So here is what I am thinking of doing.......

Spinach Walnut Garlic Puree with pita chips

Coral Soup

Dinner.........

Tequila Lime Chicken

Cornbread (the one with the pineapple in it)

Mixed Veggies in foil on the 'que

Dessert.........

Orange Basil Sherbert with Melon

Now this assumes I can make a few things (sherbert and the spinach puree) Friday evening after work before I have a few martinis!

Janet, if the chicken recipe is the Tequila Jalepeno one from Bon Appetit, I made it last Sunday. I added lime juice, quite a bit, to cut the sweetness. I was sure it called for lime, but when I printed it out from Epicurious, it was missing. Nevertheless, when tasting it before serving, I found the sweetness of the sauce cloying and squeezed in some lime juice (unmeasured) to taste. It worked beautifully. I really liked the seasoning on the chicken and the still sweet sauce had a bit of a tang, but went down easily. I only used one red jalepeno with very few seeds- I'm a heat wimp!

I'm almost there with my menu.

I'm thinking the marinated mushrooms and the pita crisps for nibblies.

The Margarita Shrimp to start

Either a grilled Caesar ( sounds like something I neeed to do) or the Panzanella

Janet's Grilled Chicken Breasts with Pancetta or Ann's Veal chops (likely to be pork given I am at the cottage )

Grilled potatoes and grilled asaparagus as sides

Grilled fruit with vanilla ice cream for dessert

Still not a done deal because my menu will mostly driven by what I can find at the grocery store in the Village of Haliburton...OK it may be burgers! LOL

That steak really looks good Alexa and the Bernaise held up great. I made the citrus cheesecake Sunday but we only finally got around to eating some tonight. It really was an excellent cheesecake. I'll make it again. I didn't put the sour cream on top of the cheesecake, in case I wanted to make the lemon curd for it. Also, instead of just zest I used the juice from the Meyer Lemon and the lime. I also added a tablespoon of cornstarch to make up for the added juice. Classic Cheesecake [modified] Serves: 8 to 10 servings This is a classic cheesecake -- velvety, rich, sweet and so satisfying. We are major fans of a thin sour cream cap on top of cheesecakes; it's the perfect balance to this rich cake. Ingredients Crust: 6 tablespoons unsalted butter 1 1/2 cups graham cracker crumbs 2 tablespoons granulated sugar Pinch fine salt Filling: 2 pounds cream cheese, at room temperature 1 1/4 cups granulated sugar 1 1/4 cups sour cream 6 large eggs, lightly beaten 1 tablespoon vanilla paste (see cook's note) or extract 1 teaspoon finely grated lemon zest [used zest from 1 Meyer lemon] 1 teaspoon finely grated orange zest [zest from half an orange] [added zest from 1 lime] As said above I added the juice from the lemon and lime plus a tablespoon of cornstarch dissolved in the juices. Topping: 3/4 cup sour cream 1/2 cup confectioners' sugar 1/4 teaspoon vanilla paste or extract Berries, optional Directions Position a rack in the middle of the oven and preheat to 325 degrees F. For the crust: Melt the butter, covered in the microwave, in a medium microwave safe bowl, or a saucepan. Brush a 9-inch springform pan with some of the butter. Stir the remaining butter together with the crumbs, sugar, and salt. Press the crumb mixture over the bottom of the pan, taking care to get the crust evenly into the edges. Bake until golden brown, 15 to 18 minutes. Cool. Wrap the bottom and up the sides of the pan with foil and put in a roasting pan. For the filling: Beat the cream cheese on medium speed with a hand-held mixer until smooth. Add the granulated sugar and beat just until light and fluffy, scraping the sides of the bowl and beaters as needed. Slowly beat in the sour cream, then eggs, vanilla and both citrus zests; take care not to over whip. Pour into the cooled crust. Bring a medium saucepan or kettle of water to a boil. Gently place the roasting pan in the oven (don't pull the rack out of the oven). Pour in enough hot water to come about halfway up the side of the springform pan. Bake the cheesecake for about 1 hour and 10 minutes---the outside of the cake will set but the center will still be loose.[Mine took almost 1hour and a half] For the topping: Stir together the sour cream, confectioners' sugar and vanilla. Spread over the top of the cooked cheesecake and return to the oven for 5 minutes. Turn the oven off, cook the cheesecake in the residual heat in the oven for about1 hour. This gentle finish minimizes the risk of the dreaded crack in your cheesecake. Remove cheesecake from the roasting pan to a rack. Run a knife around the edges and cool to room temperature. Cover and refrigerate at least 8 hours or overnight. Bring cheesecake to room temperature 30 minutes before serving. Remove the springform ring. Dip a knife in warm water, wipe dry before slicing each piece. Serve with berries, if desired. Notes We love vanilla bean paste. It has intense vanilla bean flavor in a convenient paste form. It's a great way to add great flavor and distinctive vanilla flecks without having to use a whole bean. --------------------------------------------------------------------------------- My note: Do let it set in refrigerator for time suggested. It's a very creamy cheesecake.

