My Menu For Noon Meal Today

Today the kids are planning on coming back out and the men will work on the yard work. Randy plans on bringing his stump grinder and take out some small stumps that the trees were taken out this past summer. So I will be fixing dinner at noon. This is my menu so far.

Beef Manhattans

Mashed potatoes

Broccoli

Sweet potatoes

Coleslaw

Deviled eggs

Peach Jello Cake With Peaches

and any thing that was left over from yesterday which wasn't much.

I hope you all have a wonderful Sunday. It is around 50 this morning and overcast. We had a bit of rain last evening but not much. What are you all doing today?

What am I doing today? I'm coming to your house for this feast today!! LOL Sounds so good. Would you let us know what Beef Manhattans are? I know Brandy Manhattans but what about the Beef variety. Thanks.

It's almost 2 hrs till lunchtime, but my taste buds got all revved up just reading that menu!! It all sounds wonderful as usual.

Tried this last night: Chicken Piccata Pasta Toss Recipe courtesy Rachael Ray Serves: 4 servings Ingredients ï¡ 2 tablespoons extra-virgin olive oil ï¡ 1 1/3 pounds chicken breast tenders, cut into 1-inch pieces ï¡ Salt and pepper ï¡ 1 1/2 tablespoons butter ï¡ 4 cloves garlic, chopped ï¡ 2 shallots, chopped ï¡ 2 tablespoons all-purpose flour ï¡ 1/2 cup white wine ï¡ 1 lemon, juiced ï¡ 1 cup chicken broth or stock ï¡ 3 tablespoons capers, drained ï¡ 1/2 cup flat-leaf parsley, chopped ï¡ 1 pound penne rigate pasta, cooked to al dente ï¡ Chopped or snipped chives, for garnish Directions Heat a deep nonstick skillet over medium high heat. Add a tablespoon of extra-virgin olive oil and the chicken to the pan. Season chicken with salt and pepper. Brown chicken until lightly golden all over, about 5 to 6 minutes. Remove chicken from pan and return the skillet to the heat. Reduce heat to medium. Add another tablespoon extra-virgin olive oil and 1 tablespoon butter, the garlic and shallots to the skillet. Saute garlic and shallots 3 minutes. Add flour and cook 2 minutes. Whisk in wine and reduce liquid 1 minute. Whisk lemon juice and broth into sauce. Stir in capers and parsley. When the liquid comes to a bubble, add remaining 1/2 tablespoon butter to the sauce to give it a little shine. Add chicken back to the pan and heat through, 1 to 2 minutes. Toss hot pasta with chicken and sauce and serve. Adjust salt and pepper, to your taste. Top with fresh snipped chives. *** Larry liked it. Me, not so much. Walnut Creek, your request for a recipe led me to the box with the recipes written on scraps of paper bags, fancy embossed stationery, and notebook paper, all in the beautiful handwriting of long gone family....my mother, her mother, her mother's mother, and aunts from two generations. On the top of my mother's recipe is the phone number of the butcher whom she had "trained" to select and grind the meats for her. Thank you! Grandmother's Ham Loaf 1 lb. Coarsely ground ham 1 lb. Ground pork, not too fatty 1/2 lb. (or more) Ground chuck 2 large eggs 1 cup milk 1 cup cracker crumbs (crushed white crackers) 1/2 tsp chopped parsley S&P Baste with: 1/2 cup each brown sugar, white vinegar, and water 1 T dry mustard. Simmer the baste ingredients for five minutes. Baste the loaf several times while baking. [One large loaf or two smalls. Grease the pans.] Bake for 60 minutes @ 350. My Mother's Hamloaf 1 egg 1 lb coarsely ground ham 1 lb coarsley ground pork, lean 1 cup tomato juice 1 cup cracker crumbs 1/2 cup chopped onion 1/2 cup chopped green pepper Same mustard sauce as a baste. Short cut: buy the cuts of ham and pork (and beef) and let the butcher grind them together. Coarse grind is a must. I'm sure that there are lots of recipes on line, too. P.S. MAKES THE BEST SANDWICHES, EVER.

Grandson's birthday party was held in the afternoon. Went back to their house for gift unwrapping and finally left at 7:30. Stopped at a diner and had chicken noodle soup, chicken fried steak, baked potato, mixed steamed veggies and french bread and butter with iced tea. Burp.

Friday night often means homemade pizza night with the sprites, unless Robert and I have other plans, and that's what we had tonight. We'll fix anything they want but pizza usually wins. Older sprite makes the dough by herself now! She ran over as soon as she got home, put her apron on and got to work. So cute. She assembles everything she needs and lines the ingredients up according to when they are needed. Little sprite picks peppers, tomatoes, and basil and helps decide what else we want on the pizza. Anyway, we had a couple of grilled pizzas, a simple crunchy salad, and lemon sugar cookies for dessert.

Sounds delicious! My cousin Joyce used to cook huge lunch-time dinners daily, then just have cold sandwiches at night.

I have potatoes cooking right now for my salmon soup. It's only 59 here today, nice soup weather.

Well, our dinner is over with for today. A few leftovers and they will be for our supper. Norm and Kevin are moving dirt with their tractors and making the drive down to the back door better and be ready for the stone or gravel I am hoping for gravel.

Beef Manhattans are a pile of first a slice of bread, usually white, then some brown beef gravy made from the rump roast that is slowly cooked, then a pile of mashed potatoes, then more gravy on that plus some of the beef. I cook my beef in a crock pot with some beef b. cubes, some garlic, I use the kind in the jar, and some squirts of Maggi seasoning sauce. The beef is cooked in a bit of water. Then when ready to make the gravy, mix corn starch to cold water and thicken the broth and then stir in some Kitchen bouquet to make it more brown. Making sure to have the meat sliced or shredded in the gravy. Salt and pepper to taste. We only had about a cup of it left.

I made tuna salad sandwiches for lunch. Dinner--there were some filet mignons at the store marked down because today was the last day, so I snagged them. I have no idea what I'll fix with them.

I remember when Woolworth's had a lunch counter. Beef Manhattan's were one of their specialties. They sliced the white bread diagonally, put it on a plate with mashed potatoes in between the bread slices, topped the bread with thinly sliced beef (a lot of it) and then covered the whole thing with gravy. It was blue plate heaven!! Oh, with a big glass of lemonade.

People in my area call the beef manhattans hot roast beef sandwiches. I had never heard them called other than that until I found them at an Amish restaurant. I had to read the description on the menu to know what it was. They have both the beef and the turkey. Some places around here also serve hot pork.

Went to great grandson's 4 year old birthday. Hot dogs, hamburgers and beans and cake. Lots of fun and ate outside. Beautiful day..
Nothing fancy but good company.

'Way back when, my DM and my DSs and I would go shopping together every chance we had. CVS drugstore now was People's Drug Store then. They had a lunch room in a balcony up over the main floor. We went there just for those hot roast beef sandwiches! Never heard them called Beef Manhattans.

One of those would fill you up real good.
