Another recipe request

I hope I'm not stirring the pot, but I'd like you good cooks of which there are many on this forum to help me out. I come here for recipes because someone usually always replies. I have never gone to the cooking forum,

This concerns Hubbard squash which we grew for the very first time this summer. I would love to make a casserole dish using them for T-giving dinner. I've made acorn squash a lot for DH and me. I just halve one, fill the cavity with brown sugar, dried cherries, cranberries, walnuts and spices and bake for 350 for an hour. A half for each of us. But now I want a casserole dish with cut up squash which will serve 9 or 10. .Last year I made Glenda's Yam fluff or something like that, and it was very good. Thanks in advance.

Do you think a squash and rutabaga are interchangeable?
I would think so, so I can post my Turnip Puff recipe that gets made for Thanksgiving and Christmas. Non turnip lovers love this! Me included. I'm not a fan of the boiled and mashed turnip.

Oh, I call this turnip puff and allude to turnips but it's a rutabaga....the orange-fleshed vegetable.

Turnip Puff

6 cups cubed turnips
2 tbsp. butter
2 eggs, beaten
3 tbsp. flour
1 tbsp. brown sugar
1 tsp baking powder
salt and pepper to taste
1/2 cup fine bread crumbs
2 tbsp. butter, melted

Cook turnip until tender. Drain and mash. Add butter and eggs. Beat well. (this much can be done the day ahead.)

Combine flour, sugar, baking powder, salt, pepper and nutmeg. Stir into turnips.

Butter a casserole and put in turnip mixture; combine
crumbs and butter. Sprinkle on top. Bake at 375 F for 25 minutes or until light brown.

Sorry Arline, I missed the request. The chicken is very easy to make. I don't measure anything, but here are the basics. I use fresh bread crumbs. I don't like Panko. I grind up the bread in the small food processor crusts and all. And season the crumbs with some fresh grated parmesan cheese. I just flatten/pound out boneless chicken breasts. Rub a garlic clove on a microplane and rub a little of the garlic over each of the chicken breasts. Beat up a couple of eggs with a little water. Season some flour with salt and pepper. Dip the chicken in the flour, then in the eggs and now the bread crumbs. Sit aside while you finish breading all the chicken breasts. I heat about 1/4 inch of oil in a cast iron frying pan, (medium heat) and fry each breast until golden. Place on a rack, over a cookie sheet, in a low oven to keep warm while the other breaded chicken breasts are cooking. I use this same method to make too. It is one of the few things that I deliberately make extra of because I like the chicken or the pork cold or reheated. Makes good sandwiches too. Ann

I found this recipe in one of those little recipe books at the check out line at the grocery store. This one is from Betty Crocker. Brie in Puff Pastry with Cranberry Sauce. Cranberry Sauce: 1 C. fresh cranberries 6 T. packed brown sugar 1 T. orange juice 1/2 t. grated orange peel Brie and Pastry: 1 T. butter or margarine 1/3 C. sliced almonds 1 sheet frozen puff pastry (from 17.3 oz package) thawed 1 round of Brie cheese (14 to 15 oz) 1 egg beaten Assorted crackers or sliced fresh fruit 1. In 1 quart saucepan, mix cranberries, brown sugar and orange juice. Heat to boiling, stirring frequently; reduce heat. Simmer uncovered 15 to 20 minutes stirring frequently, until mixture thickens and cranberries are tender. Stir in orange peel; remove from heat. 2. In 8-inch skillet, melt butter over medium heat. Cook almonds in butter, stirring frequently, until golden brown; remove from heat. 3. Heat oven to 400. Spray cookie sheet with cooking spray. On lightly floured surface, roll pastry into 16 x 9 inch rectangle. Cut out one 8 1/2 inch circle and one 7-inch circle from pastry. 4. Place cheese round on center of large circle. Spoon cranberry sauce and almonds over cheese. Bring pastry up and press around side of cheese. Brush top edge of pastry with egg. Place 7-inch circle on top, pressing around edge to seal. Brush top and side of pastry with egg. Cut decorations (using small cookie cutters) from remaining pastry and arrange on top; brush with egg. Place on cookie sheet. Bake 20 to 25 minutes or until golden brown. Cool on cookie sheet on wire rack 1 hour before serving. Serve with crackers. I made this last year and it was wonderful! I highly recommend it. Chris

The "teacher" always comes out.... Especially with yeast bread because it's the most humbling food we make. There are also those who come to these message boards wanting to know WHY something happens after they try recipes without complete information! Why does it crack or explode out the side of the loaf? Why is the texture coarse/crumbly and dry, lopsided, flat top, rollercoaster crust, didn't rise.... and so forth and so on. Olychick - You and your grandson may also like to make "Bread In A Bag", where the dough is placed in a large zip-lock freezer bag and you knead the dough in the bag. The Amish farmer that comes to our city market always has them and he also has 'pumpkin' pies that are actually Hubbards, they are very good. So I would guess that any sweet, winter squash recipe would work with them.

I make an Apple & Squash casserole that I got on Cooks.com, it's really good and very easy.

5 c. Butternut squash, diced 1 inch
3 c. apples, Granny Smiths diced same

Quantities do not have to be exact.

1/2 c. butter
1/2 c. brown sugar
1 tsp. cinnamon

Put squash and apples into casserole. Melt butter in saucepan. Add brown sugar and cinnamon. Pour over apples and squash. Stir.

Bake at 350 degrees for about an hour or until vegetables are soft. Only stir once or twice. You don't want mixture to be mushy but in formed chunks.

These sound like what I'm looking for. I was going to Google but I think there were 1400+ results. I like the Granny Smith addition...Thanks...Last year's was called Yam puff, and I think it was Glenda's.

Lynn..You were mentioning an Amish farmer..do you live in PA? I think Lancaster has a city market.
