What's for dinner 9/15

It's just leftover tuna casserole here. I did make a coconut-mango rice pudding this afternoon for dessert, though. I'll freeze, then seal the leftovers for a night I don't feel like cooking. My seal-a-meal is my BFF :-)

Made a tamalie pie....it's all hot & bubbly. Then peanut butter cookies for dessert. :0) We sampled a plate....I'm full!! lol

Clare, I have my ribs in the slow cooker, too. They sure are smelling good!! Wish I could bake something for dessert, but it's 83 degrees outside and I'd have to turn on the air. Decided to bake the sweet potato in the microwave. Everybody's dinner sounds good--especially tacos!

Shirley, it sounds like you ate at Sue's house! LOL! Gayle, I wish we had a take-out restaurant nearby that had that. I'd probably eat in/out a lot! I needed a reminder about steaks. I bought a bunch when they were on sale a while back. Still to hot for chicken and dumplings but it sure sounds good. Ah, well. It'll be cold enough pretty soon. I would like to go with Lil, especially if she took Boston cream pie. I straightened out our freezer today and made a vow not to buy any more meat until I've used up a lot of what I already have. I could probably start a mini-meat market :0

We picked up several Italian subs and a big bag of chips, and headed over to a dear friend's house, whose mom died this week. This was supper for all of us. We had a wonderful afternoon and evening with her, her hubby, her eldest daughter whom I dearly love, and her sweet hubby. Good food and good friends to share with just can't be beat.

I had some Gravlax on flat bread and a stuffed mushroom plus a cosmopolitan before going out to dinner. Dinner was rabbit fricassee followed by pheasant with gnocchi, butternut squash and a biscuit. Dessert was profiteroles with coffee ice cream and hot fudge sauce and must not forget the wine. Everything was delicious and hopefully it doesn't rain tomorrow because I have to at least do a double walk if not a triple one.

I decided we'd have picnic food...I made the chicken breast with the french fried onion coating and potato salad...My daughter is our local Post Mistress and when I told her what we were having, she said, set another plate....Quick, easy and pretty yummy!

I put a roast with potatoes and carrots in the slow cooker. Then Dusty decided he wanted something on the grill. So he bought beef fajitas and sausage. So we have a wide range to eat tonight. When my son comes to pick up the twins I wil try to get him to eat here or at least take some food home.

Open-faced egg sandwich, leftover chicken soup, slices of red pepper, and a peanut butter sandwich. In typing this, it sounds sort of odd.....but it was good.

Jamie, it's really simple. I don't even follow a recipe anymore, but this is what I use.

Tuna Casserole

1 large can albacore tuna, drained and flaked
1 can mixed peas and carrots, drained (sometimes I use Veg-All)
1 can cream of celery soup (this time I used cream of chicken)
1 healthy big spoon full of sour cream, if you have it
6 oz. grated cheddar
Crushed potato chips (I like lots of these)

Mix the tuna, vegetables, soup, sour cream and a little of the cheese together and pour in a greased 8x8 casserole. Sprinkle the remaining cheese on top, then potato chips. Bake at 350 about 30 minutes.

Add more of whatever you like. This is really a guideline.

Since I went with Amber to have her ultrasound, we ate out after it was finished. We ate at Captain D's. I had baked tilapia on rice, green beans, coleslaw, soft bread stick and unsweetened Iced tea. For our supper we just warmed up anything that was leftover in the refrigerator. Tomorrow we start over with fresh food.

I was planning on a Mexican flavored meal with leftover pintos from last night turning into refried beans and then maybe some pork cooked up with cumin and chili powder to shred for tostados or enchiladas..

But I had BBQ pork and baked beans for a late lunch..so I picked up some chicken breasts and a bag of potatoes..we'll have baked chicken, garlic parm mashed red potatoes and garden broccoli.

DH had leftover chicken tettrazini, and since I got home late... I had a BLT with one of the last tomatoes from the garden.
