My Menu For My Birthday Dinner

The weather is still overcast and around 24 outside. Last evening I rode along to watch Lily and KC go to doggy school. My first time there. There were 8 dogs. The largest was a black Great Dane and she was nice and big. The smallest was little Lily the Yorkie. They all did pretty well with what the trainer had them to do, some better than others. They all had to play Simon Says and that narrowed it down to four remaining and they each got a little doggy toy. Of course Lily and KC were in the group of four. Lily got a stuffed purse and KC got a little blue teddy bear. I think I will go again.

Today I am going to start getting some things ready for Mike's birthday dinner and mine. It will be Sunday at Amber and Mike's. So far this is what we are planning and there will be things added to it. Others will provide what ever they want to bring if they wish to. They don't have to.

Mashed Potatoes and Gravy

Pot Roast with Carrots and Onions

Corn

Glazed Sweet Potatoes

Broccoli / Cauliflower Salad

Lettuce Salad

Deviled Eggs

Cranberry Sauce

Yes, I think Jim got it too. With 25 diners, you could make several different simple meat dishes...a glazed ham, a roast beef or pot roast, a pile of grilled chicken parts. Easy sides. Maybe a big bowl of potato salad or mashed potatoes, one of rice pilaf, another of some noodle dish or other. A vegetable medley is always good, because people can eat those veggies they like and push aside those they don't. A "salad bar" so that people can build their own salads perhaps, with a few different dressings. My guess is that your Dad will be far more interested and involved in being the star of the event than he is in the food, but having a buffet with several choices for all can't miss. And, that style of serving lends itself to ahead of time preparation, leaving you to actually enjoy the party as well! Your Dad will only have a 70th birthday once, and you should be enjoying his party with him rather than holed up in the kitchen! Most importantly...do remember to take people up on it when they say, "if there's anything I can do to help..." Let people help, if it's only to assign one person to make some salad dressing, or another to help you do some dishes while you cook. When people offer, they really do want to help, and small things taken off your list can make your plans go so much more smoothly.

Cathy, you should try Ann T's chiles rellenos recipe! The secret is the batter, and her recipe is excellent. Make the sauce before you make the chiles, so you can assemble and serve immediately. Home Cookin Chapter: Recipes From Thibeault's Table Chiles Rellenos =============== I have been making Chiles Rellenos for about 30 years. I have never had an actual recipe. I just watch someone I knew (from Texas) make them and have been making this way ever since. I guess now is as good a time as any to put it down on paper. 1 or 2 cans whole chili peppers (usually 3 or 4 in a can) Monterey jack cheese 2 or 3 eggs separated 1 tablespoon flour salt and pepper oil for frying Sauce. canned tomatoes onions garlic cayenne pepper canned of chopped chilies chicken broth Cut cheese into finger size pieces. Carefully shove the cheese stick into a pepper being careful not to split it. Heat about 1 inch of oil in frying pan. Beat the egg whites until medium stiff peaks form. do not over beat. Beat egg yolks with salt, pepper and the tablespoon on flour. Gently fold the whites into the yolk mixture. Dip the pepper stuffed with cheese into flour and then into the egg mixture. Carefully add to the oil. If needed, spoon a bit of the egg mixture on top of the pepper while in the pan. (these fry quickly), flip over and fry other side. Remove and drain on paper towels. Continue cooking until all of the peppers are cooked. Make sauce by sauting the onions and garlic, add the chopped tomatoes and season with the chilies, salt and pepper. Add some chicken broth and simmer for 20 minutes. Serve Chili Relleno with sauce on the side OR Place the fried chili rellenos in a casserole dish and pour the sauce over them. Bake in a 350 oven for 20 to 30 minutes.

Oly, that's a great idea-- and they'll be easy to distribute to the nieces and nephews to take home/back to college too! I just spoke to my nephew-- for a little background, he's the oldest of my brother's kids but he has some developmental issues resulting from a stroke in utero. He is functional but has a lot of struggles as he is an adult with the mental capacity of an 8 yo. He is aware that he is an adult and wants to do adult things but he has a lot off limitations. Anyhow, I described the menu and explained the plan for a "beer garden" theme and he got really excited about some old bay pretzels he had at a recent oktoberfest-- he wanted to bring a small bag he purchased for the party. I explained that a small bag would be hard to share with the whole family but suggested that he come over next week and we'd find a recipe and make a batch. He is so excited-- he told me "I got this, Aunt Beth!" hahah.. I am thrilled to be able to include him in this way. He'll take GREAT pride in coming up with the idea and making them. I am really pleased with how it's all coming together.. again, thank you all for your suggestions and for helping me to work through the details.

Several years ago I had planned a traditional Christmas dinner... turkey and all the trimmings. We had just had a new kitchen sink installed. I started my preparations early and unfortunately discovered the sink connections had failed. I informed Mr Wonderful I would not be able to prepare dinner. After checking restaurants available I found out we had three choices.... A Japanese restaurant, a seafood restaurant at 10 PM or Denney's. We went to Denney's along with many others traveling. It wasn't a traditional dinner but the service was excellent and me met lots if people. This year we will have authentic Cornish pasties and a pumpkin cheesecake dessert. Merry Christmas to all. s

Yes, you can all come. My birthday was on the 3rd and Mike's was yesterday. Oh, by the way, the chicken is oven fried, but it is browned in the skillet first. The Angel Food cake is in the oven. Now back to work for me.

Shirley, I think you might have to come by dog sled! Guess whose cranberry sauce boiled all over the glass cooktop! And I said, dammit! Everything else is coming along so far.

Glad the dogs are getting training. I took my dog tO Puppy Obedience School, it was the best thing I've ever done. She learned to come when called and got potty-trained. Your menu sounds fabulous-Am I invited?

Have a great time, Sue.. Your menu is wonderful. I can tell you love to cook.. Angle food cake is one of my favorites.. Topped with strawberries, yummy!!!!!!!!We will be having a party, too. The twins ane 1 today and we will party on Sunday..
