with plenty of garlic, onions, roasted garlic, mushrooms, fresh mozzarella and then parmessian grated on later. My pizza was roasted garlic, mushrooms, fresh mozzarella, frozen basil and provolone. Very good. Tomorrow night Christy wants steak for her Valentines dinner and I want shrimp, so she will get a New York strip also rubbed with garlic before it goes on the grill pan or grill, depending on weather.. then topped with some of the roasted garlic made into a roasted garlic butter. I was going to make scampi with my shrimp, but I feel like boiled shrimp so I'll do it my regular way by boiling a bunch of garlic in the water first, with some lemons, a little celery and a capfull of crab boil. No Old Bay in this house ever. Hate the stuff. I get my crab boil smuggled up North by our Louisanna relatives. ;] I'll make a nice remoulade to go with the boiled shrimp, making it heavy on the garlic. I haven't made garlic dip in a while so I'll make some of that for us to snack on while dinner is being made. Not quite sure yet what potato and veg I'll make. I'll bet there will be more garlic in them though. So, none of us have come up with a garlic dessert yet, eh? Chuckling. Sunday I'm going to make this recipe I invented many years ago when I was working in a restaurant where each night I had to come up with one vegetarian and one meat entre each night. I made these and they became a real favorite. Avocado Enchiladas. Flour tortillas, thick slices of avocado on them, garlic powder, monterey jack. Roll up and make a sauce of sour cream, thinned a bit and with a ton of garlic powder and a little sea salt. Pour over enchiladas and bake until cheese melts. It was rediculously simple but really tasty. Years later I changed it up to use roasted garlic inside and in the sauce too, but the garlic powder gives a nice kick to it and I continue to use it as well. This is one of the few places I use garlic powder in such a standout way. Hmm.. maybe I'll just make this as a side dish with out Valentines dinner instead of a starch and have a salad with. Ceasar of course.. smiles. Here's the recipe for the way they're made here: Sizzling Garlic Prawns In Spain, gambas al ajillo is a favorite tapa, served sizzling hot in shallow earthenware casseroles called cazuelas. Good crusty bread is a must for dunking in the sauce. 3/4 pound small shrimp in their shells Salt Paprika, preferably Spanish 4 tablespoons olive oil 4 garlic cloves, sliced 1 small dried red chili pepper, seeds removed and cut in half, or 1/4 teaspoon crushed red pepper flakes 1 tablespoon lemon juice 1 tablespoon dry white wine (vermouth is fine) 2 tablespoons minced parsley Shell the shrimp. (It's not necessary to devein them.) Sprinkle with salt and paprika. Heat the oil, garlic and chili peppers or pepper flakes in a medium skillet. When the garlic is just beginning to brown, add the shrimp and cook, stirring, about 1 minute, or until just done and firm to the touch. Stir in the lemon juice, wine and parsley. Serve immediately, preferably in a small casserole. As with the ginger, I tried to incorporate garlic into some meals throughout the last two weeks. Last weekend, I modified an easy chicken recipe I make to include garlic and it turned out so juicy with the onion and garlic flavors permeating the meat. SHERRIED CHICKEN 1 chicken, cut into pieces or equivalent amount of your favorite bone-in parts 1/4 cup melted butter Salt, pepper, paprika Fresh or dried herbs (optional) 1 medium onion, finely minced 1 large or two small cloves garlic, finely minced (I used 3 because it was garlic week) 1/2 cup sherry (not cooking sherry) 1/4 cup honey Put the chicken pieces skin side up in a single layer in a baking dish or pan. Brush or rub with all the melted butter. Sprinkle with salt, pepper and paprika and add some herbs if you’d like. (I used Penzey’s Fines Herbs). Spread the onion and garlic on the top of the chicken. Cover tightly and bake at 350 degrees for 45 minutes. Meanwhile, mix the sherry and honey and bring to a boil in a small saucepan or heat in the microwave until the honey is liquefied. Remove chicken from oven, scrape the onions & garlic into the bottom of the pan and pour the honey mixture over the chicken. Bake uncovered for an additional 15 to 30 minutes or until chicken is done. Serve with pan juices in a gravy boat or separate dish to pour over the chicken. Ready to go in the oven: