What is on your menu for Easter?

Still trying to figure out mine, DD and the boys have to go back Sunday by noon, so we shall eat Saturday night.

Sure seems like I am forgetting something...I have

ham

mashed potatoes and gravy

broccoli casserole (by DD Heather)

pineapple casserole

deviled eggs

dinner rolls

angel food cake and homemade ice cream (if Drew helps me make it)

You've posted your menu, now where's our invitations? ;)That sounds just great, I hope you have a wonderful day! I was in the mood to cook and have family at home this Easter and bought a ham, prime rib and a turkey while on special, but we are so spread out over two states and everybody so busy, seems we are meeting at a restaurant to make for shorter drives for everyone. (my shopping went into the freezer) Still will be fun, I haven't seen my brother or my sister since Christmas. Happy Easter everyone!

Thank you oly, walnut and liz! I did some of the shopping today and couldn't resist a 10 lb. bag of russets for $1.97. A store sale, not old potatoes, so russets it is. I really want to make Crispy Roast Potatoes but don't know how to do it ahead. Similar to Hasselback potatoes but in a casserole. Crispy Potato Roast Serves 8 Ingredients: 3 tablespoons unsalted butter, melted 3 tablespoons extra-virgin olive oil 4 pounds russet potatoes, peeled 4 shallots, thickly sliced lengthwise Coarse salt 1/2 to 1 teaspoon red-pepper flakes (optional) 8 sprigs thyme Directions: 1. Preheat oven to 375 degrees. In a small bowl, combine butter and oil. Brush bottom of a round 9-inch baking dish with some butter mixture. With a sharp knife or mandoline, slice potatoes very thinly crosswise. 2. Arrange potato slices vertically in dish. Wedge shallots throughout. Sprinkle with salt and red-pepper flakes (if using); brush with remaining butter mixture. Bake 1 1/4 hours. Add thyme and bake until potatoes are cooked through with a crisp top, about 35 minutes more. *Please note that the recipe is the photo is doubled. Walnut, I am sure that casserole tastes delicious but alas, I am one of those who doesn't use cream of canned soup. Either way, the corn casserole is creamy and ideally, I want something not creamy. I am actually leaning towards a recipe that I casually found, only because I know everybody will love it regardless of lacking texture contrast. At least it's not a hot casserole. Loaded Baked Potato Salad 8 baked potatoes, cubed (half peeled or half with skin) 6 slices bacon, diced & crisp cooked 6 green onions 2 cups cheddar cheese, shredded 16 ounces sour cream 1/4 teaspoon pepper 1 cup Miracle Whip Crumble bacon and slice onions (including tops). Combine sour cream, pepper and Miracle Whip. Add to potatoes. Add bacon, onions and cheese (reserve some of each for top). Mix with potatoes. Top with reserved cheese, onions, and bacon Bake or serve, as is. We prefer it cold or room temp.

"Because Asparagus causes an order (odor) when going to the potty (was that delicate enough?) I'm concerned, as the hostess, that I should not afflict this on my guests." As this act is (usually) performed in private, I can't see as how it would be a problem to anyone. It doesn't leave a lingering, offensives body odor, As garlic does. Now that is a whole 'nother story! It seems people will consume copious amounts of it, in public and privately, And reek of it for days. Are they concerned about the effect on people around them? Is it something people consider when preparing meals for guests? I often wonder about that when reading some of the recipes posted on this forum. Many really do seem to like to pile on the garlic! Oh yes, I know it is supposed to be good for you, And I can see why. Eat much of it, And on one will ever get close enough for you to contract any illness from them! :>) Rusty

I just finished my menu too. I'm actually allowed to play with the menu, and there will only be 8 or 10 of us, depending on whether Ashley has to work. Elery will be here, with Dad and Shirley, Amanda, David and the kids. Ashley will be here if she doesn't have to work and will invite the boyfriend. Elery loves lamb, everyone else hates it, but I'm making it for him anyway, probably a small roast or rack. My family always wants ham, and I don't care much for either of them, but there is always so much other stuff that I fill up on the rest of dinner. So, my tentative menu is: Appetizers: Cheeseball for David and Devilled Eggs, dyed a la Marilyn. Meats: Baked Ham and Roasted Lamb, cooked medium. Sides: Au Gratin Potatoes, Green Beans sauteed with bacon and almonds. Salads: Apricot Cream Salad (yes, the dreaded Jello is in there, ick) and Strawberry Mandarin salad with Cinnamon Viniagrette. Bread: Sol's Honey Rolls and Terri's Honey Wheat. Yeah, I'm in a rut. Desserts: A sugar-free fruit tart with a cream cheese base, a chocolate multi-layer cake and a Dairy Queen ice cream cake which is everyone's favorite and will probably be devoured while the others are left. Go figure. The layer cake will be decorated with the panoramic sugar egg I'm working on, covered in fondant and royal icing flowers so it looks like the Easter Bunny hid an egg in the flower garden. Or so my imagination says. LOL Annie

Just kidding. We're going to my Mom's. Not sure what she is fixing - probably ham.

Everyone's dishes sound wonderful, except for the lamb. Sorry, just can't bring myself to eat that. I won't eat veal either.

I might think of other things. This is the first year I have been "allowed" to to Easter. Watching my mother wash dishes after Thanksgiving last year, I got her to agree to have the holidays here because I have a dishwasher. My SisIL and I dry the dished; however, a few years ago I made the three grandsons do the dishes and the next holiday she served on paper plates!

I wasn't going to do Easter, but one of our Dallas Friends is coming down this weekend. He is a Widower and eats out all the time. So, I am cooking for him.
