So here is what I am thinking of doing.......

Nibblies....

Spinach Walnut Garlic Puree with pita chips

Soup.....

Coral Soup

Dinner.........

Tequila Lime Chicken

Cornbread (the one with the pineapple in it)

Mixed Veggies in foil on the 'que

Dessert.........

Orange Basil Sherbert with Melon

Now this assumes I can make a few things (sherbert and the spinach puree) Friday evening after work before I have a few martinis!

Janet, if the chicken recipe is the Tequila Jalepeno one from Bon Appetit, I made it last Sunday. I added lime juice, quite a bit, to cut the sweetness. I was sure it called for lime, but when I printed it out from Epicurious, it was missing. Nevertheless, when tasting it before serving, I found the sweetness of the sauce cloying and squeezed in some lime juice (unmeasured) to taste. It worked beautifully. I really liked the seasoning on the chicken and the still sweet sauce had a bit of a tang, but went down easily. I only used one red jalepeno with very few seeds- I'm a heat wimp!

I'm almost there with my menu.

I'm thinking the marinated mushrooms and the pita crisps for nibblies.

The Margarita Shrimp to start

Either a grilled Caesar ( sounds like something I neeed to do) or the Panzanella

Janet's Grilled Chicken Breasts with Pancetta or Ann's Veal chops (likely to be pork given I am at the cottage )

Grilled potatoes and grilled asaparagus as sides

Grilled fruit with vanilla ice cream for dessert

Still not a done deal because my menu will mostly driven by what I can find at the grocery store in the Village of Haliburton...OK it may be burgers! LOL

Here are three of my favourites. I'm thinking of making the Prawn and Avocado Salad as a first course. Still thinking about my main course. Home Cookin Chapter: Recipes From Thibeault's Table Prawn and Avocado Salad ======================= 24 large Prawns/Shrimp 2 Avocados sliced 2 Tablespoons chopped chives 6 leaves of Boston or Butter Lettuce Dressing 1 cup of Mayonnaise (homemade or Hellmans is best) 2 tablespoons lemon juice 1 small fresh red chilli, finely chopped 1 clove of minced garlic (Note: Sometimes I use just hot red pepper flakes and sometimes I roast a fresh red pepper, finely chop and add to the dressing along with the hot red pepper flakes) . Peel and devein shrimp, leaving on tail shell. Cook. Cool and refrigerate Make Dressing by mixing all of the ingredients together. To serve, Place one leaf of lettuce on each plate. Place the shrimp on plate and place one slice of avocado between each shrimp. Drizzle with dressing and sprinkle with chopped chives. Home Cookin Chapter: Recipes From Thibeault's Table Vittorio's Spinach Salad ======================== Vittorio's was a restaurant in Toronto that we use to go to years ago. Salad isn't something that I would usually order but I loved his. This is my recreation of his recipe. Washed and dried spinach (Baby) 4 hard boiled eggs, peeled 4 or 5 cleaned mushrooms, sliced 1 can of artichoke hearts halved or quartered 3 Roma tomatoes, quartered 2 chopped green onions Kalamata olives Dressing 1/4 teaspoon tarragon 1/2 clove of garlic 2 or 3 tablespoons wine vinegar 1/2 cup homemade mayo or Hellmans salt and pepper . Place spinach in a large salad bowl. Decorate with eggs, mushrooms, artichoke hearts, tomatoes and green onions and olives. Drizzle with dressing and toss. Can be made on individual plates as well. Dressing Soak tarragon and garlic in vinegar. Add salt to dissolve. Mix vinegar mixture into mayonnaise and adjust seasoning to taste. Home Cookin Chapter: Recipes From Thibeault's Table Roasted Red Pepper And Watercress Salad ======================================= Source: Judith Huxley's - Table for Eight 4 large red bell peppers 6 Tablespoons olive oil 1-1/2 tablespoons lemon juice 1 tablespoon minced shallot salt and pepper to taste 1 bunch watercress, washed and dried . Broil or roasted the peppers until the skins are blackened and blistered. Place them in a plastic bag and let them sit for about 10 minutes, or until they are cool enough to handle. Rub off the skins, seed the peppers, and cut into thin strips. Mix the oil and lemon juice and add to the peppers. Add the minced shallot and salt and pepper. Set aside. Just before serving place the watercress in a bowl, add the peppers with the dressing and toss.