Done. Plated. I served it with couscous and sauteed zuchinni. We had a nice dry white wine that we got at Foxen vineyards when we last visited DS in CA. What a terrific meal! If it had not been for this cookalong, there would have been no way I'd tried this recipe for a Valentine's Day dinner. DH likes garlic, but I only like it when it's very subtle. I couldn't believe this dish could have 40 cloves of garlic in it and yet still have such a smooth mellow flavor. The recipe I used is from Ina Garten's "Barefoot Contessa in Paris" cookbook. If anyone is interested, I can share it. DH said it's a hands down keeper, and would be a great "company" dish. I hope you all had as good a time participating in this cookalong as I did. No recipes here tonight as I just winged it.... tomorrow I'll be trying Sharon's butternut squash soup as I've been drooling over that photo for days now. Since I'm counting calories, we started with a small appetizer. Smear some roasted garlic on a toasted bread round (we used thin wafers instead.... calories you know!) and then top with a bit of cambazola cheese.... awesome combo. Got the idea from a local Italian restaurant. Main course which was salad (sniff, sniff.... I'd have loved garlic rolls, shrimp etc). The dressing was good; combine in the food processor some green onions, garlic, EVOO, yogurt and some umbeoshi plum paste. After plating each was topped with pan sauteed chicken slices that had been marinated in garlic, lemon and olive oil. On the side, a few garlic/lemon/EVOO/oregano marinated mushrooms. Christy had a beautiful NY strip with the roasted garlic butter I had made for her. She baked a couple potatoes and we had them with some roasted garlic sourcream. Very good. She had some nice broccoli on the side. I had garlic and lemon boiled shrimp with garlic remoulade on romaine. I boiled lots of garlic with a lemon sliced up in the water for about a half hour before putting the shrimp in. They were so good. I also made the remoulade with lots of extra garlic and think I'll do it that way in future. A very nice garlic meal indeed. Since I wasn't getting around too well we just had some chocolate ice cream with a dollop of Nutella for dessert before exchanging presents. Thanks Joan for the garlic choice. I hope you did make yourself some soup. It's nice having people give you food in such a situation, but somehow you also just like to have something you made. Guess it's comforting for us cooks to cook. I actually did make a garlic based meal tonight, and it was oh, so simple, because I was just plain tired after work and the emotional roller coaster we've been on with this property purchase in Oklahoma. Plus, It's starting to be spring here, and the nursery business is starting to pick up, and we had a steady string of customers today (thank heavens, at least some people are spending money) so I was too tired to peel all the garlic called for in the garlic soup recipe. I really do want to try that soup one day, but I was just too tired today. Instead, I made up my own recipe. No, I wasn't calorie counting on this one, either. I did garlic baked potatoes with a garlic-cheddar cheese-sour cream sauce with broccoli and scallion garnish. Here's what I used and what I did. I have to warn you, I didn't measure, so to write this recipe is tricky, and estimations. I'm listing ingredients as I remember them, not as they necessarily should be written. 2 good russet potatoes 1 bulb plus 1 clove of garlic separated Sharp white Vermont Cheddar Cheese (I used Cracker Barrel) (I'm sorry, I didn't measure, maybe 1/2 cup?) sea salt, or any coarse salt coarse ground black pepper (can you tell I like things coarse sometimes?) fresh broccoli florets fresh scallion greens 1/2 cup (?) (I didn't measure) Sour cream and/or Stoney Brook low fat yogurt, I used some of each of the sour cream and yogurt. I tasted each, and believe it or not, I couldn't tell a difference. 