Chicken Marinade?

What are some of your favourite marinades for chicken breasts? I want to BBQ/grill some chicken breasts for supper and I am getting tired of the same old thing. I tried a marinade with orange juice & apricot preserves but it was too orange-y for my tastes.

Oh my Fav! (1)(Zesty Italian Dressing,(2) Marasala Wine & Sherry,(3) Terriyaki Sauce. Love it all. Oh yeah and Margarita Mix.

Two that I like:
a little teriyaki sauce, a little orange marmalade and olive oil.
Or
Western (salad) dressing.

I use the following: 1 Tbsp chili powder 2 Tbsp ground cumin 2 Tbsp seasoned salt 2 Tbsp minced garlic 1 Tsp dried oregano 1 Tbsp oil Juice of one lime Hot pepper flakes to taste I'm just guessing at the proportions - I usually just measure out stuff in the palm of my hand depending on how much chicken I have. I've also used this for beef as well, but I mostly make chicken fajitas. And I like cumin, so I always add twice the amount called for. Sometimes I use garlic powder if I have no fresh garlic on hand but the fresh is much better. The recipe also called for a little paprika, but until I found really good, fresh Hungarian paprika, I didn't bother because it usually has no taste. I also use ground chipotle in place of the flake red pepper on occasion if I'm in the mood for a smokier flavor. I've let it marinate overnight and I've done it a couple hours ahead. Lisa

I have a Cooking Light recipe that I use with pork or chicken, and I like them both that way. Cider Roasted Chicken 3 quarts water 1 quart apple cider 1/4 cup kosher salt 1 tablespoon black peppercorns 1 bay leaf 1 (6-pound) roasting chicken 2 cups apple cider 1 large onion, peeled and halved 4 flat-leaf parsley sprigs 4 garlic cloves, peeled Combine the first 5 ingredients in a saucepan; bring to a boil, stirring until salt dissolves. Remove from heat; cool completely. Remove and discard giblets and neck from chicken. Rinse chicken with cold water; pat dry. Trim excess fat. Pour brine into a 2-gallon zip-top plastic bag. Add chicken; seal. Refrigerate 8 hours or overnight, turning the bag occasionally. Preheat oven to 400°. Bring 2 cups cider to a boil in a small saucepan over medium-high heat. Cook until cider has thickened and reduced to 1/4 cup (about 15 minutes). Set aside. Remove chicken from bag; discard brine. Pat chicken dry with paper towels. Place the onion halves, parsley, and garlic into cavity. Lift wing tips up and over back; tuck under chicken. Tie legs. Place chicken on rack of a broiler pan. Bake at 400° for 1 hour and 30 minutes or until thermometer registers 175°. Remove from oven (do not turn oven off). Carefully remove and discard skin. Baste chicken with half of reduced cider; return to 400° oven for 10 minutes. Remove from oven; baste with remaining cider reduction. Transfer chicken to a platter. Place a zip-top plastic bag inside a 2-cup glass measure. Pour drippings into bag; let stand 10 minutes (fat will rise to the top). Seal bag; carefully snip off 1 bottom corner of bag. Drain drippings into a small bowl, stopping before fat layer reaches opening; discard fat. Serve jus over chicken. I use apple juice interchangeably with cider, depending on which I have, and I'll do pork or chicken using this marinade, although it does take some organization to marinate the chicken over night or during the day. Thanks about the indirect heat comments! We're pretty good cooks here, but its the hubs who does the grilling (why does it so often seem to be a testosterone thing????) but anyway he does okay usually - but I don't think he's ever done indirect heat - but I think he's up to it. We've both learned a lot over the years :) We'll be cooking this for a group of 15 but I'm counting on him doing that grilling so I can do everything else - I'm sure you all understand that scheme of things.

Lemon juice, olive oil, LOTS of chopped garlic,a dash of Worchester sauce, soy sauce.

* 1/2 cup soy sauce
* 1/2 cup cider vinegar
* 4 tablespoons honey
* 4 tablespoons vegetable oil
* 2 green onions, minced

Put in a zip lock baggie and add chicken

I second (or third) the Italian Dressing and Teriyaki sauce

I also like that LawryÂs Lemon Pepper marinade once in a while

1 C. vinegar
1 C. oil
1 C. water
1/4 C. salt
2 T. garlic salt
2 T. brown sugar

I also added sliced onions and paprika. Marinate chicken overnight in refrigerator and grill.

My very favorite is very easy and I always have everything on hand. I don't measure, but I'll give you aproximate amounts for 2 chicken breasts.

2 Tbsp olive oil
1 Tbsp soy sauce (I like low sodium)
1/2 tsp garlic powder ( you can also use minced garlic)
1 tsp Rosemary - finely snipped fresh or crushed dry rosemary

Put it all in a zip lock bag and add the chicken. Merinade for about 15 min and grill, turning offten.

Chicken KaBobs

8 boneless, skinless chicken breast
halves
OR 2 pkgs chicken tenders cut
into 1" pieces
2 C low-sodium soy sauce
2 t ground ginger
2 C pineapple juice
1 t dry mustard
1 T brown sugar
1 t garlic powder

Choice of 1" pieces of cherry tomatoes, whole mushrooms, pineapple chunks, zucchini/squash, green pepper

In glass bowl, combine soy sauce, ginger, pineapple juice, mustard, brown sugar and garlic powder. Heat in MW 3 minutes. Pour over chicken. Marinate in refrigerator 6-8 hours. Skewer chicken with vegetables. Grill 20 minutes, basting with marinade.

Raspberry Vinaigrette Salad dressing is delicious

If you want something super quick and easy, just wander down the salad dressing aisle and use something you like.

My favorite is a whole bottle of Red Wine Italian. Marinate overnight in a plastic bag, then bake in the oven, 50 minutes at 350 works for me.

We like soy sauce, steak sauce and Worcestershire sauce mixed together. Add salt, pepper, garlic powder, onion powder, ginger.

For 6 chicken breasts

3TBSP oil
2tsp garlic
1tsp dried oregano
1tsp cumin
1tsp salt
1tsp pepper
1/2 tsp cayenne pepper

Marinate for at least 4 hours or overnight. I have doubled and tripled the recipe easily. YUMMY!

I only presalt or brine in salt water...then grill..brushing on bbq sauce or teriyaki sauce sometimes...Most folks in this house prefer to have "plain" chicken..

Newmans Own makes a dressing that is a wonderful marinade over turkey tenderloins or chicken...(gotta go look)
oh it's the creamy ceasar.

Marinate the poultry over night and grill...yummy...

This is probably too late, but you can use it next time!!!

WW Margarita Chicken

4 or more chicken breast (I usally make about 6 or 7)
1/2 can frozen lime margarita mix (non-alcoholic)
3 tablespoons lime juice
2 tablespoons chopped garlic (add as much or little as you like)
salt and pepper to taste.

Marinade in ziploc bag for a couple of hours or overnight

I salt them while I am putting them on the grill then grill until done

Our absolute FAVORTE marinade is Oskar's Spicy Garlic Marinade & BBQ Sauce from the Boa Vista Orchards at Apple Hill. You can find it in many grocery stores, but if your store doesn't carry it, you can order it from Boa Vista. It is soooooooo good!!

Ingredients: Water, C&H Pure Cane SugarÂ®, Soy Sauce without preservatives, Minced Garlic, Distilled Vineger, minced onion, red chili flakes, ground ginger, natural smoke flavor

I don't have amounts since I just toss in what looks good, but my two favorites are...
Melted butter and a bit of real lemon juice.
AND
Soy sauce and Worcestershire sauce shaken over chicken and a medium amount of both garlic and onion powders.