Here is my favorite Pound Cake recipe. Perfect for all of the fresh fruit that is available this time of year. Janelle McComb, who was Elvis's friend from the time he was a boy in Tupelo Mississippi used to bake two loaves of this cake every Christmas and bring them to Graceland. On a good day, Elvis could eat one all by himself. He shared the other with his entourage. ELVIS PRESLEY'S FAVORITE POUND CAKE 3 cups sugar 1/2 pound of butter softened 7 eggs room temperature 3 cups cake flour, sifted twice 1 cup heavy cream (not whipped) 2 teaspoons vanilla extract Thoroughly butter and flour a 10-inch tube pan. Cream together the sugar and butter. Add eggs one at a time, beating extemely well after each addition. Mix 1/2 half of the flour, then the whipping cream, then the other half of the flour. Beat 5 full minutes. Add vanilla. Pour batter into prepared pan. Set in cold oven and turn temp to 350 degrees. Bake 1 hour to 90 minutes, until a sharp knife inserted in the cake comes out clean. Cool in the pan 5 minutes. Remove the cake from the pan and cool thoroughly. Wrapped well in foil, this cake keeps several days. My group likes grilled pineapple too. I just dip it in butter and then brown sugar and grill. Great by itself or with ice cream. Here are a couple of others I have in my files from Ruthanna. Can you tell I'm leaning toward the grilling thing? GRILLED STRAWBERRY SUNDAES (Ruthanna) 1/ 4 cup orange juice 1/ 4 cup strawberry spreadable fruit 1 tsp. cornstarch 2 pint strawberries, hulled 2 cups low-fat vanilla frozen yogurt Preheat the grill to a medium heat. In a medium saucepan, combine the orange juice, spreadable fruit, and cornstarch. Set aside. Thread the strawberries onto 4 skewers. Grill the kebabs, turning once, for 4 to 5 minutes. Meanwhile, place the medium saucepan directly on the grill or on the stovetop over medium heat and bring to a boil, stirring constantly. Cook, stirring, until the sauce is slightly thickened, about 1 minute. Remove the strawberries from the skewers and stir gently into the sauce mixture in the saucepan. Divide the yogurt among 4 bowls, spoon the strawberry sauce over, and serve. Notes: Can substitute ice cream for the frozen yogurt if desired. Sauce is best when serve hot. Can also be served over sliced angel food or pound cake. GRILLED PEARS WITH BUTTERSCOTCH SAUCE serves 4 (Ruthanna) 4 large firm-ripe Anjou or Bartlett pears 3 Tbs. fresh lime juice 2 Tbs. sugar 1/3 cup evaporated milk (can be evaporated skim milk) 2 Tbs. firmly packed light brown sugar 2 tsp. butter (not margarine or spreads) 1/ 2 tsp. vanilla extract Peel the pears, halve lengthwise, and core. With a sharp knife, cut a very thin slice from the rounded side of each pear half so they will lie flat. In a bowl, toss the pear halves with the lime juice and sugar. Grill the pears over medium heat for 4 minutes. Turn them over, drizzle with any remaining lime mixture, and grill for 5 minutes, or until tender. Meanwhile, in a small saucepan, combine remaining ingredients. Cook directly on the grill or stovetop over medium heat, stirring constantly, until the mixture comes to a gentle boil. Cook until the sauce is smooth and slightly thickened, about 2 minutes. Divide the pears among 4 plates, drizzle with butterscotch sauce, and serve hot or warm. David

I would make a simple grilled salmon the main "meat" course and serve pork riblets and perhaps a savory cheesecake with a layer of basil pesto and roasted red pepper pesto as appetizers.....and oysters on the half shell too if you are splurging. Then with the salmon a bowl of halved cherry tomatoes, small sweet onion rings (whatever sweet you can get out your way....we're still seeing Vidalias here...but maybe Maui are in where you are.) mozzerella pearls, lots of chopped basil kosher salt and a drizzle of olive oil and perhaps baby red potatoes quartered and served in either a dill cream sauce or with a garlic-ey butter with lots of chopped fresh parsley. And I think you need some leafy greens....how about romaine with a simple vinaigrette featuring some toasted sesame oil and topped with toasted buttered bread crumbs and toasted sesame seeds. For dessert you could serve that summer torte that everyone here talks about....with blue berries and peaches....with home made ice-cream if you are still feeling ambitious...otherwise just with whipped cream.

We're still deciding, but it will be al fresca and very easy since we have a full day planned.

We'll start with a floral ice ring, filled with large shrimp and a sauce on the side.

I know we'll finish with a daylily sorbet.

Sides will be grilled veggies from our CSA basket.

Tequila lime chicken sounds good!

