Potluck luncheon coming up Monday and I wanted to take watermelon salad.

DO NOT want one with tomatoes.

I would like a very simple one. No meat.

Me again .. Just google watermelon recipe and All Recipes came up with several sounds good to me. Some with cheese etc One is from Paula Deen so you also might try Food Network
Some have mint etc.. Lots of choices.

I always cook my chicken/turkey bones a second time after removing the meat and storing it away. I keep the first broth in the fridge in quart-sized freezer containers, but I only fill each half way because I want to mix the second stock into the first before I pack it for the freezer. People are always surprised to see what nice broth you can get from just the bones, skin and gristle. Sometimes I will add water to the bones again after draining them, and stir this around. If the water starts looking like chicken stock, I'll cook the bones again. When I'm finished with the bones, they are soft and will collapse to a sort of a paste when you pinch them between your fingertips. I smush this stuff and bury it in my garden. I have to do it when the dog isn't watching though, and set something on top of it for a few days. I love my crockpot, too! I've never looked into what it costs to run it. I also have one of those big electric roasters that I always cook my Thanksgiving turkey in (and later use it to simmer the bones for broth) and Dawn, if you want something that cooks up a huge amount, you need that! But it would be hard to carry to a fire, now that I think about it. And I do save bits and tads of things. I don't like mixing my meats together so I will usually put them in wide-mouthed tapered pint canning jars and label them as to whether they are poultry, beef or pork. Sometimes I will make up a "tv dinner" if we have maybe one serving left of something, and put it in the freezer for later. I collect the liquids from canned vegetables and bits and pieces of veggies like tomatoes, celery, asparagus and outer cabbage leaves, in a plastic coffee jug in the freezer. When it's full I thaw it out, add add whatever I think it needs more of. Usually this is chicken or beef, some broth, and maybe a jar of canned tomatoes. A chopped onion. Add a can of mixed veggies from the store or a part of a bag of frozen. Actually I prefer the canned as it has potatoes in it. Heat all this up, add enough cornstarch to give it a nice smooth consistency. DH has a sensitive stomach so I don't spice it up. Just salt and pepper. If I'm feeding kids I add a little sugar, unless there's lots of liquid from canned corn in that batch. Yum.

Not me. If I want to save anything I do as Moni does. I use wordpad because it's such a smaller program than word and opens quickly. I use IE and IESpell to check my spelling here before hitting the submit button.

Decisions, decisions! Those recipes all sound so good! I'm going to copy and paste this thread so I'll have them. The risotto recipes are calling my name, I think. I love cauliflower, and capers, and could probably get the specialty capers, but I don't want to brave our specialty grocery store on Christmas Eve. Central Market is claustrophobic even on an ordinary day, I don't even want to think about what it's like today. I will save that recipe to try soon, though. However, LPink, I'm liking your Rice, Lentil and Spinach Pilaf. It would be more like a protein, with the lentils. Hmmm, decisions, decisions! lol! Jesse, if you're still reading this thread, I guess you've figured out by now what I was asking. It would be funny, though,if I was asking a vegetarian for meat cooking advice! lol. Linda, maybe it's a regional thing, but to me and to DH, a pot roast is a roast that's cooked in or rather just over water, (braised, I guess?) with carrots, celery, and potatoes cooked right along with it in the liquid. What makes it different from stew is that the meat is still a big piece of meat, rather than cut up into cubes. I agree that there's not a lot of difference, if any, in taste from stew. When I was a meat eater, I thought pot roast was okay, but nothing special. I liked oven roasted beef much better, but Dh loves pot roast, the kids okayed it for themselves for Christmas dinner, so that's what they're getting. Y'all are always so helpful. Two things come immediately to mind, but they weren't really ugly at all?? Dad was a big fan of early TV cooking shows, when they were on public TV... Julia, Graham K, Frugal Gourmet, etc. One time he decided "we" would make won-ton soup from scratch. The broth came out very nice. Won-ton noodles looked great but were so TOUGH you could barely chew them. What I thought was rolled thin enough... well, it wasn't. Another time he decide "we" would make Beef Wellington... BIG $$$ hunka tenderloin. Hauled out a cookbook for a recipe for the pastry dough to wrap beef in. It looked MAAHVELOUS going into oven and even better coming out... if I do say so myself. Well, you LITERALLY could not cut through the crust. We pretty much had to break up and pry off the crust. Luckily, that expensive hunka meat was cooked to a perfect medium rare and was eaten without any crust on it.

I haven't tried this, but your question got me searching. I think this one from Bobby Flay sounds good. I would probably up the oj and decrease the lime juice--just a personal preference.

Jicama and Watermelon Salad

1/2 cup fresh orange juice, plus 1 teaspoon zest
1/4 cup fresh lime juice, plus 1 teaspoon zest
2 tablespoons honey
1 teaspoon ground black pepper
Kosher salt
1 jicama, cut into matchstick pieces
4 cups watermelon in 2-inch chunks
1/3 cup roughly torn fresh mint leaves

Whisk together juices, honey, pepper and salt in a large bowl. Add the jicama, watermelon and mint and toss to coat.

Watermelon salad

Per serving:
3/4 - 1 cup of cold watermelon, cubed
1/4 cup of feta cheese, crumbled or cubed
1/4 medium red onion, cut in paper-thin slices
1/4 teaspoon of balsamic vinegar or balsamic vinaigrette
Preparation:
Place the watermelon in a bowl, top with most of the onions, then the feta cheese. Place remaining onions on top. Sprinkle with balsamic vinegar, and serve.

Glenda, this probably isn't what you're looking for, but I love chunks of watermelon, shredded fresh mint, and feta. So refreshing and so good!

Hi Glenda,

This is my recipe:

Watermelon Salad

1/3 C Olive oil
1/4 C red wine vinegar
2 tsp. kosher salt
1/2 tsp. ground pepper
tabasco sauce to taste
2 T. chopped mint

1 8lb. watermelon
6 oz. Feta cheese
1 small Vidalia onion

I also add chopped peanuts, sliced radishes, and prosciutto baked in the oven until crisp.

Just one more if you can stand it! I think all of us have had or made this at one time or another. You can put as many or few fruits as you like. Not really a recipe; more of a guide.

FRUIT SALAD (SERVED IN WATERMELON)

1 cantaloupe
1/2 small watermelon
1 Granny Smith apple
1 Fuji apple
1 orange or 1 small can mandarin orange segments, drained
1 pound red or green grapes*, seedless
1 cup fresh blueberries
1 pint fresh strawberries, halved

Peel and scoop pulp from cantaloupe. Cut into bite sized pieces.

Scoop watermelon using a melon baller for the melon, then trimming with a spoon to the rind leaving the shell intact.

Core apples and peel if desired. Chop into bite sized pieces.

If using a fresh orange, peel and cut into segments.

Add all remaining fruit to watermelon shell and serve chilled.

Glenda... your recipe sounds wonderful, would have never thought of combining those ingredents, but do love all of them.. will try this tonight.... thanks once again for sharing!
