I give up (recipe request)

I searched this forum every which way for a recipe I thought I had read here (and should have "clipped").

Does anyone have the recipe for brown sugar chocolate chip cookies (I think) -- maybe posted in the past two weeks or so?

Thanks!

Sol's Brown Sugar Chocolate Chip Cookies

1 c butter
2 c brown sugar
2 eggs
2 t vanilla
2 1/4 c flour
1 t salt
1 t baking soda
1 pkg of chocolate chips (or 4 giant handfuls from the big bag!)

Bake at 325, until desired doneness..9-11 minutes.

~I add 1/3 cup almond meal to this recipe for "bulk".
~and I also like to sub the last 1/4c of flour for 1/4c oats.

I think I can help you. This is a recipe from SOL over on the cooking forum.

I've made these cookies and they are a family favorite for sure! Here ya go, hope this is the one you are looking for:

Brown Sugar Chocolate Chip Cookies - Sol

2½ cups AP flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
2 cups light brown sugar, packed
2 large eggs
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
½ cup chopped walnuts, optional
Whisk together the flour, baking soda and salt. In a mixer, cream the butter and sugar until light. Add the eggs, one at a time, beating well after each addition. Add vanilla. On low speed, add the flour mixture, and mix until barely blended. Add chocolate chips and nuts. Drop by tablespoons onto sheet pan and bake in a 350°F oven, for 12-15 minutes.

Peaches are low in pectin and definitely more challenging "au naturel." I wouldn't add more sugar. Not when it's already so sweet. Just a thought. Do you have any dried peaches around? Reconstituted, cooked, drained and pureed they would add body and zing. Dried apricots would have a slightly different flavor but would achieve the same purpose. If I were adding Amaretto I'd add it very near the end. I'll let someone else advise about the Pomona's. Carol

Thanks everybody! I haven't decided which mix I like best. Measured by volume I find 3 parts Vermiculite, 1 part sand, 1 part Portland cement & 1 1/2 parts water O.K. This gives a crumbly mix that barely sticks together when squeezed in my fist, and that has to be pushed into the mold. What I absolutely avoid is a mix that's gone muddy. I'm also going to try mixes with more Vermiculite. I think they may need a hint more water. The next lantern's going to be between 12 and 14 inches high, but that's a few weeks away. I'm still working on the molds for it. Here's a picture of a smaller one (about 10 inches high) sitting out in the garden waiting to see if it'll grow moss. Small, hypertufa Misaki lantern

I found this recipe in one of those little recipe books at the check out line at the grocery store. This one is from Betty Crocker. Brie in Puff Pastry with Cranberry Sauce. Cranberry Sauce: 1 C. fresh cranberries 6 T. packed brown sugar 1 T. orange juice 1/2 t. grated orange peel Brie and Pastry: 1 T. butter or margarine 1/3 C. sliced almonds 1 sheet frozen puff pastry (from 17.3 oz package) thawed 1 round of Brie cheese (14 to 15 oz) 1 egg beaten Assorted crackers or sliced fresh fruit 1. In 1 quart saucepan, mix cranberries, brown sugar and orange juice. Heat to boiling, stirring frequently; reduce heat. Simmer uncovered 15 to 20 minutes stirring frequently, until mixture thickens and cranberries are tender. Stir in orange peel; remove from heat. 2. In 8-inch skillet, melt butter over medium heat. Cook almonds in butter, stirring frequently, until golden brown; remove from heat. 3. Heat oven to 400. Spray cookie sheet with cooking spray. On lightly floured surface, roll pastry into 16 x 9 inch rectangle. Cut out one 8 1/2 inch circle and one 7-inch circle from pastry. 4. Place cheese round on center of large circle. Spoon cranberry sauce and almonds over cheese. Bring pastry up and press around side of cheese. Brush top edge of pastry with egg. Place 7-inch circle on top, pressing around edge to seal. Brush top and side of pastry with egg. Cut decorations (using small cookie cutters) from remaining pastry and arrange on top; brush with egg. Place on cookie sheet. Bake 20 to 25 minutes or until golden brown. Cool on cookie sheet on wire rack 1 hour before serving. Serve with crackers. I made this last year and it was wonderful! I highly recommend it. Chris

Do you think a squash and rutabaga are interchangeable? I would think so, so I can post my Turnip Puff recipe that gets made for Thanksgiving and Christmas. Non turnip lovers love this! Me included. I'm not a fan of the boiled and mashed turnip. Oh, I call this turnip puff and allude to turnips but it's a rutabaga....the orange-fleshed vegetable. Turnip Puff 6 cups cubed turnips 2 tbsp. butter 2 eggs, beaten 3 tbsp. flour 1 tbsp. brown sugar 1 tsp baking powder salt and pepper to taste 1/2 cup fine bread crumbs 2 tbsp. butter, melted Cook turnip until tender. Drain and mash. Add butter and eggs. Beat well. (this much can be done the day ahead.) Combine flour, sugar, baking powder, salt, pepper and nutmeg. Stir into turnips. Butter a casserole and put in turnip mixture; combine crumbs and butter. Sprinkle on top. Bake at 375 F for 25 minutes or until light brown.

Thanks for posting! These are what I was looking for - I used all sorts of search words including "Sol's"

Off to make these to bring to my niece (a freshman at college) while visiting the Baltimore/DC area this weekend.

The flour thing..
I was typing from memory and how I do it. LOL Cuz I make these cookies 2-3x a month!

yes 2 1/2 cups of flour is the original recipe. I drop it down a bit and add the other ingredients.

Oh - I only have salted butter - will that be okay? Should I then omit the salt?

I use salted butter all the time when recipes call for sweet butter. Then I reduce or eliminate the salt.

When making chocolate chip cookies..I use salted butter and still add the salt..the dough may taste a bit salty, but the finished cookie is beefed up...Salt and chocolate go hand in hand!
Oh and I use salted butter for baking every day.
