What's for Dinner ... Sunday

I doesn't look like anyone has started this thread yet.

Tonight I made risotto with shrimp, asparagus and mushrooms with crescent rolls and a salad with vinaigrette dressing. It was so good that its a half hour later, and I'm still smiling.

Great dinner Bob. I love meals where you feel so good after eating it.

We had well-done roast beef with carrots around the roast. Cut 2 whole onions in wedges (not through the bottom) and drizzled with olive oil and worcestershire and soy sauce. Wrapped in foil and baked. Mashed potatoes.

Made 2 loaves of honey-whole wheat bread today as well.

Hi Rhizo, We took a couple of friends to Costco today. She always wonders what the attraction is, and said that things can be expensive. I agree, you have to know your prices, and shop sales in the fliers. But there are things we only buy at Costco. San Marzan tomatoes are not sold in our stores anywhere, but Costco now sells them. She went for specialty crackers and ended up spending $80. We teased her mercilessly on the way home! LOL We stuck to our list, but did splurge on a couple of bath towels. We always look at them, and the price is only $8; equal to garbage at Walmart, so we bought 2 today. If they last like they should, we'll buy a couple more another time. We don't buy milk there, as all of our grocery stores sell milk for $3.97 for a 4-litre bag (1 gallon). But this week dairy went up by 50cents, so we bought milk and half-and-half there, as they were selling it at the "old" price, with no intention of raising it. Costco includes the hotdog and drink combo and hubby and I split a fries. That was a big lunch, so we just nibbled for dinner. I had porridge and hubby had bran flakes and a homemade oatmeal cookie. Yumm....good stuff tonight! I'd have been well pleased to be at your table. I must admit that my mouth is watering at the thought of Jasdip's roast beef sandwiches tomorrow....smothered with gravy, I presume. Raven, I had tamales for lunch yesterday, at the Mexican place not far from here. We love that little place, authentic and close enough to call in an order for take-out if we feel like eating in. Angelaid, do you put mushrooms in your beef barley soup? That's something that is so wonderful when you need something hearty and comforting. Love it. We did some yard work, too. It was such a pretty day and we needed to do some serious pruning on three trees. It was funny to see how interested the birds were in our activities.

Nicole, I don't think garlic in a jar comes even close to fresh. Not by a long shot! It makes a difference in anything you're fixing that calls for garlic. It sure doesn't smell the same when cooking, does it? Isn't it nice that something so simple makes your husband so happy? Jasdip, I will make those potatoes soon. I love oven roasted potatoes and I love roasted garlic......how could the combination miss? Susan, I sure nuke left over burgers. They will lose a lot of moisture and fat, so I always put a paper towel under them before the reheat. Monica, thanks for letting us know where you got your pieroges. It still bothers me that I can't remember where I've had them. Maybe Michigan...I lived there for a few years.

Angelaid -- that's one of my favorite meals! (Unless, of course, it comes in a frozen tray! I can't tell you how many times I ended up with a Swanson's turkey TV dinner when I was growing up and my parents had an evening meeting of their social groups!) Tonite, I stir-fried some cut-up chicken breasts, seasoned with lemon pepper and ginger (with a little cornstarch to give them a bit of a coating). I put the chicken over bagged salad spinach and diced orange bell peppers and had some poppy seed dressing on top. I'd been to Sears and Macy's earlier to check out their mattresses and I'm surprised I actually came up with a dinner idea I liked -- actually, I've made it plenty of times, but not recently.

We had stuffed shells (stuffed with ground beef mixture) and a tossed salad. I want some of that risotto!

We had rib roast and gravy, with roasted potatoes, carrots, parsnips and asparagus. I go back to work for the season this week, so I have some roast left for sandwiches for Monday and Tuesday.

Robert went fishing yesterday and brought back several nice stripers. After he filleted them, I blackened them with cajun seasoning, made a Napa cabbage slaw, and served them with our favorite mango salsa. We love fish tacos!

I baked a 10 lb ham on Saturday. Yesterday was Navy Bean soup with the ham bone.
