What's your Easter menu?

Both my daughters (and maybe their boyfriends) are coming for Easter. So it might be six of us. I'm planning on devilled eggs, a ham steak for the carnivores, soup for the vegetarians,mashed potatoes, rolls and cheddar beer bread, mixed vegetables,asparagus , Key Lime pie for dessert. And 2 Easter baskets for my two chicks. My Mom made me an Easter basket well into my twenties.

I forgot to list my baby's favorite, a chocolate cake. I think I have some bunny cake decorations areound here...

I was at Penzeys Spices last week and picked up a delectable looking recipe. We're going to have Ham and Asparagus bake (an egg type casserole) after church. Probably also have a fresh fruit salad.

Hey Scubadiver - what about a Greek Pastitsio? I have 2 different recipes, one uses beef and this one uses lamb. Either way it is EXCELLENT! BTW - I think I will put this on the Pasta thread too since it has elbows. Also Rob, enjoy the Ambrosia and the memory of your grandmother. I love that food reminds us of such good times in the past. Alexa ************************************************* Greek Pastitsio 1 1/2 lb. ground lamb or beef 1/4 tsp. pepper 8 oz. elbow macaroni 1/8 tsp. cinnamon 3 Tbsp. butter or margarine 1/8 tsp. oregano 1/4 cup flour 1 (10 3/4 oz.) can tomato puree 3 cups milk 1 lg. onion, finely chopped 3 eggs 1 tsp. salt 1/2 cup grated parmesan cheese Prepare macaroni according to directions. Rinse with cold water; drain. Stir flour into melted butter in a heavy saucepan. Gradually stir in milk & cook until thickened, stirring occasionally. Cover & cool the white sauce. Brown the ground beef & onion in a large fry pan. Pour off drippings. Sprinkle salt, pepper, cinnamon, & oregano over beef. Stir in tomato puree & cook slowly for 10 minutes. Beat together egg, & 1/3 cup of parmesan cheese. Gently stir in macaroni. Gradually stir in 2 cups of the white sauce into the macaroni mixture. Place 1/2 macaroni mixture into a buttered 11-3/4 x 7-1/2 inch baking dish. Spoon beef mixture in an even layer over macaroni. Place remaining macaroni mixture over the beef. Pour remaining white sauce over the top. Bake in moderate 375Â° F. oven for 20 minutes. Sprinkle with remaining parmesan cheese, & continue baking 20-25 minutes, or until knife inserted in center comes out clean. Let stand 15 minutes before cutting into squares.

I just finished my menu too. I'm actually allowed to play with the menu, and there will only be 8 or 10 of us, depending on whether Ashley has to work. Elery will be here, with Dad and Shirley, Amanda, David and the kids. Ashley will be here if she doesn't have to work and will invite the boyfriend. Elery loves lamb, everyone else hates it, but I'm making it for him anyway, probably a small roast or rack. My family always wants ham, and I don't care much for either of them, but there is always so much other stuff that I fill up on the rest of dinner. So, my tentative menu is: Appetizers: Cheeseball for David and Devilled Eggs, dyed a la Marilyn. Meats: Baked Ham and Roasted Lamb, cooked medium. Sides: Au Gratin Potatoes, Green Beans sauteed with bacon and almonds. Salads: Apricot Cream Salad (yes, the dreaded Jello is in there, ick) and Strawberry Mandarin salad with Cinnamon Viniagrette. Bread: Sol's Honey Rolls and Terri's Honey Wheat. Yeah, I'm in a rut. Desserts: A sugar-free fruit tart with a cream cheese base, a chocolate multi-layer cake and a Dairy Queen ice cream cake which is everyone's favorite and will probably be devoured while the others are left. Go figure. The layer cake will be decorated with the panoramic sugar egg I'm working on, covered in fondant and royal icing flowers so it looks like the Easter Bunny hid an egg in the flower garden. Hi Glenda and all, We had our Easter dinner today at Harry's sister's home. It was nice enough it have it outside so it was enjoyable. Wish you could have seen the food tables! When we got back to our room, I wrote down everything we had that I could remember. It looks like Marilyn_Sue's menu! Glenda, your pineapple casserole was a big hit. None of them had tasted it before and there was very little left. Ham Fried chicken Macaroni and cheese Squash casserole Potato salad (with onlon) Potato salad (w/o onion) Ditalini salad Green bean casserole Scalloped pineapple casserole Buffalo chicken dip with scoops Lettuce salad Deviled eggs 2 large relish trays Rolls Sweet tea Unsweetened tea Desserts: Peach cobbler 2 pecan pies Brownies 4-Day butter cake with coconut frosting (delicious) Marshmallow Whip cheesecake (Another cake???)

