How Do You LIke To Eat Your....?

How do you like to eat your cornbread? I only like it hot with butter or in a bowl crumbled up with sugar and milk on it. Of course I like corn casserole and corn meal mush the later with sugar and milk on it. I like to eat it with soup beans but I don't want it crumbled up in them. So how do you like yours?

I make it occasionally for DH and DS. Never sweet, never with cake mix added in, never from a mix. I add in corn kernels and canned anaheim chile peppers. We have it with my home made chili usually.

I might eat one piece, but never more.

Sugar and milk - well, just no.

Cornbread--I like mine sweet and cake. Served: hot with butter, or butter and honey. Or topped with BBQ, caramelized onions and cheddar. Or reheated, topped with butter and drizzled with maple syrup.

corn muffins--see above. Sometimes I like to add a diced tomato and some cubed mozzarella.

Cornmeal mush--with butter and real maple syrup (preferably Grade B)

Also like cornmeal made up into pancakes.

also like Sweet Mexican corn cake, or corn casserole.

Can you tell I just like cornmeal, made into pretty much anything?

Iceberg or romaine lettuce, spinach, tomatoes, onion, bell pepper, peas, broccoli, carrots, beans, sometimes turkey or chicken, and ocassionally cheese or walnuts are some of the things I add. Top it off with low-fat or no-fat dressing. Had a big salad with dinner tonight with lots of the above stuff in it and low-fat Sweet and Sour Poppyseed dressing. Yum....

I love to make cuke and fresh tomato and sweet onion salad, add all those ingredients, chopped in large pieces, to a bowl, sprinkle on some vinegar, can be plain or your fave flavor, add a little olive oil not much just a touch, then sprinkle on a generous amount of Parmesan grated cheese, add a couple of tablespoons of either a Ranch dressing or a Caesars dressing, seasonings of your choice, stir up well, put in fridge to cool then enjoy. (Stir well when serving) I use fresh ground pepper, grinder sea salt, a little Mrs. Dash, and a touch of Tony's for kick. I do not always fully peel the cukes, some times I just remove strips down the length. Leaving it in stripes looks pretty when you slice them into chunks but you can certainly peel them.

I applied a generous layer of used coffee grounds on my newly planted bulbs last autumn. I think I lost just one crocus bulb to the skwerls. (I planted over 100 crocuses and about 30 or so species tulips.) As things have emerged this spring, I've had some leaves nipped off as the new growth was apparently too tempting and I think one or two flowers have been nibbled on too. But on the whole, things have worked out well. I have an abundant skwerl population due to the density of pines on my property and in surrounding gardens.

Here's what I have. Google whirly popper many options appear. This one has plastic gears that I wonder about. My first was skinnier and taller but all metal. The bottom is well 'seasoned' as they say but the corn/sugar does not burn if not over loaded. It's a thinner pot so those used to a good sturdy kettle will understand why the sugar scorches and leaves the bottom black over time. I start with a bit of oil, and a kernel or two. When they are popped I add 1/2cup kernels with just under half cup of table sugar. Give it a shake to distribute and when it begins popping I start stirring until no more popping. Poor into a bowl and shake salt over to taste. Stir but be careful that sugar is HOT!!!! The better the kernels the less it takes to fill the pan. The recipe I learned was equal corn and sugar but lately I don't' really need that much sugar and do it more like half as much sugar to kernels. Plus I've started adding a Tbl of butter when I throw the kernels in. If you stir too soon the stirring action actually piles the corn and sugar up against the outside of the kettle so it doesn't evenly get hot and liquify the sugar. Let it start popping fairly fast before you start turning the crank. That's how I avoid a burnt mess.

I like mine with beans or chili. I don't like sweet cornbread. I also don't like yellow. White only. I have a recipe for corn sticks that is made with fresh corn and egg white folded into it. It has a tiny bit of sugar...also made with cream. It is so good...I can eat that just by itself.
I also like white cornbread made into cornbread dressing.

Cornbread with butter and jelly. Cornmeal mush fried with syrup, sooo good!!

hot, with butter. One of the few times I allow myself to eat butter. Mostly, I try to be "good", cause of my high cholesterol.

Hot with butter. DH puts it in the bottom of his bowl and puts his ham and beans over it. With another couple of slices on the side with butter and honey.

Don't want full kernels of corn in mine. And I don't like it gritty. If it's going to be eaten as a dessert, then put frosting on it and have it sweet like any other cake. If it's a meal accompaniment, then not sweet/cakey with just a light bit of real butter melted on it.

I'm not big on cornbread and don't find much good stuff around anyway.

I add chopped jalapenos and some honey to the mix. Delicious with butter!
