What's For Supper?

Some of the kids are coming over for supper. Cheryl is bringing grilled chicken. I have to go down and put my baked beans and my corn pudding in the oven and slice up the potatoes I have already peeled for fried potatoes. We will have a couple of pies also. We plan to eat around 6:00 we don't like eating any later if we can help it. It has been a busy day. Lots of rummage sales and some of the men working on our yard work. It is slowly getting there. The best part we talked the men into not cutting down my big burr oak tree, they just trimmed it. What are you having this evening to eat?

I mad minestrone soup. Here's the recipe if anyone would like to make it.

Minestrone Soup

1 large can tomatoes (crushed)
1 can tomato soup
1 can kidney beans
1 can baby carrots (cut up)
2 cubes or envelopes beef bouillon, dissolved in 2 cups water
1/2 cup macaroni
1 lb ground beef, cooked
1 onion, chopped and cooked with the ground beef
salt, pepper, garlic powder, oregano and other spices to taste
Combine all ingredients in large pot. Simmer until macaroni is cooked. Serve with garlic bread.

I made a hot chicken salad casserole this afternoon. We haven't had it for a while and I love casseroles and Harry will eat just about anything that doesn't bite back. With it we'll have steamed broccoli and hard rolls. I was going to make a cake, but there's always tomorrow.

DH found a new recipe he wanted to try and it was yummy! Sort of an Asian stir fry with chicken, lots of veggies and a sauce of peanut butter, curry paste, chicken broth and other wonderful flavors. We had it over rice, and a couple of cookies for dessert.

Your chicken sounds good, jasdip. I brought some Napa the other day, for a stirfry. I like it, when I can remember to pick some up. Hi, Kath....I'm so sorry that you resort to frozen dinners; that's not much fun and not healthy, if you do it often. I think that "just you" is important! But I have friends who stopped cooking entirely the minute they could. I appreciate that. Sounds like my kind of meal, satine! Almost any kind of meat tastes better with a salad under it, lol. Ellendi, leftovers are a treat, aren't they? Most of my meals are planned with leftovers in mind.

Wow, what scrumptious sounding meals! Shirley, so nice to hear from you; I hope that you're doing well. I'm a fan of cabbage myself, no matter how it's prepared, including raw. That stuffed cabbage sounds good, I may have to dig out my recipe and make a batch before hot weather gets here. Your chicken sounds good, jazzy. Aren't you glad that you had some leftovers? Texas Gem, I haven't had a taco salad in years, but I used to eat them all the time. And loved them. What a great combination of flavors and textures! Oh Raven, I hope that you had a relaxing evening! You must be absolutely exhausted between all of the stressful traveling and family events. And the illnesses, oh my. Mor, I had to look up flageolet beans and I'm intrigued. Tell me what you like about them. Supper sounds so good. grainlady, as always, I'm in awe. I've often wondered what your kitchen must be like. I'm having blood drawn today and can't eat anything.....why the heck am I reading about this wonderful food? My tummy is growling like crazy, lol.

My son brought me half of his turkey, dressing, I made some mashed potatoes and gravy to go with it. So what did I have? Leftovers of course, without having to make the 'firsts'.

Its going to be taco night here. Tacos for DH and taco salad for me. Had left over ground meat from a family gtg, so I just fried it up and put it in the freezer for a quick meal. Today seems to be the right time. Thanks for the recipe,Casey. I love soup!

I made a big pot of cabbage soup today and had it simmering for a couple of hours. It's in the freezer now.
Jeesh, with making my 1 1/5 bushels of roma tomatoes into sauces and soup, and everything else in my freezer, and now my cabbage soup, I can't make anything more to freeze. It's full.

Hubby is away, playing at a private function. The band is invited to stay for the dinner, then they play all evening.

I just had some leftover spaghetti.

I have some ribs in the crock pot and just remembered to put a couple of sweet potatoes in the oven for sweet potato fries.

After losing 14lbs. over the summer, I was feeling rebellious today - I had McDonalds! Funny how it always taste good until you get to the very last bite....ewwww.

We had grilled venison burgers with fresh tomatoes, fresh brocolli and mushrooms and corn on the cob. Will miss the fresh veggies during the winter months.

Grilled cheese sandwich on home-made bread, but I put bacon bits and sprouts in them, so it's a meal; I will have sliced tomatoes, too.

I'm having carne guisada again.
Someone ask about it the last time I mentioned it and I don't think I responded.
It's a lot like beef tips. It's served at all the Mexican food restaurants around here.
I cube either beef or pork. And brown it in a little oil. Then I add Rotel tomatoes and chilis ,flour and water and let it simmer 30 minutes to an hour. I usually serve it with flour tortillas and sometimes rice.

I cooked a brisket, long and slow blah blah blah and it was good but not super tender.......I obviously don't know how to select a tender brisket..........
