I'm so excited, because I've really been working this boring Diabetic Diet and tonight I'm going to have Chicken Fajitas. Guacamole, beans and rice.

Have no idea where I'll head to have dinner for lunch, today! Not really hungry!

Leftovers--crockpot pork chops in a gravy, mashed potatoes and a vegetable--probably broccoli. Tomorrow is steaks on the grill, dill potato salad and baked beans. Weather is so pretty we'll eat on the screened porch!

Tried this last night: Chicken Piccata Pasta Toss Recipe courtesy Rachael Ray Serves: 4 servings Ingredients ï¡ 2 tablespoons extra-virgin olive oil ï¡ 1 1/3 pounds chicken breast tenders, cut into 1-inch pieces ï¡ Salt and pepper ï¡ 1 1/2 tablespoons butter ï¡ 4 cloves garlic, chopped ï¡ 2 shallots, chopped ï¡ 2 tablespoons all-purpose flour ï¡ 1/2 cup white wine ï¡ 1 lemon, juiced ï¡ 1 cup chicken broth or stock ï¡ 3 tablespoons capers, drained ï¡ 1/2 cup flat-leaf parsley, chopped ï¡ 1 pound penne rigate pasta, cooked to al dente ï¡ Chopped or snipped chives, for garnish Directions Heat a deep nonstick skillet over medium high heat. Add a tablespoon of extra-virgin olive oil and the chicken to the pan. Season chicken with salt and pepper. Brown chicken until lightly golden all over, about 5 to 6 minutes. Remove chicken from pan and return the skillet to the heat. Reduce heat to medium. Add another tablespoon extra-virgin olive oil and 1 tablespoon butter, the garlic and shallots to the skillet. Saute garlic and shallots 3 minutes. Add flour and cook 2 minutes. Whisk in wine and reduce liquid 1 minute. Whisk lemon juice and broth into sauce. Stir in capers and parsley. When the liquid comes to a bubble, add remaining 1/2 tablespoon butter to the sauce to give it a little shine. Add chicken back to the pan and heat through, 1 to 2 minutes. Toss hot pasta with chicken and sauce and serve. Adjust salt and pepper, to your taste. Top with fresh snipped chives. *** Larry liked it. Me, not so much. Well, our dinner is over with for today. A few leftovers and they will be for our supper. Norm and Kevin are moving dirt with their tractors and making the drive down to the back door better and be ready for the stone or gravel I am hoping for gravel. Beef Manhattans are a pile of first a slice of bread, usually white, then some brown beef gravy made from the rump roast that is slowly cooked, then a pile of mashed potatoes, then more gravy on that plus some of the beef. I cook my beef in a crock pot with some beef b. cubes, some garlic, I use the kind in the jar, and some squirts of Maggi seasoning sauce. The beef is cooked in a bit of water. Then when ready to make the gravy, mix corn starch to cold water and thicken the broth and then stir in some Kitchen bouquet to make it more brown. Making sure to have the meat sliced or shredded in the gravy. Salt and pepper to taste. We only had about a cup of it left. Sue

The roasted veggies sound really good... We were so busy today, I was still working in the yard as it was getting too dark to see. A friend dropped off breaded ready-to-cook razor clams (tribal dug, we aren't allowed to for another week). I had no effort towards dinner at all, clams were dug, cleaned, breaded and seasoned and DH cooked them while I added compost to beds trying to get ready to install some of these things I've had in pots from my former house. Clams, toast, yogurt and a glass of milk was our dinner but I think we were both too pooped to really care that I didn't even make a salad...:).

I stopped at Hardees this morning on the way home and got SO 2 steak biscuits. He ate one and saved the other to eat this afternoon. How that man survives on so little baffles me, and makes me jealous if I am honest. I stopped on my way to work and got some salt and pepper chicken with rice. Its not good and the cats at work are eating it now. They seem to like it okay. I ate enough of it to where I wont STARVE before I get off work at 5am, but I am annoyed that I had to waste calories on non delicious food.

It's always pizza on Fridays. I can only eat a small amount since I'm on a diet for gestational diabetes. I always use some whole wheat in my crust and top it with lots of veggies and turkey pepperoni but I might do a white pizza tonight. I use Ragu's Roasted Garlic Parmesan sauce and add bacon, onions and mushrooms. Not quite as healthy but I'm sick of the pepperoni/veggie combination.

No idea. Got my new deep fryer today, so, if I make it to the store, it will be something deep fried!

I'm on my own tonight, as DH is going fishing with DBIL after work. Have to go grocery shopping after I leave the office, so maybe it's a good opportunity to pick up something I like but DH does not!

I hadn't thought about it, but since you reminded me....maybe I'll put something in the crockpot and surprise Jammer. I haven't been cooking lately.

I'm going to make spaghetti, salad and fresh baked french rolls. I have them rising now...hope I can shape them right.

I have country style ribs defrosting now...going to put them in the pressure cooker with bbque sauce. Makes a quick and easy meal....so tender!

Well, I ended up eating pretty healthy, at Nikkis downtown.
Ham steak, steamed spinach and carrot salad. NO BREAD!

Since I have Makayla and Kaden, I asked Makayla what she would
like for dinner. 'I do not know' was her reply, so then I said 'How about steak on the grill/'.
'YES' was her answer. So, we are having steaks on the grill, baked potatoes and corn on the cob.
Then for dessert/snack home made ice cream sundae with carmel and pecans.

Been doing yard work all day,and DH just told me he had invited his uncle over for dinner...not really a big deal as he's part of the family,and is easy to please.
Just put an apple crisp in the oven...chops are going on the grill,baked potstoes,fresh asparagus and a garden salad will round out the meal...I hope!

I stopped at an oriental market today for spring roll wrappers and ended up picking up things to make for my dinner. DD was getting KFC (shudder!).

I bought a package of dumplings (some I steamed, some I made like potstickers) and a package of chicken and sticky rice wrapped in leaves.

OMG. This stuff is soooo good. And the price is unbelieveable! Even with the wraps, some baby bok choy and a can of coconut milk the bill was under 10.00.
