Glender's Remarkable Easy BBQ Sauce

This is a spin-off originating from the "How would you cook" thread. I apologize for somewhat ripping it off but I thought it would be nice to pass on something that I picked up from the KT and have used over and over.

I don't recall the specific conversation but it obviously centered on one sort of culinary issue or another but somewhere in it Glenda tossed out this BBQ sauce recipe that was nothing more than a bottle of Coke and an equal amount of ketchup. I was lil' dubious but could see how that could work so I mixed it up the next time I tossed pork on the grill and ... heh.. IT WORKED!

I've used various variations (is that legal grammer?) of her recipe since then with concoctions including Texas Pete, brown sugar etc.....

Thanks for sharing the bbq sauce. It is great!
I've used it with baking, on the grill, and is so good with chicken, pork. As a baste for grilling or just pouring the stuff over the meat to cook stove top or in the oven.

I really have used a variation of that recipe again and again. It's my go to BBQ sauce.
And geez, not a raccoon in sight!

Favorite commercial sauce is a tie between Chipotle Tobasco and El Yucateco green. But home made is much better. Give this one a spin: THICK & SWEET HOT SAUCE 8 oz red ripe bell pepper 2 lbs moderately hot ripe red peppers (jalapeno/serrano/gusto green etc.) 12 oz red ripe Anaheim peppers 1 cup Blues Hog Sauce (or other sweet BBQ sauce) 2 cups white vinegar 1 cup cider vinegar 1/2 cup balsamic vinegar 12 cloves garlic, minced 2 small yellow onions, coarsely chopped (about a pound) 1 7-oz can chipotles in adobo 3 Tbs chopped ginger 2 Tbs black pepper 4 tsp plain salt 2 tsp dried oregano 1 tsp mustard powder 1 20-oz can crushed pineapple 4 oz lemon juice Core and seed the bell peppers, and chop coarsely. Remove stems from other peppers and chop coarsely, leaving seeds and cores. Combine peppers with all other ingredients in 6 quart or larger stock pot and bring to boil (with good ventilation). Reduce heat and let simmer, covered, one hour, stirring frequently to prevent scorching. After simmering, puree all ingredients. A good immersion blender will be adequate, or use a blender or food processer. Bring sauce back to boil and pack in sterile jars. Cover, let cool and refrigerate. Makes about 4 quarts. Batch 1: I omitted bell pepper and used Heritage NM 6-4 and Billy Goat Habaneros. Boiled then ran through a food mill. Next time let steep for a week or so before food milling. O.T. to Melaska, We're an equal opportunity cheese consumer here--I even seek out and buy Limburger, which is still made in Wisconsin but DH draws the line here. There are a number of very affordable gorganzolas and blues made in Wisc. and Minnesota. Also lots and lots of cheddars in Wisconsin. Wisconsin marketers produce a cheese-beer road trip map that is my guide. I love it. Have hit about a third of the dairies. I can get aged cheddars at Burnett Co Farmer Coop for no more than $7/pound, which has spoiled me. They've worked up some specialties also which we're really enjoying. They do a mail order business. Moozarilla is their yogurt cheese that is very white and gets a lot of comments. Alpha Morning Sun and the Wood River series are nicely done. I'm not sure their parmesan would be up to your standard, but maybe. They've won awards for provolone for a long time and for string cheese. "The Splendid Table" on NPR turned me on to Roth Kase's gruyere from Monroe, WI. Best quality gruyere made in USA. Prairie Breeze, made in Iowa, is also showing up in specialty stores here. A real hit at wine tastings. We send boxes of cheese and wild rice to family in Fairbanks in Priority Mail boxes. No California cheese need apply, despite all their marketing. Lime chicken soft tacos Originally from allrecipes site but I made changes. I always have sour cream available for those who want it. INGREDIENTS: 1 1/2 pounds skinless, boneless chicken breast meat - cubed-- I have made this using left over rotisserie chicken 1/8 cup red wine vinegar 1 lime, juiced 1 teaspoon white sugar 1/2 teaspoon salt 1/2 teaspoon ground black pepper 5 green onions, chopped *1/3 finely sliced onions - I use purple for color * finely sliced bell pepper of your choice 4 cloves garlic, minced *less if don't love garlic 1 teaspoon dried or fresh cilantro or parsley 10 (6 inch) flour tortillas 1 tomato, diced 1/4 cup shredded lettuce - - I used more 1/4 cup shredded Monterey Jack cheese or as needed 1/4 cup salsa or as needed DIRECTIONS: 1. Saute chicken in a medium saucepan over medium high heat for about 20 minutes(if using pre cooked chicken just heat to warm it.). Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and cilantro . Simmer for an extra 10 minutes.(if you want the onion and bell pepper cooked add them also) (I like to keep a little of the diced green onions uncooked for toppings) 2. Heat an iron skillet over medium heat. Place a tortilla in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas. Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa. If you chose to not cook the onions and bell pepper use them as toppers along with the green onions you saved *items are optional This is fast and easy for a light summer dish. Of course some tortilla chips and guacamole would be a great addition.

Dang. I did a "how to cook rice" thread years ago. Many schools of thought as have been mentioned here. I'm usually an "in a hurry" and distracted rice cooker and my rice is usually not done well. Hubs got me an Instapot for Christmas. I've just never gotten into the habit of doing it in the oven, it doesn't seem to fit with my schedule very well. Hubs seems to do it right routinely on top of the stove. We only have the one really big Dutch oven so haven't done rice in it on the stovetop. I guess I could have gotten a cast iron rice "cocotte" (lovin' that name!) but instead we went for the multiple uses of the Instapot. Did jasmine rice last night, it was fab. Hubs made dinner and he liked that he didn't have to watch the rice so he could focus on the other parts of the meal. That would be a plus for me too. Part of my issue with stovetop rice is our nasty, nasty pulsing crap electric ceramic stove top. I like the notion that the rice cooker just heats up enough space to do the rice, very efficient. Plus it has other uses which we might enjoy. But I still love cast iron. It is just not as groovy on our pulsing stove as it should be. My cast iron pancake griddle doesn't work any better than any other pan on that crap stove. I use my Dutch oven now mostly for soups and artisan bread in the oven.

Oh, it's good to see you again. I wanted to answer on the Millie Moo post but it's just a few minutes before midnight here and I need to sleep. I miss hearing about Millie Moo and I often thought about you. Hope to see lots more of you!

Up this way when chicken is fixed that way it is called Chicken Cola. I have it in a 40 year old cook book. I have not fixed it in a long time as I don't do as much cooking any more.

Neighbor introduced me to the coke/ketchup sauce years ago when he was grilling venison.

oh, this is timely...I have left over roast chicken and rolls, and my mouth was all set to put some chicken in bbq sauce and eat it on the rolls. Not a drop of bbq sauce in the house....I don't need alot, and I have a dr pepper open, so I think I'll try it with that :) THANKS!!

I have used diet cola before as well as regular cola.