Here are three of my favourites. I'm thinking of making the Prawn and Avocado Salad as a first course. Still thinking about my main course. Home Cookin Chapter: Recipes From Thibeault's Table Prawn and Avocado Salad ======================= 24 large Prawns/Shrimp 2 Avocados sliced 2 Tablespoons chopped chives 6 leaves of Boston or Butter Lettuce Dressing 1 cup of Mayonnaise (homemade or Hellmans is best) 2 tablespoons lemon juice 1 small fresh red chilli, finely chopped 1 clove of minced garlic (Note: Sometimes I use just hot red pepper flakes and sometimes I roast a fresh red pepper, finely chop and add to the dressing along with the hot red pepper flakes) . Peel and devein shrimp, leaving on tail shell. Cook. Cool and refrigerate Make Dressing by mixing all of the ingredients together. To serve, Place one leaf of lettuce on each plate. Place the shrimp on plate and place one slice of avocado between each shrimp. Drizzle with dressing and sprinkle with chopped chives. Home Cookin Chapter: Recipes From Thibeault's Table Vittorio's Spinach Salad ======================== Vittorio's was a restaurant in Toronto that we use to go to years ago. Salad isn't something that I would usually order but I loved his. This is my recreation of his recipe. Washed and dried spinach (Baby) 4 hard boiled eggs, peeled 4 or 5 cleaned mushrooms, sliced 1 can of artichoke hearts halved or quartered 3 Roma tomatoes, quartered 2 chopped green onions Kalamata olives Dressing 1/4 teaspoon tarragon 1/2 clove of garlic 2 or 3 tablespoons wine vinegar 1/2 cup homemade mayo or Hellmans salt and pepper . Place spinach in a large salad bowl. Decorate with eggs, mushrooms, artichoke hearts, tomatoes and green onions and olives. Drizzle with dressing and toss. Can be made on individual plates as well. Dressing Soak tarragon and garlic in vinegar. Add salt to dissolve. Mix vinegar mixture into mayonnaise and adjust seasoning to taste. Home Cookin Chapter: Recipes From Thibeault's Table Roasted Red Pepper And Watercress Salad ======================================= Source: Judith Huxley's - Table for Eight 4 large red bell peppers 6 Tablespoons olive oil 1-1/2 tablespoons lemon juice 1 tablespoon minced shallot salt and pepper to taste 1 bunch watercress, washed and dried . Broil or roasted the peppers until the skins are blackened and blistered. Place them in a plastic bag and let them sit for about 10 minutes, or until they are cool enough to handle. Rub off the skins, seed the peppers, and cut into thin strips. Mix the oil and lemon juice and add to the peppers. Add the minced shallot and salt and pepper. Set aside. Just before serving place the watercress in a bowl, add the peppers with the dressing and toss.

