It's 1pm and we just had eggs, bacon, and biscuits. Just DH & I for the week, so won't be ANY major cooking here!! LOL

Got some sirloin tips, and it's cool and damp here today....so I think it'll be beef bourguignon. DH loves the Julia Child recipe.

Burgers on the grill.DS and DDIL have been gone since Friday to a Cancer retreat and they said the food was horrible.DS ordered a big,juicy,grilled burger almost the minute he came in the door.LOL Just happens I bought the fixins yesterday.It will be later this evening before we cook though.Had a big breakfast not long ago.

Hey Scubadiver - what about a Greek Pastitsio? I have 2 different recipes, one uses beef and this one uses lamb. Either way it is EXCELLENT! BTW - I think I will put this on the Pasta thread too since it has elbows. Also Rob, enjoy the Ambrosia and the memory of your grandmother. I love that food reminds us of such good times in the past. Alexa ************************************************* Greek Pastitsio 1 1/2 lb. ground lamb or beef 1/4 tsp. pepper 8 oz. elbow macaroni 1/8 tsp. cinnamon 3 Tbsp. butter or margarine 1/8 tsp. oregano 1/4 cup flour 1 (10 3/4 oz.) can tomato puree 3 cups milk 1 lg. onion, finely chopped 3 eggs 1 tsp. salt 1/2 cup grated parmesan cheese Prepare macaroni according to directions. Rinse with cold water; drain. Stir flour into melted butter in a heavy saucepan. Gradually stir in milk & cook until thickened, stirring occasionally. Cover & cool the white sauce. Brown the ground beef & onion in a large fry pan. Pour off drippings. Sprinkle salt, pepper, cinnamon, & oregano over beef. Stir in tomato puree & cook slowly for 10 minutes. Beat together egg, & 1/3 cup of parmesan cheese. Gently stir in macaroni. Gradually stir in 2 cups of the white sauce into the macaroni mixture. Place 1/2 macaroni mixture into a buttered 11-3/4 x 7-1/2 inch baking dish. Spoon beef mixture in an even layer over macaroni. Place remaining macaroni mixture over the beef. Pour remaining white sauce over the top. Bake in moderate 375Â° F. oven for 20 minutes. Sprinkle with remaining parmesan cheese, & continue baking 20-25 minutes, or until knife inserted in center comes out clean. Let stand 15 minutes before cutting into squares.

I was hugnry before I started reading this thread. Now I'm full! :) Alexa? Cranberry biscuits? This sounds like something I need to know more about. Alton Brown is probably the only person who could convince me that diary and green beans belong within a mile of each other. I have no clue what I will be doing. MIL called this morning and wants to do something up her way. Given her cooking is not what it used to be, I'm hoping that means "reservations" because she's reticent to relinquish control of the kitchen. Frankly, I'm hoping to convince her that the traffic the next day will be so horrendous that she should either come down here or do her own thing with other relatives. I'd be perfectly happy spending the day with a turkey sandwich and a couple Hepburn movies. :)

The roasted veggies sound really good... We were so busy today, I was still working in the yard as it was getting too dark to see. A friend dropped off breaded ready-to-cook razor clams (tribal dug, we aren't allowed to for another week). I had no effort towards dinner at all, clams were dug, cleaned, breaded and seasoned and DH cooked them while I added compost to beds trying to get ready to install some of these things I've had in pots from my former house. Clams, toast, yogurt and a glass of milk was our dinner but I think we were both too pooped to really care that I didn't even make a salad...:).

rhizo, do you mean that you sub'd sliced zucchini for the lasagna noodles, or that you added zucchini to the meat & cheese filling? either way sounds good. Quick dinner here too -- hot day, so I made tuna & pasta salad, sweet corn, and sliced tomatoes and zucchini.

Roast cooked in Cream of Onion soup.It's in the crockpot now and my house smells wnderful! Will have Mashed potatoes,the gravy from the soup and corn.My favorite meal!

Roasted chicken, lima beans, sliced tomatoes, cucumbers, and fruit salad. We ate a late breakfast of french toast, bacon and orange juice.Neither of us wanted any lunch.

Roast beef hash from leftover prime rib, Texas toast and blueberries. I bought a half a flat of 'em at the farmers' market the other day. What was I thinking???

Everybody's food is making me hungry!

Grilled redfish garnished with homemade mango salsa and served over Jasmati rice along with Corn on the Cob and a tossed salad. We have friends coming over tonight, and we're eating on the patio (if it's not too hot!).

We had the birthday cookout today at Cheryl and Kevin's. We had grilled hot dogs, hamburgers, and chicken. Baked beans, corn on the cob, raw veggies and the salads and desserts I took. We all ate too much. No supper for me.

Tried this last night:

Chicken Piccata Pasta Toss
Recipe courtesy Rachael Ray
Serves: 4 servings

Ingredients
ï¡ 2 tablespoons extra-virgin olive oil
ï¡ 1 1/3 pounds chicken breast tenders, cut into 1-inch pieces
ï¡ Salt and pepper
ï¡ 1 1/2 tablespoons butter
ï¡ 4 cloves garlic, chopped
ï¡ 2 shallots, chopped
ï¡ 2 tablespoons all-purpose flour
ï¡ 1/2 cup white wine
ï¡ 1 lemon, juiced
ï¡ 1 cup chicken broth or stock
ï¡ 3 tablespoons capers, drained
ï¡ 1/2 cup flat-leaf parsley, chopped
ï¡ 1 pound penne rigate pasta, cooked to al dente
ï¡ Chopped or snipped chives, for garnish

Directions

Heat a deep nonstick skillet over medium high heat. Add a tablespoon of extra-virgin olive oil and the chicken to the pan. Season chicken with salt and pepper. Brown chicken until lightly golden all over, about 5 to 6 minutes. Remove chicken from pan and return the skillet to the heat. Reduce heat to medium. Add another tablespoon extra-virgin olive oil and 1 tablespoon butter, the garlic and shallots to the skillet. Saute garlic and shallots 3 minutes. Add flour and cook 2 minutes. Whisk in wine and reduce liquid 1 minute. Whisk lemon juice and broth into sauce. Stir in capers and parsley. When the liquid comes to a bubble, add remaining 1/2 tablespoon butter to the sauce to give it a little shine. Add chicken back to the pan and heat through, 1 to 2 minutes. Toss hot pasta with chicken and sauce and serve. Adjust salt and pepper, to your taste. Top with fresh snipped chives.

Also made up some tuna salad, potato salad, smoked salmon dip and a chicken and pasta salad to accompany lunches/dinners this week. My refrigerator is stuffed full! LOL

Yesterday I grilled brats & made potato salad for lunch. Then grilled a whole, skinned chicken, served with left over potato salad for dinner. It's just the 2 of us....2nite...leftovers...

Breakfast was store-brand Cheerios (Generic O's!) with vanilla almond milk.

Lunch was a ham and cheese on multigrain with steamed broccoli and cauliflower and a yet-to-be-eaten Fuji apple.

Dinner will probably be a turkey burger, although I am thinking spaghetti.