1 or 2 tablespoons cream 1 tablespoon unsalted butter, more or less Extra Virgin Olive oil, just a smidgen to coat the potatoes and some to drizzle on the bulb of garlic. a handful of fresh parsley, chopped Heat the oven to 350 degrees. If you have a pizza stone, heat that in the oven as well. Scrub the potatoes well, and dry. Rub the potatoes vigorously with the one clove of garlic, then coat with that smidgen of olive oil. Generously coat the oiled potatoes with the sea salt and black pepper. At the same time, cut the top off the bulb of garlic and place in a garlic roaster or any small roasting dish. Drizzle with the olive oil and season with salt, just like instructed in the garlic soup recipe. Place the potatoes on the stone, or on a baking sheet in the oven, along with the garlic bulb. Iput my garlic in a garlic roaster, on the same shelf as the potatoes. Set your timer for 45 minutes. Take the garlic out of the oven when the timer goes off, but leave the potatoes in the oven till they are tender. Let the garlic cool a bit while the potatoes bake some more. In the meantime, when the potatoes are almost done, spoon out the sour cream and/or yogurt into a small (2 or 3 cup) bowl, and grate the cheddar cheese into the bowl with the sour cream. When the roasted garlic is cool enough, squeeze it into the bowl with the sour cream and cheese, and discard the skins. (okay, I'm channeling Paula Deen and Ina Garten combined, here, and I'm not even finished with the fat, if you can believe it. All I need is mayonaise - not!) Place the mixture into a blender or food processor and blend until smooth. Now this is where I really channeled Paula Deen. We have a very old blender, circa the 1950's I think, and the sour cream and cheese just didn't blend. So, I started adding cream, which happened to be in the fridge, just to add some liquid. Didn't work. So I added a pat of butter, about a tablespoon, and that did the trick. It got the blender to blending, and wallah!, there's a sauce. Once the sauce had a creamy texture, I added some chopped parsley, and seasoned to taste. I did not blend the parsley, just stirred it in. I didn't want the sauce to be solid green, just speckled with green. The parsley really helped the flavor, though. Also, in the meantime, I boiled some water, and when it came to a boil, I added some salt, and dropped the broccoli into the water to blanch for a minute, then removed it from the boiling water, and placed it into a bowl. (I had picked the broccoli from my garden the other day and really needed to use it before it was too late. I've also got loads of scallions from my garden to use, so that's where they came from. When the potatoes were done, We cut them open, fluffed them, and topped them with the chopped scallion greens, broccoli, and the roasted garlic-cheese sauce. We grated some extra of that sharp cheddar cheese onto the potatoes, just for fun. Believe it or not, my DH even liked it. He commented that he really liked the sauce, garlic and all. Writing out what I did tonight for supper makes it seam not that simple, but it really was. It was a lot more simple than peeling all that garlic for the garlic soup, which I really, really want to try sometime. I made the roasted garlic soup with wine and extra chicken broth but without the cream and added spinach to it; then strained it and did the egg white consommee thing to clarify it. It turned out like a cup of green garlic essence and was a nice light start to the meal. Then I made the Three Garlic Pasta recipe Joan posted but cooked some onion and red pepper slivers along with the garlic and added asparagus steamed in the microwave and some lobster meat. We split this garlic-free dessert when we got home.

You'll need 2 pounds of freshly de headed shrimp, a big pan, a little salt lots of water and a couple of teaspoons of crab boil ( I know! They are NOT crabs, but run with it, OK?)....bring about 3 quarts of water to a rolling boil, add the crab boil and 1 tsp of kosher sale....plop in the shrimp....watch carefully, and when that pot of water comes back to a boil, shut it off quick!....let the shrimp sit in the hot water for 3 minutes, drain and sit down with a couple of friends a couple of beers and peel and those lovely shrimp. Stir together the butter, Worcestershire sauce, lemon juice, pepper, hot sauce, garlic, and salt. Pour half this mixture into a large heatproof dish. Layer half the shrimp and half the lemon slices in the dish; then form a second layer with the remaining shrimp and lemon slices, and pour remaining sauce into the dish. Crawfish Etouffe cup chopped onion ½ cup chopped celery ½ cup chopped green pepper 2 cloves garlic, minced 1/3 cup butter, melted ¼ tsp whole dried thyme ¼ tsp chili powder ½ tsp whole dried basil 2 Tblsp flour ½ cup fish stock ½ cup white wine 1 cup cream of mushroom soup 2 ½ cup peeled crawfish tails ½ cup chopped green onions ¼ cup chopped parsley ¼ tsp creole seasoning (Tony Cachere's) ¼ to ½ tsp hot sauce 1 tsp tomato paste Saute first 4 ingredients in butter until tender. Add thyme and next 3 ingredients. Stir well. Cook 15 minutes, stirring often. Add fish stock and wine. Cook 10 minutes. Stir in soup and crawfish. Simmer 15-20 minutes covered. Oyster Stew 1 qt shucked oysters ( never said it was a budget recipe) 1/4 cup butter 1 T finely chopped onion 1 T finely chopped celery 3 cups milk 1 cup cream (half and half is fine) Pick over oysters to remove any bits of shell, save liquor Heat butter in a large heavy Dutch oven and slowly sautee onions and celery until they are soft and translucent but not browned, turn up[ the heat and add the oysters with their liquor and cook until the edges just curl. Add the milk and heat slowly until bubbles just break the surface, add cream, heat until hot correct seasonings, I like lots of fresh ground pepper, and serve. The above recipe works with bay scallops also. Something tells me I'm going to be clipping this entire thread! I think I've posted this before but can't find it, so here goes again. To me it's the best Baked Stuffed Lobster I've had anywhere. It's very basic, but I love the high seafood-to-filler ratio. Don't let the killing/cleaning get to you; it's really no big deal. I've seen people have the fish store kill and clean the lobsters, but I don't think that's a good idea. I seem to recall hearing that dead lobster degrades quickly. Baked Stuffed Lobster (stuffing amount is for 4 lobsters) Kill 1.25 lb lobsters by driving a knife through the brain and down through the head. Then use kitchen or poultry shears to cut down the middle of the belly side, all the way down through the tail. Pry open and clean out guts under cold running water. Pull off claws, boil for five minutes, shell and reserve meat in butter until the last five minutes of baking. (I dice the knuckle meat and add it to the stuffing.) In large saute pan over med-high heat, combine 1 stick of butter, two stalks of celery, minced, half an onion, minced, and cook until soft. Add 1 lb sea scallops cut into bite size pieces and 1 lb of cleaned shrimp that have been halved lengthwise. Cook until just shy of done, remove from heat, add two sleeves of Ritz crackers, crumbled. Add salt, pepper, basil, thyme to taste. If the mixture seems too wet, add some breadcrumbs. It should be moist but not mushy. Sprinkle Parm Regg over the stuffing and mix well. Add 3 cloves garlic, minced, and mix again. Jam the lobsters' body cavities full of stuffing, and continue down through the tail. Combine flour and milk, stirring well. Add to onion and cook about 2 minutes or until thickened, stirring often. Add crab meat and next 4 ingredients. Spoon into a greased 2-qt baking dish or individual baking shells. Sprinkle with paprika. Bake at 350°F for 20 to 25 minutes or until bubbly. Serves 6. Note: I usually add a pinch or two of mace and if I have a mild cheddar, I sprinkle a little on top. Nancy (wizardnm) ------------------------------------------- And another good one from Nancy: Gingered Shrimp Cakes 1 lb. large shrimp, cooked 4 scallions, sliced, green parts included 1 Tbsp freshly grated ginger Grated lemon zest from 1 lemon 2 Tbsp chopped fresh parsley 1/2 C fresh corn, cooked, cut off cob (can use frozen) 1 lg egg 3 Tbsp mayonnaise 1/2 tsp hot pepper sauce 1/2 tsp salt Pinch of ground black pepper 1 1/2 C fresh bread crumbs or panko (divided) 2 Tbsp olive oil (or more, for frying) 1 Tbsp butter (with the oil, for frying) Coarsely chop shrimp in bowl. Add scallions, ginger, lemon zest, parsley and corn. Combine mayonnaise, egg, hot sauce, salt and pepper and fold into shrimp mixture. Add 1 Cup breadcrumbs and gently mix. Form into 4 patties and gently dredge in remaining 1/2 C breadcrumbs, adding more if necessary. Put on a plate, cover with plastic and refrigerate for at least 30 min and up to 4 hours. Heat oil and butter in large skillet over med-high heat. Saute cakes until cooked through and golden brown on both sides, adding more oil to skillet as needed, about 8 minutes. Chile Garlic Sauce To make Chile-garlic cream sauce, combine 2 Tbsp chile-garlic sauce (from Asia aisle at supermarket) and juice of 1/2 lime with 1/2 cup sour cream or cream fraiche. Spoon about 3 Tbsp of sauce on each plate and place shrimp cake on it, serve immediately. Makes four servings. Variation: Substitute lump crab meat for the shrimp. Nancy (wizardnm) ---------------------------------------------- Here's a mouth-watering recipe from the L.A. Times: Grilled Shrimp Charmoula Note: This recipe calls for bamboo skewers. 