Saturday dinner? We are planning early

Our choices were chicken enchiladas (new to us) or delivery pizza...we have chosen pizza. Hubby worked all day on a porch for my brother and I did shopping for us and my sister, and watched grandsons' football games. Warm sun did me in. We are taking a ride out to a new apple orchard and country store and I didn't want to be late with the thread on my last night. Thanks, Rhizo for taking this week.

Starting to work on the freezer so I can defrost it within the next month. Chicken pot pie here.

I'm jealous of your trip to the orchards and country store. One of the (very few) things I miss about living in a more northern location is the apple orchards and freshly pressed cider. There are a few orchards around here but they can't grow the yummy varieties I grew up with.

I think that we'll have breakfast for dinner tonight. Whole wheat blueberry or walnut cinnamon pancakes and bacon. Sinfully delicious.

Glenda, that made me laugh--thinking about the soup man in Seinfield--no soup for you--if you didn't know what you wanted right away! I tell you, spring will be here soon!Love when those little sprouts start popping through. Oooh, Jas! I love me some taco salad. Enjoy (and I wish I was there). Georgysmom, I get "inspired" with food sometimes. Usually when I first wake up, something will sound really good in my little brain. Susan, you have my sympathy! Remodeling/decorating takes a toll. Enjoy your lasagne (I love Stouffer's!) Raven, the weather is beautiful isn't it? I just love having the house open. Your stuffed peppers sound good to me. Pekemom, is the Rice-A-Roni the box kind? I really like the chicken but we can't have it very often. Never had the Spanish rice one, but I bet it's good, too. Did you make that recipe up yourself? Sue, I think you will be warming up in a few days. Is Amber still having knee problems? Just wondering what you do to help out all day. You'll probably sleep really well tonight, though! LOL!! Nita, you make the best dinners. Hope you have enough to freeze for your next RV trip. Marilyn, hey--I'd eat chicken and dumplings every night during winter if it was up to me. It's so good, but I don't think it's the easiest meal in the world to make. And I could use a little comforting myself about now. Pam, be still my heart. Both dinners sound soooo good. Glenda, sorry you didn't get your MRI over with--and even sorrier that you had to have one in the first place. At least your lunch sounds good! Caroline, Harry used to go to convention every year for a weekend and up to our cabin that we were remodeling. Most weekends I'd go with him to the cabin, but 'ya know, it's nice to have a weekend alone once in a while. Enjoy! Mary, I'd share your shells--I'm not a fan of eggplant, either. Think our rain is about over but over the past week we got about 4". Still need more though. Shirley, you must have the cooking "bug". I need to catch it!! It was a good race, but no gray horses. Poor Harry :-) Monica, I wish I'd had a Philly cheesesteak while the kids lived in PA and took us to Philadelphia a couple of times. Everyone raves about them. Georgysmom, if we have lunch out, we're never hungry and usually don't eat at all. But if we eat at home, I guess we don't eat enough at lunch to last :-) Glad you didn't miss the race. It was a good one! 14 of the horses were either bought here in Ocala or were broken and trained here. Rhizo--question for you. When you cook the sausages just to eat (as opposed to putting them in a sauce or something), so you leave the casing on? I usually just put them in something, so I take the casing off and "scramble it. Jasdip, garlic is a pretty plant. As fast as I go through it, I should plant some myself. It's nice your DH tells you what he'd like for dinner. Harry won't say even when I ask him!!

Geez, I went to bed at 8 last night so I didn't get to read what ya'll ate. Shirley, I'll trade meatloaf for chicken livers. I don't know why I don't make them at home, but I never have. It was a real shame about I'll Have Another. He was born here in Ocala and sold for only $11,000 in a nearby county. Bet that guy could kick himself! Glenda, have you decided what to take to your luncheon? I love tamales but we haven't had any luck with them locally. Even at the Mexican bakery/restaurant. Sandwich is on the way--you should get it about Wednesday :-) Hounds, I'd love to have a Big Green Egg. I like smokey stuff! It uses charcoal, right? Oh yum!! You won't even have to cook at all for a few days, you lucky duck. Blfenton, thanks for the reminder. I have halibut in the freezer Harry bought at the fish market. Your dinner sounds delicious. The potatoes I made are just regular potatoes au gratin with gruyere cheese and a funny method of making the casserole. Mary, you had a feast! I will have to try chicken parmesan. I've never made it and probably only had it out once or twice. Bet you enjoyed every bite! Jasdip, congrats to DH!! Hope he enjoys his new gig. It sounds like a big step up for him. Sure hope so. Every time I tell Harry we're having pancakes for dinner, his whole face lights up! I know what you mean about the heat taking away your appetite, Cheryl. Are you an auctioneer? Glenda, that sure looks like fun and good food. Love carrot cake. From what I can see he looks great for his age. Georgysmom, it will be fun no matter what's for dinner. Enjoy! Mary, you sure do cook on your days off! Dinner sounds delicious--every bit of it. Especially green beans from the garden. Would love to be at your house tonight. Shirley, another wonderful dinner. I like Stovetop so much I hardly ever make my own anymore. I add more sauteed onion and celery, extra broth and bake it a little in the oven. Just call me Sandra Lee--semi-homemade :-) Phoggie, wish I could send some rain to you and I know Mary would probably carry it on her back to get rid of it. Hope you get some soon--those farms depend on good crops! Jasdip, I saw in the paper's weather report you were having nice weather today, and even better tomorrow (cooler). Friend's DH brought me some fresh fish, so that is what I will have, probably with baked butternut squash.

Just put Black bean, Corn and Salsa Chicken in the oven. Only it isn't quite 'salsa'. Discovered that I am all out of salsa after I put everything else in the baking dish. Improvised with a can of Rotel spicy tomatoes with some taco sauce added. Hubby will probably be happy...the spicier the better for him. Will have some baked Tostitos scoops for scooping up all that goodness and a salad, of course.

I just pop out in the back yard for apples. They are just starting to be ready..but no fresh cider..although I could convince hubby to buy a juicer. ;)

I just fixed pannini's and french fries..I am drinking a huckleberry soda..

We got soaked at Kamren's football game..SOAKED!

I bought a large bone-in ham on sale, because of the cravings I had, in reading Shirley having simmered ham, potatoes and beans.

We had that for dinner last nite and it was soooo good. Comfort food to be sure. Lots of ham leftover for frying (yum!) and heating up with scalloped potatoes, etc. I'll freeze some ham, too.
