What's your Easter menu?

Both my daughters (and maybe their boyfriends) are coming for Easter. So it might be six of us. I'm planning on devilled eggs, a ham steak for the carnivores, soup for the vegetarians,mashed potatoes, rolls and cheddar beer bread, mixed vegetables,asparagus , Key Lime pie for dessert. And 2 Easter baskets for my two chicks. My Mom made me an Easter basket well into my twenties.

I forgot to list my baby's favorite, a chocolate cake. I think I have some bunny cake decorations areound here...

I was at Penzeys Spices last week and picked up a delectable looking recipe. We're going to have Ham and Asparagus bake (an egg type casserole) after church. Probably also have a fresh fruit salad.

Thank you oly, walnut and liz! I did some of the shopping today and couldn't resist a 10 lb. bag of russets for $1.97. A store sale, not old potatoes, so russets it is. I really want to make Crispy Roast Potatoes but don't know how to do it ahead. Similar to Hasselback potatoes but in a casserole. Crispy Potato Roast Serves 8 Ingredients: 3 tablespoons unsalted butter, melted 3 tablespoons extra-virgin olive oil 4 pounds russet potatoes, peeled 4 shallots, thickly sliced lengthwise Coarse salt 1/2 to 1 teaspoon red-pepper flakes (optional) 8 sprigs thyme Directions: 1. Preheat oven to 375 degrees. In a small bowl, combine butter and oil. Brush bottom of a round 9-inch baking dish with some butter mixture. With a sharp knife or mandoline, slice potatoes very thinly crosswise. 2. Arrange potato slices vertically in dish. Wedge shallots throughout. Sprinkle with salt and red-pepper flakes (if using); brush with remaining butter mixture. Bake 1 1/4 hours. Add thyme and bake until potatoes are cooked through with a crisp top, about 35 minutes more. *Please note that the recipe is the photo is doubled. Walnut, I am sure that casserole tastes delicious but alas, I am one of those who doesn't use cream of canned soup. Either way, the corn casserole is creamy and ideally, I want something not creamy. I am actually leaning towards a recipe that I casually found, only because I know everybody will love it regardless of lacking texture contrast. At least it's not a hot casserole. I'm going to have to try that next time I have a small ham. I still have the 11.6 lb one in the freezer I have to do something with but that won't fit in my slowcooker. Our ham turned out well today - put foil in bottom of broiler pan, put in the ham and poured the juices from the shrink wrap over it, then brought foil up around it and sealed it tightly with double-folded seams. Warmed in preheated 325 oven for 45 min and then I was afraid my parents would be late (they weren't, but I was busy getting veggies done) so I turned the oven off and left it in another 30 min, it was very moist and not overly salty as I feared a non-smoked ham would be (and I got liquid on a scrape on my finger, so I know it WAS salted, though not salt-cured dry ham!). But it could have used some glaze or other flavoring IMHO - I think a little sugar/pineapple juice would have been nice. I hope the ham next Sunday is as good (I think I should freeze some of the leftovers, my parents only took a third of them, we're going to be tired of ham by next weekend!).

This is the first year I have been "allowed" to to Easter. Watching my mother wash dishes after Thanksgiving last year, I got her to agree to have the holidays here because I have a dishwasher. My SisIL and I dry the dished; however, a few years ago I made the three grandsons do the dishes and the next holiday she served on paper plates!

I don't know if we will be going somewhere or staying home yet so that will make a difference. Pretty sure ham will be involved either way. If we stay home I would love to have hubby put a ham in the pit I love smoked bbq ham. as to recipes they are extremely difficult to copyright and rarely are because the change of one or 2 ingredients or amounts makes it a different recipe. And for giving the credit to the original how the heck would you know the original creator for a recipe that has been handed down for generations, I have a collection of church cookbooks from Louisiana and the South and Jr. League cookbooks. I can not tell you how many have the same exact recipes in them which were "contributed" by someone. That is what is done recipes are contributed and then often times the person who contributed it their name gets added on as a way to remember it. I have recipes I have contributed for years to various forums etc many have my name attached now, I didn't do that others did. Now when I do have an original recipe that I created my very own self I will say this is an original. I may later see my original recipe re-posted somewhere with out giving me credit or even with someones name attached. That means it must have been pretty good because it is being passed around! Enjoying them is the pay off! Glenda I have so many of my cookbooks that look just like yours, very loved LOL.

