Recipe of the day October 10 - Pork!

I make this all the time. It's enough marinade for 2 pork tenderloins, so I buy the double packages, marinate both and freeze one. That way the second tenderloin is ready to go with no extra effort.

PORK TENDERLOIN MARINADE

2 tbsp. soy sauce

2 tbsp. Hoisin sauce (Chinese Barbecue Sauce)

2 tbsp. dry sherry (I use Harvey's Bristol Cream)

1 tbsp. brown sugar

1 tbsp. oil

1 1/2 tsp. honey

1/2 tsp. garlic powder

1/2 tsp. cinnamon

2-3 lb. pork tenderloin

Mix together all ingredients. Pour over pork and marinate in refrigerator 6-8 hours. Remove from marinade and cook over hot coals 35 minutes. Baste with remaining marinade. Slice pork thin. This can be done in a 425' oven for 35-40 minutes.

I serve this with rice and a salad.
