It will be dh and me, and my dd and her husband. We'll have ham, bacon Mac and cheese (or lobster Mac and cheese), asparagus and maybe a salad? Dessert is a question mark, but I'm thinking of piped meringue shells with unsweetened fresh whipped cream and lots of berries.

Wow, Easter has changed so much for us other the last 4 years. We used to go to the wonderful Easter brunch at my parents’ club. With Dad, then almost immediately Mom, in a care home, we went to lunch there. Or had brunch at home which was more a late breakfast, with a couple of guests, but just eggs, croissants, bacon, fruit. Very similar to our Christmas brunch.

Last year, TBH I don’t remember what we did. This year, my brother is fully vaccinated so we should have him up. I’d better go shopping. But I think it will still be croissants, eggs, etc.

I’m excited 2 of my brothers and their families are coming! All vaccinated, except for the youngest kids. We have a total of 18 coming to spend the day at our lake cabin. I haven’t seen many of those attending since Christmas 2019.

We are smoking a Brisket, roasting a Turkey, baking beans, deviling eggs, making salads etc. Folks are bringing desserts, appetizers, and other sides. We’ll be eating on picnic tables outside, keeping everything casual.

I can’t wait!

I would love to have an Easter brunch rather than dinner but my youngest is actually working on Easter. She works at a local family owned hardware store. She didn’t have to work, but they asked if she wanted to. Since we can’t have our normal family gathering I told her it was fine; she is excited to get time and a half pay!

So our plans are rack of lamb/lamb chops with mint pesto, mashed potatoes, roasted asparagus and maybe one other vegetable. My 16 y/o daughter wants to try making her first carrot cake for dessert.

Rather simple menu since it’s just the two of us and three of our four kids.

It will be 3 of us here. DH, DS and myself.

Later, I have to make lambchops for DS because they're his favorite and he is moving on the 10th out of state. To go along with, I think I will make couscous with lots herbs, sliced almonds, and golden raisins, and a beet salad, oh and green beans.

My sis and BIL will be coming over, so 4 of us. Lamb is traditional in our family. I'm making a roast leg of lamb with garlic and rosemary and roasted fingerling potatoes. I'm also trying the wild rice/arugula salad mentioned here a week or so ago. Maybe some asparagus as well. My sister is bringing carrot cake for dessert.

We are at the lakehouse, and both DH and I are fully vaccinated now. Our adult DD and DS are joining us. We will be having Chef John's puff pastry Asparagus tarts (Recipe Here). I made these a few years ago for a graduation party and they were a big hit. I had various fixings so each guest could make them as they desired (tomatoes, basil, cheese, various veggies, and meat for the carnivores), and will do the same this time. The puff pastry makes them look fancier than they are. I'll serve them with wild rice and salad, and I'm thinking of making carrot cake for dessert.

Just DH and me, he’s been ill for a very long time, always had holiday dinners at Ruth’s Chris but due to mobility issues this last year, it’s no longer possible. I will prepare his next favorite holiday meal, prime rib with horseradish cream served on the side, baked potatoes, string beans, sautéed mushrooms. He’s not a big dessert person but there’s lots of Talenti in the freezer. Happy Holidays to all!

Popovers, salad with strawberries, fresh fruit with honey-lime dressing, potato salad! (I haven't had potato salad in forever!!) Sounds like lots of lamb and ham. We do not eat lamb, and I baked a ham at Christmas, although I could so dig into another one. LOL Carrot cake must be an Easter dessert as I've seen lots talked about here and there. I do not care for it, but I could easily scoop up the cream cheese icing! And yes @eileenc Happy Easter!!

A simple dinner for us, too, as it will be just DH and me this year. Trader Joe’s Mushroom Ravioli with Truffle Sauce, fresh asparagus, a green salad, along with a nice bottle of wine. And, for dessert, my homemade Winter Spiced Molten Lava Cakes and some coffee.

Just the two of us as well. We will have deviled eggs, filet mignon, mashed potatoes, green beans and a no bake cherry cheese cake for dessert.

I have a milk chocolate bunny for DH and a white chocolate bunny for me.

My 4 kids still all live at home and DD will be inviting her boyfriend up (they spend so much time together that anything he has would make it here anyway). His family does not celebrate Easter so she is happy to have him join us. We had lamb for Passover so we are going a different direction for Easter:

The boyfriend will be bringing cookies or some sort. I was trying to think of a festive drink but may just go with iced tea. Only one kid is of age for alcohol and frankly is not that interested. We will also be having a warm streak that weekend, where it will be close to 80.

Keeping it simple as life is complicated at the moment. Homemade crab cakes, asparagus and sweet potato fries. I’ll buy some little Easter egg cakes for dessert.

I have carried on my mom's traditional Easter Dinner, which is Smoked Brisket, Warm Potato Salad, Baked Beans, Deviled Eggs and Rye Bread, Sweet Tea and with Texas Sheetcake for dessert. My hubby and son, and my Dad and his wife and my sister, her husband and all the kids, mostly grown now, will be here. I've always enjoyed Easter Dinner the most since it is so easy and casual at our house.

Olliesmom, that sounds like a wonderful, delicious, very festive dinner! Okay, I’m now going to make deviled eggs for our appitizer, too!

Tina, my father is Sardinian/Sicilian where leg of lamb is popular. I grew up eating it every year for Easter. As I’ve gotten older I don’t much care for it but I do love lamb chops! When my husband and I were discussing the menu, he suggested leg of lamb, but I told him I’d much prefer lamb chops. Fortunately he loves them so he was willing to indulge me 😬. I’m also not a fan of carrot cake but my husband and two of my kids love it. My daughter has been wanting to make it herself. I’ve given up sugar/sweets so figure I won’t be as tempted to eat dessert if she makes carrot cake!

when I was growing up, ham was super popular for Easter meals among my friends. For some reason, we never had it (just the lamb!) and I have never served it either. My husband will eat it but it’s not something either of us have a huge desire to eat so we’ve never made it. I don’t hate it and would definitely eat it if someone served it to me, I just don’t think to make it.

I'm not sure. It will just be the two of us, and I do the majority of the cooking. I'm getting my second vaccine tomorrow morning so I'm not really sure what to expect after. I'll happily downsize the meal to be fully vaccinated!

We are having 8, everyone is fully vaccinated other than my husband and me. Much different than the 3 of us last year. We are scheduled for our first vaccines this week, yay. We have a fairly traditional dinner - ham, cream corn, asparagus, deviled eggs and strawberries. Dessert will be cheesecake with an optional raspberry sauce.