We are doing something a bit different this year. A cookout. So far we plan to have rib eye steak, chicken, and also a ham, since I have a ham. Will add baked beans, cheese potatoes, broccoli, corn, peas, sweet potatoes, since I still have some from the garden, deviled eggs, cucumbers, coleslaw, radishes, Chocolate Whoopie pies, white cake, Soda Cracker Pudding and slushy punch. I am sure there will other things added. I will fix a lot of the food and we will have it at Amber and Mike's after church, probably around one. You All Come!

It will be just Hubs and I, but I'll cook a ham with the pineapple & cherry garnish, aug potatoes, some kind of vegies, deviled eggs and st. berry short cake.

It is Kalie's 25th BD the day before Easter, so I told her to let me know what she wants for the meal.

So far, ham, mashed potatoes, green beans with bacon, (Jackson will get his first real mashed potatoes and fresh mashed green beans), Cottage cheese Jell-0 salad, garlic pull apart bread, probably some asparagus and another salad too. She wants chocolate, of some sort, for dessert...but hasn't told me what yet. I have an angel food cake with pineapple recipe that looks good too.

I will have to keep an eye on this thread for some more ideas.

Not sure if DD and family is going to make it, but either way we're having ham, scalloped potatoes, asparagus or green beans, fried apples, pickled pineapple (recipe posted by SandieFL on the "I'll Share My Recipe" thread today), yeast rolls and strawberry pie.

We're planning to bar b Q chicken but it may rain all day so I'll have to figure out something to do with the chicken in the oven if DH doesn't want to grill in the rain!

We are hosting an egg hunt/egg coloring event on Saturday. Menu includes (so far) - ham, lobster mac & cheese, pineapple dressing, broccoli and homemade applesauce. I am thinking about adding a potato dish - either scalloped or mashed. For dessert - lemon/raspberry cake.

No dinner on Sunday -

I don't know what we will have because we will in Charleston over Easter.

I do have a couple of questions. Sue, could you post the recipe for soda cracker pudding? Sandy, how about the pull apart garlic bread?

Amish Soda Cracker Pudding Recipe

18 soda crackers
1/2 cup brown sugar
1/4 cup butter
2 Tbls. peanut butter
3 cups milk
2 eggs
2 Tbls. cornstarch
1 cup white sugar
1 tsp. vanilla
1/2 cup coconut

Directions:

Melt butter and penut butter. Add to brown sugar and the cracker crumbs and mix well. Place in pan, pressing crumbs to sides and bottom. Reserve 1/4 of the crumbs for topping.

In a sauce pan, combine milk, eggs, cornstarch and white sugar and boil over medium heat until thickened. Add vanilla and coconut. Pour slowly over crumbs and refrigerate. When cool, sprinkle remaining crumbs over top.

Having our dinner Saturday night since I work 13 hours on Sundays! Small ham and turkey breast (Kentucky Legend brand), scalloped potatoes, baby carrots, dinner rolls, deviled eggs, strawberry pie, and maybe banana cream pie. I might have another vegetable also. Invited my boss for dinner and will invite a few more to come.

Garlic Pull Apart Bread

Frozen dinner rolls dough thawed, cut into 4. Arrange in a bundt pan. Melt a stick of butter add good garlic powder and minced garlic.
Place a row of biscuts in pan, pouring a bit of the butter mixture (make sure you keep it mixed) over the layer...continue the layers. Let raise and bake according to package...or keep an eye on them.

We're leaving the traditional meal and doing a cookout too! I've already invited my Mother-in-Law and SHE is the only reason I care about doing anything at all. My husband never let his Mom spend a holiday alone..and I have continued that tradition and will as long as I'm able! Haven't really decided what meats son will be grilling...but if he's cooking it, I know it'll be good!!

Raisin Gravy!!!
That sounds like a funny name, but it brings back memories. My Mom always made Raisin Sauce to go with ham. I LOVE it but DH refuses to eat anything with raisins. I think I will add that to my menu! Thank you Bulldinkie, for mentioning it.

We will have:
Romaine salad with strawberries and fetta
Ham - baked
crashed potatoes
fresh green beans
carrots - cooked
macaroni and cheese
a jello salad
stuffed eggs
dinner rolls
raisin sauce
fudge pie with icecream and fudge sauce
lemon cake roll

A lot of these can be prepared or partially prepared the day before.

We are gathering at DDs house, and will have ham, au gratin potatoes, green beans almondine, bunny shaped yeast rolls, and lavender cupcakes. Starting the evening with wine and crudities.
