Mini Brownie Ice Cream Sandwiches with Fresh Mint Ice Cream

Vanilla ice cream blended with fresh mint and sandwiched between two chocolate mini brownie bites...who can resist?

Estimated Times:

Preparation - 15 min : Cooling Time - 1 hrs freezing : Yields - 20 (That's a laugh, we ate at least 8 or 10 while they were warm!)

Ingredients:

1 package (16 ounces) NESTLî TOLL HOUSE® Refrigerated Mini Brownie Bites Bar Dough, prepared according to package directions

1 1/4 cups Vanilla Ice Cream, softened

2 tablespoons chopped fresh mint

2 drops mint extract- (our addition)

Directions:

STIR together ice cream and mint in large bowl; freeze for 1 hour or until almost firm.

TO ASSEMBLE: Sandwich 1 tablespoon prepared ice cream between 2 brownie bites; serve immediately. (We used a baggie and squeezed it in there.)

NOTE: If ice cream is frozen for longer than 1 hour, let soften slightly before assembling sandwiches. Prepared sandwiches can be wrapped tightly and stored frozen for up to one week.

These would be great for a little casual party. Or just a frozen treat anytime. We were amazed at how good they were. After they were frozen really hard, they were even better. The husbands both voted two thumbs up!
