I bought some pork tenderloin this week and it into medallions. Made a dijon-cream sauce to go with it. Couscous and carrots and corn on the side.

Canned peaches and ice cream for dessert.

Jas, I only cooked a portion of the pork loin and then did as you. Sliced them in medallions for stir fry and breaded tenderloin sandwiches :-0

Nita's pork roast was a big hit with both of us. And the cherry sauce was both delicious and pretty on the plate.

Patti, I make my favorite meatloaf recipe....place 2/3 of mixture in the meatloaf pan, then put in some spinach I've steamed, top that with grated cheese, and put the rest of mixture on top of that, sealing the edges. I started doing that to try to get more vegetables in my diet.
