What's For Supper?

Well, I had planned on having the Hoosier enchiladas for supper that I fixed for lunch at Amber's. Hubby didn't want that so he picked himself up something from Hardee's. I was not all that hungry, so I just mixed me up a Slim Fast. What tasty supper did the rest of you have?

I had leftover calimari from Johnny Carinos for dinner. Now I'm having a snack of pecans and iced tea. I'm sweating and thirsty after spreading about half of the mulch on the garden. I really underestimated how much I would need.

This was sisters night at the home where my special needs sister lives. Once a month, we sisters do 'drive-thru' and treat Annie to fast food. I got myself a McD's fish sandwich which wasn't as fresh as I like. I did like the bowl of cut up fresh fruit I took though.

DH found a new recipe he wanted to try and it was yummy! Sort of an Asian stir fry with chicken, lots of veggies and a sauce of peanut butter, curry paste, chicken broth and other wonderful flavors. We had it over rice, and a couple of cookies for dessert.

Each day of the week has a theme that I follow, and Monday is "Big Meal". That means a large cut of meat so there are leftovers for lunches/sandwiches/stir-fry, and possibly enough for the freezer, and possibly the base for soup. Last night was ham, fresh pole beans from the garden in "Spicy Asian Green Beans". Also from the garden - Potatoes O'Brian (with onions & peppers), a gluten-free banana muffin (from the freezer), and for dessert - I made a 3-minute Microwave Apple Crisp with a Jonathan apple, some raisins, palm sugar, apple pie spice, and a dab of butter. Served with a little whipping cream and homemade granola on the top - which is a Q&E substitute for Apple Pie and Ice Cream at our house (I hate to make pies so I fake them when possible ;-).

Wow, what scrumptious sounding meals! Shirley, so nice to hear from you; I hope that you're doing well. I'm a fan of cabbage myself, no matter how it's prepared, including raw. That stuffed cabbage sounds good, I may have to dig out my recipe and make a batch before hot weather gets here. Your chicken sounds good, jazzy. Aren't you glad that you had some leftovers? Texas Gem, I haven't had a taco salad in years, but I used to eat them all the time. And loved them. What a great combination of flavors and textures! Oh Raven, I hope that you had a relaxing evening! You must be absolutely exhausted between all of the stressful traveling and family events. And the illnesses, oh my. Mor, I had to look up flageolet beans and I'm intrigued. Tell me what you like about them. Supper sounds so good. grainlady, as always, I'm in awe. I've often wondered what your kitchen must be like. I'm having blood drawn today and can't eat anything.....why the heck am I reading about this wonderful food? My tummy is growling like crazy, lol.

I know it is Tuesday but I am so excited about the Chicken Tortilla soup in the Crock Pot right now. Will deep fry some flour tortillas and have avocado and sour cream on top. Added black beans, corn and black olives. Have lime flavored rice, hominy and quinoa so everyone can choose what they want to eat it over or if they just want it as is. It smells so good and I am not even hungry. DH and I went out for Brunch before we voted. Last night we had grilled ham and cheese because I was feeling lazy.

I was a bad girl, and battered myself some thinly sliced extra firm herb tofu. Fried that up, and ate it with a baked potato and creamed corn. I should have had french fries and coleslaw, because the batter reminded me of a good fish batter or shrimp tempura batter. YUM!

I was supposed to have some marinated veggie salad with it, but it had gone off. Icky poo.

We had to go to Lowes today,40 miles away. Stopped at Burger King (DH and DS's choice.LOL).I had chicken fingers,Yuuuk! Came home and had a sugar free Klondike bar.We ate around 3 so we probably will just have a snack later.Maybe another Klondike bar or some fresh strawberries I bought yesterday with some heavy cream.

Ham salad sandwiches--thanks to your post yesterday, Sue. I made pineapple cole slaw and we had red raspberries with cream--naughty but nice.

I had a vegetable salad and hot bread. Wish I had went to rthummer's for dinner though.

Beef roast in the crockpot with potatoes and seasonings, corn on
the cob and boiled yellow squash. No dessert.