I'm late to the party but have decided to join. Except I'll be doing my dinner Sunday. I need Saturday to recoup from the week.

Hors d'oevres: Maybe the spinach garlic walnut puree, or Sharon's Boursin which I didn't make for my guests last week and still have the ingredients for.

Sangria

Coral soup
Zuchinni corn cakes with pesto topping
BLT salad with avocado (Veggie me uses fake bacon bits)
Cole slaw (maybe)
Blackeyed pea salad

Dessert: blackberry shortbreads or lemon bars.

Some of these recipes are from and old issue of Martha Stewart's "Living" magazine that I have lying around and I will post tonight when I get home from work.

This gives me something to think about on my commute to work!

I hope to have at least one or two friends over. I will probably make the stuff ahead so can report on that.

Looks like it will just be me for dinner this weekend. DM may come up...she's not sure yet. Some are headed to KC for a kids weekend at World of Fun and the water park....others are taking advantage of the tax free shopping weekend for school clothes and supplies this weekend. Some are working the friendly skies. Anyway, here is what I'm thinking for me and maybe a guest or two...you never know with my group. It's still early for final plans..LOL! (Subject to last minute changes)

BBQ Pecans and Hummus(with veggies and crackers)
Margarita Shrimp
Coral Soup
Grilled Ceasar
Black Diamond marinated steak
Seasoned fries or grilled potatoe wedges
Grilled Asaparagus
Homemade Ice Cream with some kind of grilled fruit

I'll make the soup and shrimp by half if it just me and DM or a friend. The rest will be easy to make for one or two.

ruthanna's coral soup is very "fresh" and i'm sure those of you who are making it will be pleased. and i'd fogotten about pat t's black diamond marinade--it IS good stuff! in any case, i'll look forward to hearing how things work out for all of you!

I haven't settled on anything yet! I do have guests coming.

Definitely the Tequila-Honey glazed chicken from Bon Appetit. and probably Sue's Roadhouse Ribs! Marinated Mushrooms, and a salad for sure, not sure about the sides yet! Definitely homemade ice cream for dessert, too!

LPink, Sangria sounds so good! It's been pretty hot here!

I have to work tomorrow so I won't be doing all the courses. And I haven't quite decided everything, but I'm leaning towards a Tex-mex menu, starting with one of the soups I posted on the soup thread. Either the Southwest Gazpacho or the chilled tomato soup. And possibly the Lime-Tequila Grilled chicken with a Mexican rice on the side. Sangria to drink.

I've planned to attend PowWow and I've volunteered to help at the Vietnam Memorial here this weekend, but I'm really wanting ribs.

Maybe I'll join in with Sue's Roadhouse Ribs and a veggie, just a "mini virtual dinner". :-) We'll see how time goes but everything just looks so....GOOD!

I've finally gotten to posting my recipes. Very late I know, since the dinner is Sat. and this is Fri. night, but I work a lot during the week. So I posted the blackeyed pea salad under the "salads" thread. I'm having my dinner Sunday so will be just doing some shopping at the farm market Saturday, and housecleaning. I'm excited because I'm reconnecting with some old friends who I haven't seen in a year and a half at least.

well, as usual, I am late to the party - my 25th reunion bash which I coordinated, was last night, and we didn't get home til almost 2. I am often awake at 2 AM, but normally it's after already sleeping for 3 hrs...

We had great fun, but still had to run to the store for ingredients for our dinner, today. It's just us.

For starters we are having the grilled flatbread with carmelized onions and blue cheese and mushrooms posted by Sharon.

We got King Crab Legs on sale so dipped in butter they'll be! We got a dozen ears of finally fresh corn and I'll mix up some chili lime butter.

I was going to do the grilled asparagus with proscuitto too, but the asparagus was about as big around as a toothpick. So I looked for soba noodles. nope. what are they like, anyway?? Ahhh, I remembered a great looking recipe for fingerling potatoes! Nope. They NEVER have them. sigh.

so, I guess it's corn and crablegs. I guess our theme is BUTTER. we should probably have toast and popcorn, too.

maybe i'll save the flatbreads to serve with our dinner...or maybe whip up a quick mac salad or something.

I got some watermelon, blueberries, lime sherbet and lemon italian ice.

i'm not too organized. I think I"m going to go take a nap in the pool. :-)

Well the Marinated Mushrooms are done as is the Walnut,Spinach and Garlic Puree (I could not resist!).

We are about ready to emabark on a party boat cruise around the lake. Picking up a few folk as we go, then back here for dinner. It's a gorgeous warm night.