I'm late adding these options.... One of our favorite grilling recipes is from The Barbecue Bible by Steven Raichlen. Tuna Steaks, Madeira-Style (Stimes3) 4 cloves garlic, peeled 1 TBSP coarse salt 1 TBSP dried oregano leaves 1 TBSP dried basil leaves 1 tsp freshly ground black pepper 1/2 cup EVOO, preferably Portugese, or as needed 4 tuna steaks (each 6-9 ounces and about 1 inch thick) 8 bay leaves 1. Combine the garlic, salt, oregano, basil, and pepper in a mortar and pound to a paste with the pestle, then work in enough oil to achieve a spreading consistency, 1 to 2 TBSP. (if you don't have a mortar and pestle, mash the ingredients together in a bowl using the back of a wooden spoon, or process in a mini-chopper or blender, adding the oil gradually. (this is what I do...)) 2. Rinse the tuna steaks under cold running water, then drain and blot dry with paper towels. Using your fingers or a spatula, spread the spice paste on both sides of each of the steaks, then place in a baking dish just large enough to hold them flat in a single layer. Pour another 1/4 cup of the oil over the fish and turn the steaks once or twice to coat. Place a bay leaf under each steak and one on top, then cover and let marinate, in the refrigerator for 3-4 hours, spooning the oil over the steaks occasionally. 3. Preheat the grill to high. 4. When ready to cook, oil the grill grate. Remove the tuna steaks form the marinade. Rinse and blot dry with paper towels, then brush on both sides with another 1 to 2 tablespoons oil. Arrange the steaks, facing in the same direction on the hot grate and grill until cooked to taste, 4-6 min. per side for medium well (the portugese like their tuna on the medium side of medium well), turning over carefully. For an attractive crosshatch of grill marks, rotate the steaks 90 degrees after the first 2 minutes on each side. 5. Transfer the steaks to serving plates and serve at once. Stacy Here's a recipe I've used for years - don't remember where I got it. I use it for pork, chicken, or beef. BLACK DIAMOND STEAK MARINADE(PatT) 2 Tblsp. oil 1/4 cup lite soy sauce 1/4 cup honey 2 Tblsp. brown sugar 2 Tblsp. vinegar 1-1/2 tsp. ginger Pinch of garlic powder Mix. Score steak on both sides. Marinate in above mixture 8 to 10 hours. Grill 6 to 8 minutes per side Steak in Garlic-Lime Marinade(Lorijean44) The recipe recommends to cut the steaks thin, no more than 1/2 inch thick, using steaks cut from the top butt, or shell steaks or sirloin. For the Adobo: 4 cloves garlic 1 teaspoon salt, or more to taste 1/2 teaspoon ground cumin 1/2 teaspoon freshly ground black pepper, or more to taste 1/2 cup sour orange juice or fresh lime juice 2 tablespoons olive oil For the steaks: 4 beef steaks (each 6 to 8 ounces), cut 1/2 inch thick 2 large onions, cut crosswise into 1/2-inch slices 2 tablespoons olive oil 1. Prepare the adobo. Combine the garlic, salt, cumin, and pepper in a mortar and grind to a paste with the pestle. Work in the lime juice and oil to a smooth paste. Alternatively, place all the ingredients in a blender and process to a smooth puree. Correct the seasoning, adding salt and pepper as necessary; the mixutre should be highly seasoned. 2. Preheat the grill to high. 3. When ready to cook, oil the grill grate. Brush the onion slices with the oil and arrange on the hot grate. Brush the steaks with the adobo mixture and place on the box grate with the onion (see Note). Grill the steaks to taste, 2 to 3 minutes per side for medium-rare, basting with the adobo and rotating 90 degrees after 1 minute to create an attractive crosshatch of grill marks. Always use tongs when moving or turning the steak. Grill the onions until nicely charred, 3 to 4 minutes per side, seasoning with salt and pepper. 4. Transfer the steaks to plates or a platter and brush one final time with the adobo. Let stand for 3 minutes, then serve with the grilled onions on the side. Serves 4 Note: To give the steaks a richer garlic, cumin, and lime flavor, marinate them in the adobo in a nonreactive baking dish for 10 minutes before grilling. Here is my favourite rub from Steve Raichlens How to Grill(Chase) 1/4 cup brown sugar 1/4 cup Paprika 3 TBSP coarse pepper 3 TBSP coarse salt 1 TBSP Hickory smoked salt 2 tsp garlic powder 2 tsp onion powder 2 tsp celery seed 1 tsp cayenne Mix well and store in an air tight jar. Here's a nice sounding recipe for a grilled caesar that showed up in my inbox this morning from the LA Times. Grilled Caesar salad Preparation time: 15 minutes Cooking time: 3 minutes Yield: 4 servings Adapted from a recipe from Northshore Cookery in Highland Park, Ill. Ingredients 3/4 cup extra-virgin olive oil 1 Tbsp. each: fresh lemon juice, balsamic vinegar 1 clove garlic, minced 1/2 tsp. each: anchovy paste, salt Freshly ground pepper 2 large heads of romaine lettuce, halved lengthwise, outer leaves trimmed 2 Tbsps. grapeseed oil or olive oil Parmesan shavings, anchovy fillets 1. Prepare a grill for medium heat. Blend the olive oil, lemon juice, vinegar, garlic, anchovy paste, salt and pepper to taste in a blender until smooth; set aside. 2. Brush the cut side of the romaine with grapeseed oil; grill, cut side down, until just tender and the leaves have grill marks, about 3 minutes. 3. Place each lettuce half on serving plates; dress each with about 2 Tbsps. of the vinaigrette. Garnish with Parmesan shavings and anchovy fillets. Pass additional dressing. Nutrition information per serving: 302 calories, 27% of calories from fat, 30 g fat, 4 g saturated fat, 0 mg cholesterol, 7 g carbohydrates, 2 g protein, 261 mg sodium, 2 g fiber.

We're still deciding, but it will be al fresca and very easy since we have a full day planned.

We'll start with a floral ice ring, filled with large shrimp and a sauce on the side.

I know we'll finish with a daylily sorbet.

