Recipe of the Day October 19 - Let's go to Italy!

Not quite Italian, but I just don't have much in my recipe files. I'm hoping you guys will come up with some good easy Italian cooking! LOL! I love Italian!

Better Than Pizza

1 lb. ground beef

1 onion

1 red pepper

1 green pepper

1 jar Ragu pizza sauce

1 jar sliced mushrooms

1 large can biscuits

2 c. Parmesan cheese

Brown ground beef; drain off grease. Add in chopped onion and pepper. Add pizza sauce. Stir well and cook until mixture thickens. Remove from heat and stir in mushrooms. Spray bottom of Pyrex dish and press biscuits into bottom to form crust. Top biscuits with meat mixture and sprinkle Parmesan cheese on top. Bake at 350 degrees for 15-20 minutes.

I bet Italian sausage would be wonderful instead of ground beef. Kick it up a notch!

Haven't made this in almost 10 years, but it sure was good when I did make it! Peloponnesian Pot Roast Ingredients 2 1/2-3 pound Beef pot roast 8 cloves garlic-cut in half Salt & pepper to taste 2 tablespoons cooking oil Hot cooked spaghetti 3 cups tomatoe sauce 2 tablespoons brown vinegar 1 teaspoons ground nutmeg 6-8 whole cloves 1/2 teaspoons ground cinnamon 1/2 teaspoons ground allspice Method Make slits in top of roast with tip of sharp knife; insert garlic halves into slits. Sprinkle roast with salt & pepper. In large skillet, brown meat on both sides in hot oil. Take meat from skillet & put into small roaster. Combine tomato sauce, vinegar, nutmeg, cloves, cinnamon & allspice. Pour mixture over meat in roaster. Cover and roast at 350 degrees for about 1-1/2 hours or until meat is tender. Remove meat to cutting board; keep warm. Bring juices in roaster to boiling; boil, uncovered, about 5 minutes or until liquid is reduced a bit. Remove the cloves from the sauce. Remove the garlic from meat, if desired. Cut meat into serving portions & serve over spaghetti with a little sauce over the top

We have this a lot especially when the kids are all here...it makes a lot! Pork shoulder, cooked with barbecue sauce and onion, then shredded. Ingredients: pork shoulder roast, about 4 pounds 2 medium onions, thinly sliced 1 1/2 cups water 1 bottle (16 ounces) barbecue sauce, or 2 cups homemade sauce 1 cup chopped onion Preparation: Place half of the thinly sliced onions in bottom of slow cooker; add pork and water, along with remaining onion slices. Cover and cook on LOW for 8 to 10 hours or 4 to 5 hours on HIGH heat setting. Drain liquid from slow cooker; chop the meat coarsely and discard excess fat. Put the pork back in the slow cooker. Add barbecue sauce and chopped onion. Cover and cook on LOW for 4 to 6 hours longer. Stir occasionally. Serve with warm split buns and coleslaw. Serves 8 to 10.

I've posted this before....we love this one! Spaghetti with smothered onions 2 tablespoons butter with 2 tablespoons extra virgin olive oil 1 1/2 pounds onion, sliced very thin, about 6 cups Salt Black pepper 1/2 cup dry white wine 2 tablespoon chopped parsley 1/3 cup freshly grated parmigiano reggiano cheese ( I just use fresh parmesan cheese) 1 to 1 1/2 pounds pasta 1. Put the butter and olive oil, and the onions with some salt in a large sautÃ© pan. Cover and turn heat to very low. Cook for almost an hour until the onions become very soft. Uncover the pan, raise the heat to medium high, and cook the onions until they become colored a deep, dark gold. Any liquid the onions may have shed must now boil away. Add liberal grindings of pepper. Taste and correct for salt. Bear in mind that onions become very sweet when cooked in this manner and need an adequate amount of seasoning. Add the wine, turn the heat up, and stir frequently while the wine bubbles away. Add the parsely, stir thoroughly, and take off heat. Ahead-of-time note : You can cook the sauce entirely in advance up to the point where you add the parsley. When you are nearly ready to toss with the pasta, reheat the sauce over medium heat and add the parsely just before draining the pasta. Toss with cooked drained pasta, adding the grated Parmesan. As you toss, separate the onion strands somewhat to distribute them as much as possible throughout the pasta. Serve immediately.

This is what I had saved on the bottom of that recipe Mammie. Evap milk in place of the half and half. I couldn't find the garlic seasoned chicken broth either. Here it is exactly as I have it: > Health Twist > Love this soup but want to trim the fat and calories? A friend gave me this recipe in Okinawa many moons ago. I still love the sauce.

LASAGNE

1-1/2 lb. ground beef
2 cloves garlic, chopped (or 1/4 tsp. garlic powder)
6 oz. tomato poast
1 tsp. salt
3/4 tsp. pepper
1/2 tsp. oregano
28 oz. can tomatoes, chopped*
8 oz. lasagne noodles
8 slices swiss cheese
8 slices provolone cheese
1 - 12 oz. carton cottage cheese

Brown ground beef; add remaining ingredients. Cover and simmer until tomatoes cook down. (I simmer several hours.) When sauce is cooked, cook an 8 oz. pack lasagne noodles. In an 11x17" casserole alternate layers as follows:

1. Small amount of sauce
2. Layer of noodles
3. $ slices swiss cheese
4. 4 slices provolone cheese
5. 1/2 the cottage cheese
6. 1/2 the sauce

Repeat. Bake 20-30 minutes at 350. Sprinkle with Parmesan.

Everybody probably has their own favorite for this, but this one rocks!

FETTUCINE ALFREDO

1/2 c. butter (1 stick)
1/2 c. heavy cream
3/4 c. grated Parmesan cheese (better if you grate your own)
1/4 tsp. white pepper (I just use regular)
2 Tbsp. parsley, chopped
Nutmeg--just a dash or two
8 oz. fettucine, cooked and drained

Combine butter and cream in a small pan; cook over low heat until butter melts. Stir in cheese, pepper and parsley. After it thickens, remove from heat. Stir in nutmeg and pour over hot fettuccine. Toss until coated.
You can add cooked chicken or shrimp if you want.

My fettucine alfredo is almost like Patti's, but I use a brick of cream cheese (softened in the microwave then whisked into the melted butter and cream) instead of the Parmesan and no nutmeg. This is also a good sauce for hot vegetables or potatoes. Yum!

When I think of Italian, I think of Italian style salads (my favorite types of salads!)

Here's a copy cat version of the Italian style salad from Pasta House. It's one of my favorites...

ps.. the artichoke hearts should NOT be marinated... just plain. And, you can substitute vegetable oil for the olive oil, but try to stay with the RED wine vinegar and be sure to use RED onions.
