Sometimes just sliced into fingers, salt and pepper, and eat! We also like them on toasted bread with mayo, salt and pepper.

Cut in chunks with an oil and vinegar dressing is also very good and you can add other summer veggies (tomatoes, sweet onions, peppers, etc.).

You can make your own tatziki sauce by grating the cucumber and stirring it into yogurt, adding garlic, mint/parlsey/dill, and a squeeze of lemon. Don't forget the salt.

I've never heard of fried cucumbers!

I like them sliced, with seasoned vinegar. Also good with lemon juice, salt and freshly ground pepper.

Sliced with a little bit of onion, salt & pepper, rice vinegar, and dill weed. Keeps for days and low calorie.

I have a great recipe that I devised for Cold Cucumber Yogurt Soup. The recipe assumes that the cukes are rather large, so if your garden is producing more modest-sized ones you'll probably need more than 3. I plan on making a batch today, and I'll try to measure the amount of chopped cucumber I use.

It works well as an appetizer, served in clear plastic dixie cups.

Makes about 36 oz which should serve about 6 as an appetizer

Cold Cucumber Yogurt Soup

3 large cucumbers (peeled and seeded)
1 1/2 teaspoon salt
1 cup plain greek yogurt
1/3 cup sour cream
2 Tbsp crushed garlic
2 Tbsp lemon juice
1 tsp dill weed

After peeling and seeding cucumbers, chop them into 1/2" cubes and place in colander. Sprinkle all of the salt on the cucumber pieces and let sit for 10 minutes. (to draw out some of the moisture and any bitterness)

Next place salted cucumbers in food processor or blender with all of the remaining ingredients, blend until desired smoothness.

Chill for about an hour and serve.

I like them several ways:

-sliced with lime juice and chili powder
-sliced with onion, tomato, rice wine vinegar and spices (dill, S&P)
-Cucumber and cream cheese sandwiches
-Cukes & cream
-Cocktail: cucumber, mint, lime juice, simple syrup, vodka

I love several ways mentioned above. My sister introduced me to McCormick's vegetable seasoning. I sprinkle that on peeled and sliced cukes. It is delicious.

My DH likes what we call "Crying Cucumbers". Slice the cukes into a bowl, salt, and miracle whip, and maybe a drop or two of lemon or lime juice. Refrigerate for an hour or so until the salt makes the cukes "weep". This makes the miracle whip (or mayo) thin out and more like a dressing. Eat and enjoy. His mother made them this way.

Just as they are~~~slice and eat. I have never done anything fancy to them~~my kids like them with dip, but I eat almost all veggies as is~~

My favorite restaurant used to serve a Pimm's Cup in a metal tankard with a tall spear of fresh cucumber sticking out of it. By the time I finished drinking the yummy cocktail, the cucumber spear had absorbed enough of it to have a delicious taste too.

I like diced cucumbers mixed with diced onion, tomato and bell pepper (any color) and dressed with mayo, salt, pepper and fresh chopped dill.

I want to try the sauteed version that I've linked below just to see if I like it because it would make a nice side dish in the summer.

I am making refrigerator pickles or a Cucumber Salad this morning. It is supposed to keep 2 months in the frig.

This says summer.
Fresh Cucumber Salad...stays in the frig up to 2 months!

7-cups unpeeled pickling cucumbers sliced thin (about 7 large dills)
1-cup sliced onions
1-cup sliced bell peppers
1-tbsp salt
1-cup white vinegar
2-cups sugar
1-tsp celery seed
1-tsp mustard seed

Mix cucumbers, onions, peppers and salt; set a side
Put vinegar, sugar, celery seed and mustard seed in a pot and bring to a boil
Remove from heat and let cool for one hour
Pour mixture over cucumbers
Put in jars and store in refrigerator
Will keep up to 2 months

Have not tried it before, but I have lots of cukes!

I always make freezer pickles....very similar to the recipe above.

Cucumber cream cheese sandwich is very good

I love to make cuke and fresh tomato and sweet onion salad, add all those ingredients, chopped in large pieces, to a bowl, sprinkle on some vinegar, can be plain or your fave flavor, add a little olive oil not much just a touch, then sprinkle on a generous amount of Parmesan grated cheese, add a couple of tablespoons of either a Ranch dressing or a Caesars dressing, seasonings of your choice, stir up well, put in fridge to cool then enjoy. (Stir well when serving)
I use fresh ground pepper, grinder sea salt, a little Mrs. Dash, and a touch of Tony's for kick.

I do not always fully peel the cukes, some times I just remove strips down the length. Leaving it in stripes looks pretty when you slice them into chunks but you can certainly peel them.

I slice cakes and onions thin, soak in salt water overnight. Drain and add vinegar and sugar. Let set for a while. Hubby loves them. My neighbor lady slices them thin and puts them in lime jello!!

Peel, slice thin, soak in cold salted water. Drain , then mix with mayo and /or sour cream, plus any spices you like, (I like fresh dill). I also liked them sliced thick, no soaking needed, then with some Miracle Whip as dip.

I love them sliced and fried.Just dip in your favorite batter and fry in a little oil! Yummy!
