What's for dinner Sunday?

Tonight we're having wild sockeye salmon topped with a mixture of softened butter, parsley and basil then wrapped in puff pastry. With it we'll have broccoli and cinnamon apples I made this afternoon.

All is uiet outside, LOL! (I lost the first letter on the top row of the keyboard. Don't know how or why. I press it and nothing happens. Everything else works.)

Boneless Oven Fried Pork Chops, Pepper Gravy, Asparagus, and a salad of Romaine, Vine Ripe Tomatoes and Avacadoes....yummy.........

We were supposed to get off and on rain here all day, but it's been lovely--sunny, only up to about 81. Quiet--we didn't have much going on today.

Didn't feel like making a 'fussy' dinner, and I had a bunch of 'this and that' hanging around (a tiny bit of steak, peppers, carrots, onions, etc) so just made a nice pan of fried rice.

I roasted a small turkey yesterday and we wanted to have baked sweet potatoes. I've never baked sweet potatoes, I usually boil them along with white and mash them together. So I pricked the sweet potatoes, stuck them in the oven and later when I checked there was caramel pooled and stuck to my (thankfully) aluminum oven liner on the bottom of the stove. I cleaned it up then set the potatoes in a baking dish in the oven. When we were ready to eat there was caramel around the potatoes, but there was still lots of meat left in the potatoes and they were delicious. I can only assume that they don't need to be pricked before baking!

Shirley, that coney dog is calling me! Glad the snow and ice are gone so you can get out and about! Jasdip, did your team win? I haven't been keeping up with the Olympics. My bad! I had 5 large baking potatoes that needed to be used so I made them into twice-baked potatoes. Baked the potatoes, scooped out the pulp, mashed it with butter, milk and sour cream. Added shredded cheddar, sliced green onions chopped parsley and some chopped bacon. Topped with more cheese and bacon. Put them on a cookie sheet and they are in the freezer before being stored in bags and run through the Food Saver. They sure look pretty! Sue, glad you are able to get out again. Lunch sounds great. Little Alyssa will soon be a 3-year old. It's a great age. I've never had Captain D's but it looks a lot like Long John Silvers. Glenda, I really like Thai coconut soup, but the rest of your meal sounds even better.

Oh, we just watched the rest of Season 1 of Last Tango in Halifax, so I haven't come back to comment on anyone's dinners. I've got tears in my eyes. We love that show. But wow is Jillian one screwed-up woman. Raven, I buy the large old-fashioned ham with a bone that's wrapped in netting. Boil it for about 4 hours and put potatoes and green beans in with it. Lots of ham leftover for future meals. Hubby is looking forward to ham and french toast or pancakes. Neither of us like ham soup, split pea and ham and other similar soups. I'm hoping to make a quiche as well, and hubby said he would try it.

Sunday was a beautiful, cold, wintry, sunny day. We bought a 2-pack of frozen Delissio pizza when we were doing groceries. It was on sale, plus I had a $2 coupon. Boy have they changed! They are a LOT smaller.......square instead of round. The package said Party Pack but they wouldn't come close to feeding a group of people. With frozen food I always add more veggies, sauce and cheese. Thank heavens for the coupon, we won't be buying that again. We had a salad with it as well. I made an apple crostata for desset.

With my bushel of romas, now is the chance to make Tomato Pie and I did!!! I used Ruthie's recipe and it was to die for. Oh my. This is a Southern specialty, and boy could I adapt to the south. I'm going to start saying Y'all, and Bless your heart, and fixin' to do something or go somewhere. LOL

I cut up the tail end of the romas and have them all ready to go, so I can make another one asap.

Hey, Texaseyes, welcome to the KT. Hope you'll stick around and chime in to all the posts. We're glad you're here!! And your dinner sounds delicious. I'm not sure what pepper gravy is, but any gravy I make has plenty of black pepper in it :-)

Azzalea, I have leftover rice and plan to make fried rice one night this week. I'll have to see what I can conjure up in leftovers. Know I have some peas and chicken--unless Harry's had them for lunch.

Jasdip, ain't it to die for? I just love me some tomato pie. Most recipes are basically the same--they're all good! Bet you're glad to see the bottom of that bushel of Romas :-)

I have been sitting here eating some deep fried peanuts so not very hungry but I think it will be a shrimp poboy for me

had saved back some grd beef and made a small meatloaf...had to cut everything in half...but we'd hadn't had any for such a long time...of course had the exaust fan and another fan to keep the heat in the kitchen...i know 90 isn't the best temp to cook a "sunday dinner" but it sure was good! we actually have enough for a sandwich for lunch tomorrow...

Patti, I sauteed the onions first and that made it real nice.
Raven, are you still in Louisiana??
Susan, that's the way I was this weekend too. We have another heat-wave, and yep, I just "had" to make meatloaf and a tomato pie. Not to mention my roasted pasta sauces. Geesh.

Went to my favorite restaurant for dinner. Had baked oysters, tomato bisque, lobster tails, and an apple tart with vanilla ice cream,,,,oh, and two glasses of champagne. It was wonderful.

Mr. Wonderful is having shrimp and chicken fried rice and I am having a vegetable saute from stuff gathered from the garden....chard, green beans, onions, peppers, tomatoes and basil. I added lemon juice from our tree. (Had to use store bought garlic.)

I had steak, corn on the cob and mixed veggies. My doctor advised me to eat more beef as a source for amino acid. I don't noramlly eat steak, so this was like a half size. I need to find other food rich in amino acid.