1 pound cleaned, tail-on jumbo shrimp (12 to 16) Charmoula (see recipe), divided 1 large lemon, sliced crosswise into 1/8 -inch slices Oil for the grill 1. Combine the shrimp and one-third cup charmoula in a large nonreactive bowl or resealable plastic bag and marinate in the refrigerator for 2 hours. Ten minutes before removing the shrimp from the refrigerator, soak the bamboo skewers in water to prevent the wood from burning. 2. Remove the shrimp from the marinade and thread with the lemon slices onto the prepared bamboo skewers. 3. Heat the grill over medium-high heat. When the grill is hot, oil the rack and place the skewers on top. Grill the skewers until the shrimp are puffy, pink and opaque, about 2 to 3 minutes per side. Serve immediately with the remaining charmoula sauce. Each of 4 servings: 172 calories; 18 grams protein; 2 grams carbohydrates; 0 fiber; 5 grams fat; 1 gram saturated fat; 168 mg. cholesterol; 218 mg. sodium. CHARMOULA: Note: Store the charmoula for up to 1 week, refrigerated, in an airtight jar or plastic bag. 4 garlic cloves, minced 1 tablespoon minced ginger 1/2 cup chopped parsley 1/3 cup chopped cilantro Zest and juice of 1 lemon 2 teaspoons sweet Spanish paprika Pinch cayenne powder 2 teaspoons ground cumin 1 dried bay leaf, crumbled Pinch saffron 1/2 cup olive oil 1/4 teaspoon salt 1. Using a mortar and pestle, or in the bowl of a food processor, grind the garlic and ginger to a paste. Add the chopped parsley, cilantro and lemon zest and coarsely mash. Stir in the lemon juice. Stir in the paprika, cayenne, cumin, bay leaf and saffron and grind to incorporate. 2. Slowly pour in the olive oil while blending to form an emulsion, then stir in the salt. Adjust the seasoning as necessary, then cover and refrigerate at least 1 day before using. Mix with enough Hellman's mayonnaise to make a nice shrimp salad consistency. Serve on toasted hot dog buns with a sprinkle of Old Bay. (You can add some sliced scallions, chopped celery, pickle relish or whatever else you like, but I prefer to keep it simple.) This was an off the cuff suggestion by Mike Colameco at the end of a show where he made lobster rolls. Top with sour cream; carefully spread tomato paste on top. Bake 350, approximately 40 minutes (until tomato paste begins to crack). NOTE: I've always sliced the cheese and layered it, but I suppose you could grate it, as well. The truth is, I never had a cheese grater until 1978! We had Camp Fais Do Do at RiverRat's house. One night RR took us on an adventure to experience some local culture. As we drove through dark, lonely roads, I was a little skeptical especially when we drove up to a ??roadhouse?? with a parking lot deep in motorcycles, pickups, and old Chevy BelAirs. But memories of trays piled high with crawfish whizzing by all night, the Cajun/Zydeco band, people doing the Arcadian Two-step, still clearly resonates in my head. The food, the entertainment, the locals, was such a rich experience, one that I will treasure for a long time. We did a lot of "Eating the Tail - Sucking the Head". Bring water to boil with 2 teaspoons of salt. Add lobster tails; return to boil. Cook 8 to 10 minutes or until lobster shells turn red and meat is opaque. Immediately plunge lobster tails into cold water to stop cooking. Lobster will not be thoroughly cooked, but will continue to cook during baking step. Heat oven to 450 degrees. Got give it some think time but I'm in. This is one of my all time favourite recipes but I rarely make it because Clive doesn't "do" scallops. I've made it with shrimp and with lobster but it's best with scallops. Coquilles St Jacques (Originally From The Woman's Day Encyclopedia of Cooking ) 1 1/4 Lb scallops butter (or margarine) 6 shallots (or green onions), chopped Bouquet Garni (dried parsley,celery leaves,thyme, bay leaf) 1 1/2 c dry white wine salt 12 mushrooms,finely chopped 1/3 c water or chicken broth juice of 1 lemon Fresh groud pepper 3 T Flour 4 egg yolks 1 c cream grated parmesan fine dry bread crumbs Wash scallops and dry with paper towel. Place in a saute pan with 2TBSP butter, the shallots and the Bouguet Garrni. Barely cover