I don't know if we will be going somewhere or staying home yet so that will make a difference. Pretty sure ham will be involved either way. If we stay home I would love to have hubby put a ham in the pit I love smoked bbq ham. as to recipes they are extremely difficult to copyright and rarely are because the change of one or 2 ingredients or amounts makes it a different recipe. And for giving the credit to the original how the heck would you know the original creator for a recipe that has been handed down for generations, I have a collection of church cookbooks from Louisiana and the South and Jr. League cookbooks. I can not tell you how many have the same exact recipes in them which were "contributed" by someone. That is what is done recipes are contributed and then often times the person who contributed it their name gets added on as a way to remember it. I have recipes I have contributed for years to various forums etc many have my name attached now, I didn't do that others did. Now when I do have an original recipe that I created my very own self I will say this is an original. I may later see my original recipe re-posted somewhere with out giving me credit or even with someones name attached. That means it must have been pretty good because it is being passed around! Enjoying them is the pay off! Glenda I have so many of my cookbooks that look just like yours, very loved LOL.

We are doing something a bit different this year. A cookout. So far we plan to have rib eye steak, chicken, and also a ham, since I have a ham. Will add baked beans, cheese potatoes, broccoli, corn, peas, sweet potatoes, since I still have some from the garden, deviled eggs, cucumbers, coleslaw, radishes, Chocolate Whoopie pies, white cake, Soda Cracker Pudding and slushy punch. I am sure there will other things added. I will fix a lot of the food and we will have it at Amber and Mike's after church, probably around one. You All Come!

It will be just Hubs and I, but I'll cook a ham with the pineapple & cherry garnish, aug potatoes, some kind of vegies, deviled eggs and st. berry short cake.

It is Kalie's 25th BD the day before Easter, so I told her to let me know what she wants for the meal.

So far, ham, mashed potatoes, green beans with bacon, (Jackson will get his first real mashed potatoes and fresh mashed green beans), Cottage cheese Jell-0 salad, garlic pull apart bread, probably some asparagus and another salad too. She wants chocolate, of some sort, for dessert...but hasn't told me what yet. I have an angel food cake with pineapple recipe that looks good too.

I will have to keep an eye on this thread for some more ideas.

Not sure if DD and family is going to make it, but either way we're having ham, scalloped potatoes, asparagus or green beans, fried apples, pickled pineapple (recipe posted by SandieFL on the "I'll Share My Recipe" thread today), yeast rolls and strawberry pie.

We're planning to bar b Q chicken but it may rain all day so I'll have to figure out something to do with the chicken in the oven if DH doesn't want to grill in the rain!

We are hosting an egg hunt/egg coloring event on Saturday. Menu includes (so far) - ham, lobster mac & cheese, pineapple dressing, broccoli and homemade applesauce. I am thinking about adding a potato dish - either scalloped or mashed. For dessert - lemon/raspberry cake.

No dinner on Sunday -

I don't know what we will have because we will in Charleston over Easter.

I do have a couple of questions. Sue, could you post the recipe for soda cracker pudding? Sandy, how about the pull apart garlic bread?

Amish Soda Cracker Pudding Recipe

18 soda crackers
1/2 cup brown sugar
1/4 cup butter
2 Tbls. peanut butter
3 cups milk
2 eggs
2 Tbls. cornstarch
1 cup white sugar
1 tsp. vanilla
1/2 cup coconut

Directions:

Melt butter and penut butter. Add to brown sugar and the cracker crumbs and mix well. Place in pan, pressing crumbs to sides and bottom. Reserve 1/4 of the crumbs for topping.

In a sauce pan, combine milk, eggs, cornstarch and white sugar and boil over medium heat until thickened. Add vanilla and coconut. Pour slowly over crumbs and refrigerate. When cool, sprinkle remaining crumbs over top.

Having our dinner Saturday night since I work 13 hours on Sundays! Small ham and turkey breast (Kentucky Legend brand), scalloped potatoes, baby carrots, dinner rolls, deviled eggs, strawberry pie, and maybe banana cream pie. I might have another vegetable also. Invited my boss for dinner and will invite a few more to come.

Garlic Pull Apart Bread

Frozen dinner rolls dough thawed, cut into 4. Arrange in a bundt pan. Melt a stick of butter add good garlic powder and minced garlic.
Place a row of biscuts in pan, pouring a bit of the butter mixture (make sure you keep it mixed) over the layer...continue the layers. Let raise and bake according to package...or keep an eye on them.

We're leaving the traditional meal and doing a cookout too! I've already invited my Mother-in-Law and SHE is the only reason I care about doing anything at all. My husband never let his Mom spend a holiday alone..and I have continued that tradition and will as long as I'm able! Haven't really decided what meats son will be grilling...but if he's cooking it, I know it'll be good!!

Raisin Gravy!!!
That sounds like a funny name, but it brings back memories. My Mom always made Raisin Sauce to go with ham. I LOVE it but DH refuses to eat anything with raisins. I think I will add that to my menu! Thank you Bulldinkie, for mentioning it.

We will have:
Romaine salad with strawberries and fetta
Ham - baked
crashed potatoes
fresh green beans
carrots - cooked
macaroni and cheese
a jello salad
stuffed eggs
dinner rolls
raisin sauce
fudge pie with icecream and fudge sauce
lemon cake roll

A lot of these can be prepared or partially prepared the day before.

We are gathering at DDs house, and will have ham, au gratin potatoes, green beans almondine, bunny shaped yeast rolls, and lavender cupcakes. Starting the evening with wine and crudities.