Sides will be grilled veggies from our CSA basket.

Tequila lime chicken sounds good!

I'm late to the party but have decided to join. Except I'll be doing my dinner Sunday. I need Saturday to recoup from the week.

Hors d'oevres: Maybe the spinach garlic walnut puree, or Sharon's Boursin which I didn't make for my guests last week and still have the ingredients for.

Sangria

Coral soup
Zuchinni corn cakes with pesto topping
BLT salad with avocado (Veggie me uses fake bacon bits)
Cole slaw (maybe)
Blackeyed pea salad

Dessert: blackberry shortbreads or lemon bars.

Some of these recipes are from and old issue of Martha Stewart's "Living" magazine that I have lying around and I will post tonight when I get home from work.

This gives me something to think about on my commute to work!

I hope to have at least one or two friends over. I will probably make the stuff ahead so can report on that.

Looks like it will just be me for dinner this weekend. DM may come up...she's not sure yet. Some are headed to KC for a kids weekend at World of Fun and the water park....others are taking advantage of the tax free shopping weekend for school clothes and supplies this weekend. Some are working the friendly skies. Anyway, here is what I'm thinking for me and maybe a guest or two...you never know with my group. It's still early for final plans..LOL! (Subject to last minute changes)

BBQ Pecans and Hummus(with veggies and crackers)
Margarita Shrimp
Coral Soup
Grilled Ceasar
Black Diamond marinated steak
Seasoned fries or grilled potatoe wedges
Grilled Asaparagus
Homemade Ice Cream with some kind of grilled fruit

I'll make the soup and shrimp by half if it just me and DM or a friend. The rest will be easy to make for one or two.

ruthanna's coral soup is very "fresh" and i'm sure those of you who are making it will be pleased. and i'd fogotten about pat t's black diamond marinade--it IS good stuff! in any case, i'll look forward to hearing how things work out for all of you!

I haven't settled on anything yet! I do have guests coming.

Definitely the Tequila-Honey glazed chicken from Bon Appetit. and probably Sue's Roadhouse Ribs! Marinated Mushrooms, and a salad for sure, not sure about the sides yet! Definitely homemade ice cream for dessert, too!

LPink, Sangria sounds so good! It's been pretty hot here!

I have to work tomorrow so I won't be doing all the courses. And I haven't quite decided everything, but I'm leaning towards a Tex-mex menu, starting with one of the soups I posted on the soup thread. Either the Southwest Gazpacho or the chilled tomato soup. And possibly the Lime-Tequila Grilled chicken with a Mexican rice on the side. Sangria to drink.

I've planned to attend PowWow and I've volunteered to help at the Vietnam Memorial here this weekend, but I'm really wanting ribs.

Maybe I'll join in with Sue's Roadhouse Ribs and a veggie, just a "mini virtual dinner". :-) We'll see how time goes but everything just looks so....GOOD!

I've finally gotten to posting my recipes. Very late I know, since the dinner is Sat. and this is Fri. night, but I work a lot during the week. So I posted the blackeyed pea salad under the "salads" thread. I'm having my dinner Sunday so will be just doing some shopping at the farm market Saturday, and housecleaning. I'm excited because I'm reconnecting with some old friends who I haven't seen in a year and a half at least.

well, as usual, I am late to the party - my 25th reunion bash which I coordinated, was last night, and we didn't get home til almost 2. I am often awake at 2 AM, but normally it's after already sleeping for 3 hrs...

We had great fun, but still had to run to the store for ingredients for our dinner, today. It's just us.

For starters we are having the grilled flatbread with carmelized onions and blue cheese and mushrooms posted by Sharon.

We got King Crab Legs on sale so dipped in butter they'll be! We got a dozen ears of finally fresh corn and I'll mix up some chili lime butter.

I was going to do the grilled asparagus with proscuitto too, but the asparagus was about as big around as a toothpick. So I looked for soba noodles. nope. what are they like, anyway?? Ahhh, I remembered a great looking recipe for fingerling potatoes! Nope. They NEVER have them. sigh.

so, I guess it's corn and crablegs. I guess our theme is BUTTER. we should probably have toast and popcorn, too.

maybe i'll save the flatbreads to serve with our dinner...or maybe whip up a quick mac salad or something.

I got some watermelon, blueberries, lime sherbet and lemon italian ice.

i'm not too organized. I think I"m going to go take a nap in the pool. :-)

Well the Marinated Mushrooms are done as is the Walnut,Spinach and Garlic Puree (I could not resist!).

We are about ready to emabark on a party boat cruise around the lake. Picking up a few folk as we go, then back here for dinner. It's a gorgeous warm night.

Life is good.