with white wine. Season with a little salt and bring to a boil. Turn down and simmer about 4 minutes or until the scallops are barely tender. Drain and save broth for sauce. When the scallops are cool enough tohandle cut in small pieces or in slices. Saute mushrooms in 2 TBSP butter for 2 or 3 minutes. Add broth or water,lemon juice, salt and pepper. Simmer until mushrooms are tender. Drain and reserve liquid. Combine the reserved liquids from the scallops and the mushrooms and heat. Melt 3 TBSP of butter in a sauce pan, blend in the flour, add the liquid, heat and stir until thickened and smooth. Cook for 2 or 3 minutes. Add the scallops, heat through. Beat the egg yolks and mix with the cream. Add this to the sauce and cook gently, do not boil. Add mushrooms and season to taste. Spoon into individual ramekins or shells, sprinkle with cheese and bread crumbs. Glaze under the broiler for just minute or two. Our local newspaper printed a recipe from a restaurant known for their crab cakes. It was sold a few years ago when the owners retired and finally released their "secret" recipe. I tweaked it a little but they were the best crab cakes I ever made. CRAB CAKES Combine: 1/4 cup grated celery 3 Tbs. grated onion 1 grated hard boiled egg 1 tsp. Old Bay seasoning 1/2 tsp. salt 1/4 tsp. black pepper 1 tsp. parsley flakes or 1 Tbs. fresh chopped parsley Add to the first mixture in the order given: 1 raw egg 1 tsp. Worcestershire sauce 3 Tbs. mayonnaise dash of hot pepper sauce 3 slices white bread, crusts removed and then cut in TINY cubes Mix until smooth. Then add 1 pound of lump crabmeat and mix gently with your fingers to avoid breaking up the crab. Refrigerate for 1/2 hour; then form into six patties. Sprinkle with paprika and put in ungreased baking dish containing about 3/8" of water. Bake on center rack of oven at 375 degrees for about 20 minutes. Turn on broiler, leaving the cakes on the center rack and brown tops of patties. First time trying this recipe and I will make it again but without these crabs which have no resemblance to Dungeness crabs. The work was not agreeable as there was no white meat in the body, it was only in the claws. I put it down to experience so as long as I live here, I will buy tinned crab and save making the mess I made looking inside the innards trying to find white meat LOL. The salad was great though. Lars I did try to find your recipe but it didn't show up in a search here, so I combined recipes from Rachel Ray and Epicurious for the sauce. It was a good challenge, anyway! I just realized I didn't post the Crab Louie recipe but I halved this one and changed lemon for lime as that's what's on our tree and added avocado and hard boiled egg on the plate and in the dressing as well as black, not green olives. The sauce was very rich but good, and if I make this again I need a source of fresh, lump crab which is not still inside the shell , because we don't get the right kind of crab here and it's a very messy job to find the meat LOL. CRAB LOUIE - epicurious yield: Makes 4 main-course servings active time: 20 minutes total time: 30 minutes For dressing * 1 cup mayonnaise * 1/4 cup ketchup-based chili sauce * 1/4 cup minced scallion * 2 tablespoons minced green olives * 2 teaspoons fresh lemon juice * 1 teaspoon Worcestershire sauce * 1 teaspoon bottled horseradish * Salt and pepper to taste * 1 1/2 lb jumbo lump crabmeat * Iceberg lettuce, shredded * Capers * Tomato wedges * Hard-boiled egg * Lemon Make dressing: Whisk together mayonnaise, chili sauce, scallion, green olives, lemon juice, Worcestershire sauce, bottled horseradish, and salt and pepper to taste. Pick over crabmeat, then divide among 4 plates lined with shredded iceberg lettuce. Garnish with capers and wedges of tomato, hard-boiled egg, and lemon and serve with dressing. I managed to trip on the cord to my laptop and the very end of it broke off inside the port. So.....I was MIA all weekend. I had a couple of friends over for the afternoon and we did crabcakes for a late afternoon munchie before grilling some steaks. I used Ina Gartens recipe but will be trying Ruthanna's in the future...Sue's recipe is a good one too. Glad to hear that you two liked the Peruvian Shrimp. I love the citrus flavor and the heat from the peppers...I up that a little. Saving all the recipes in my TT file and thanks for all the pics too. Sorry I couldn't post any this time.
