Tonite it's grilled steak, shrimp salad (with last nights leftover shrimp), and fresh tomatoes from the garden.

It's been beautiful here in Ohio too. I love it. I've never tried eggplant, so have some for me. Your entire meal would be great. I made meatballs out of lean ground turkey, cooked them, then poured a jar of alfredo sauce over them and simmered them for about half an hour. I had them with brown rice, and a side of creamed corn. Shrimp kabobs on the grill, served on top of a big salad made of all kinds of good things. We're harvesting baby greens and mixed greens from the garden again, so that was a treat. I made a spicy thousand island type dressing that tasted good with the shrimp.

kathsgrdn, your naked burrito sounds like a tasty and quick dinner. I will have to try next week after DH gets home. We're trying to stay low carb and love Mexican, so that's perfect! DH is down with a cold and said that it is soup weather. So, take your pick. I cooked my heart out on Saturday and Sunday. I made Oxtail soup, red lentil and lemon soup, beef vegetable soup, green lentil and cauliflower soup, Sausage minestrone with orzo, and Zuppa Toscana. He works from home and this will take care of lunches for a good long while. He chose Zuppa Toscana for supper yesterday.

Chicken noodle casserole made from the leftover roast chicken I made last night. (Using baking powder on the skin, of all things...see double acting baking powder thread over on cooking forum, if interested!)

Oven roasted Cornish game hen with fresh rosemary. Baked sweet potatos, fresh green beans and summer squash. I haven't decided what to make for dessert.

Swiss steak, mashed potatoes, some sort of veggie and I'm not sure about desert.....My son and his family are visiting from out of state and are going bike riding this afternoon and I told them I'd have dinner ready when they get back.....
So nice to be able to cook for more than just DH and myself...

We just had lunch! Tamales from the tamale factory in Lubbock when we went to see the babies yesterday.They are soooo good.Sprinkled a little cheese on top and nuked them.Probably some of the same for dinner.DH is easy to please,especially when there's fresh tamales in the house.LOL They would be good with some homemade chili on top but I'm not making chili today!

I'm trying to do a High Protein Low Carb Diet. After all the Chicken yesterday and the Day before. I think we are going to have Steaks with Spinach Veggie Salad. High Protein 2% Milk. Main Main is having a loaded baked potato.

Out per usual, and it wasn't that great!
Chicken and dressing casserole! Chicken was dry, and dressing not that great tasting.
Turnip greens, so so!
Black-eye peas out of the can, yuck!

Picked up a bucket of fried chicken, bbq chicken wings, and plain chicken wings from Wal-Mart's deli. Came home and fried some fried green tomatoes for me and Lauren, peas for Alex.

DS and I went to IHop for dinner/lunch today. I ordered the Ham and three egg omelette.
I've never seen anything so big in my life. I asked the gal if it wasn't a 32 egg omelette. He ate half to make me feel better. And it came with 3 pancakes!!!

Here is ours....bread is baby dill/garlic/wheat, tomatoes out of our garden, rhubarb pie from the Farmers Market.

(My brother sent a pic last night of their supper...so I had to send one of ours tonight! LOL)
