I love Wendy's chili..but I get it through the drive through.. ;)

My grandson and his fiancee are coming to dinner, so we are having roast, mashed potatoes with gravy, broccoli with cheese sauce, Watergate salad, cucumbers in oil and vinegar, sliced tomatoes.

WendyâÂÂs Chili Copycat Recipe

2 1/2 lbs. lean ground beef, browned and drained if necessary
29 oz. can tomato sauce
40 oz. can kidney beans with liquid
29 oz. can pinto beans with liquid
1 c. diced onion
ý c. diced green pepper or 3 tbsp. dried green peppers
ü c. diced celery
29 oz. can crushed tomatoes
2 tsp. cumin
2 tbsp. chili powder
1 ý tsp. salt
2 c. water

Brown and drain ground beef. Put beef and the remaining ingredients into a large, heavy pot. Cover and simmer about 3 hours stirring every so often.

Supper for me is cooking, fried chicken thighs, green beans, white chicken gravy, home grown candied sweet potatoes, and a tomato from the garden. There is cherry cobbler but will probably not have room for any. I have given away all but about 3 pieces of it today. Beautiful day here in Central Indiana.

I'm making a recipe my Italian-American SIL taught me. She said they called it "Italian peasant food" when she was a girl. It's just roughly cut vegetables (bell peppers, onions & potatoes) roasted with pieces of Italian sausages. I use a mix of sweet and hot, and cut them into chunks with kitchen shears. Toss together in a roasting pan, a little olive oil, S & P and bake until done!

My brother likes to have some spaghetti and marinara with this and I've taken to that as well.

Leftovers make a great frittata with the marinara heated and served on the side.

Chicken Tetrazzini......so good!

Makes 6-8

ingredients
1/4 cup butter
1/4 cup flour
1/2 tsp salt
1/4 tsp pepper
1 cup chicken broth
1 cup heavy whipping cream
3/4 cup 2% milk
1/2 cup sour cream
1 tbsp chopped parsley
1 tsp curry powder
2 cups cubed, cooked chicken
7 oz package spaghetti, cooked according to package directions
1 3oz can sliced mushrooms, drained
1/2 cup grated parmesan

preheat oven 350. lightly spray 2qt baking dish with pam.

in large saucepan, melt butter over low heat. add flour, s&p, to make a roux. cook over low heat, stirring until smooth and bubbly, 3 minutes. remove from heat.

stir in chicken broth, whipping cream, milk, parsley, sour cream and curry powder. simmer over medium heat 1 min. add chicken, cooked spaghetti and mushrooms. pour into prepared dish. sprinkle with parmesan. bake, uncovered, until bubbly, about 30 min. place briefly under broiler to brown the top.

Today I cleaned out the cabinets in the Great Room. I have one bag of garbage and one bag to go to Habitat so I guess I will go back to working on the freezer again. Tonight we're having spaghetti with some meat sauce I took from the freezer this morning.

Mini meatloaves/gravy, oven roasted potatoes with olive oil and garlic. Mixed fresh berries for dessert while watching Survivor :)

Oh, my, everything sounds so delicious. Today was my big grocery day. No cooking on that day. I made a sandwich using deli roast beef, onions, artisan lettuce (piled high), tomato, on a slice of 12 grain bread with a smear of Miracle Whip on it. It was so good. I also nibbled on some sweet potato chips.

Meatloaf and potatoes...yumm...

Spaghetti is liked ball all here except hubby...When it's just the boys and I for dinner I'll make it or tacos..another he doesn't like...if I do spaghetti for a family meal, it has to be meatballs..then he'll put those on a roll or just eat them off a fork..no pasta..

What will will have for dinner will be a bit like Tettrazini.

Seagrass, I love roasted sausage and veg..it smells so good cooking...and tastes even better.

Robert called from work and said he had a yen for egg salad. Whatever makes him happy, lol!

I had mine on a pile of mesclun and he had toasted pumpernickle.

I love egg salad..but the after affects....lol...I limit my boiled egg consumption...tee hee..

Eggs don't bother me that way, but I should probably send an apology email to others in Robert's office.

Mine has issues with latte's...lol we use half and half at home..and that doesn't affect him..
He'll come home...some days..and I'll say..you had a latte today...
He sheepishly grins...

had the afternoon out running errands. Went to the library, the post office and took a walk around downtown window shopping, then went grocery shopping. Picked up an already made sub sandwich, and was going to make French onion soup to go with it, but forgot the cheese....dang it, my mouth was already watering for that soup.
