What's for dinner Thursday?

It was a busy day. I'm trying to get the house all cleaned before we leave for Indiana on July 2. Yesterday I did three loads of laundry, got it folded/hung and put away and cleaned a little. Today I cleaned the kitchen and family room, took care of some things that needed to be done. I made a meat loaf this afternoon. Froze half of the raw mixture for another night. With the meatloaf we'll have the end of the potatoes gratin and steamed broccoli. I'm really hungry!

    Well today is my birthday and our anniversary, and I am sitting here at the beach in Galveston, enjoying the view and relaxing. We have a bbq pit and picnic tables at the RV slot so I think tonight we might just grill some burgers out there. We were planning on going to Landrys seafood tonight but I think we should save that for tomorrow night after we have rested.
    Thankfully we have great Internet access here.
    So if I am not around I will be at the beach!

    Patti, cleaning house before you go away. That is always a must do for me, too. Men just don't understand that. But it is so nice to come home to a clean and tidy house.

    Bought a ham loaf at a local market. Baked it per directions and I stirred up a Chipotle Ranch style Betty Crocker boxed pasta salad. Added a little Monteray Jack cheese, some corn and some canned Rotel tomatoes to it to jazz it up a bit. Need to add something to the meal to fill dh up, but don't want too many more carbs...a few corn chips would be ok I think. Maybe we will put the salad on a bed of greens throw the chips on top and have the ham loaf on the side. Yeah, when he gets home from doing tractor, back hoe work at a friends, that is what we will eat

    wow, chicken livers... haven't had them in a LONG time. Sauteed chicken livers used to be a comfort food for me! Most people I know now would rather starve than be forced to eat a chicken liver. I can't imagine a restaurant selling them. lol! Great. Now I'm craving either chicken liver, beef liver, or liverwurst. ;p Good thing I have a chocolate cake in the oven! :)

    Shirley, our weather is very similar, and today was nice, wasn't it? Your meal is nice and comforting. I couldn't imagine not having leftovers, or living with someone who doesn't like them. I know people like that, and it's a fresh meal every nite. Jim, how nice having tomatoes and green beans from the garden. Our tomatoes aren't even ripening yet. The landlords gave us a bunch of pole beans, which are long and flat and they went into the soup the other day. They were really good. Raven, was your dinner as good as it sounds?? Do tell. Pam, pizza is good anytime but I'm sure even more so, with your grandson Georgy ravioli with your marinara sauce would be awesome! Rhizo, hubby loves ordering BLT's for breakfast when we go out. Angela, I'll take my cool summer over your heat any day! But a chicken salad is perfect. OF, you must finally be happy! You got some summer temperatures. And you still put the oven on! :)

    Old Fixer, I find that the weeds are terrible to pull when the soil is bone dry. I usually leave the root in the soil. :( Fun, I smiled when I read what your dinner was. Did you pop it on the stove, or microwave? We had chili from the freezer. I like mine over rice with a dollop of yogurt to tame the heat.

    Jasdip, we put a big pork butt on the grill over the weekend and enjoyed it with a pile of slaw. It's a full day commitment but seemed like a good Labor Day weekend project. Last night, I made a garlicky, gingery chicken stir fry with lots of fresh vegetables, served with brown rice and toasted almonds. I don't know why I don't make something like that more often, it's a favorite.

    Happy birthday AND anniversary, raven!

    Made it to pool this morning, but very gently worked my ole body. Back not hurting, so far!

    Golden Corral, today! Mainly ate their country style fish, and little bit of cobbler.

    Shhhhh, I took my plastic sandwich bag and snitched some lettuce to make a chicken sandwich for tomorrow. Going to friend's home, for monthly Mexican Train and we take our own lunches.

    Thanks for mentioning your birthday Raven, I just started a birthday thread for you!

    Hubby and I brought half of our steaks home from the Father's Day barbecue at my step-father's on Sunday.

    I sliced them and made steak fajitas. I had some old peppers that needed to be used up. They were terrific! Hubby said that it's the first time he's had steak fajitias, we always do chicken. Neither of us are large steak eaters, so this will do us for the rest of the summer now. :)

    Oh! My bran muffin recipe calls for buttermilk, and I seldom have it on hand. But lately we've been buying plain yogurt and sweetening it ourselves, much better than the sugar laden Vanilla flavoured yogurts.

    Anyway, I mixed the yogurt and some milk and let it sit and then carried on with the recipe and the muffins came out perfectly. So no need to buy buttermilk as long as we're buying the plain yogurt. Wooohooo!

    Happy anniversary and Birthday from me, too, Raven.

    Today was golf. I wasn't going to stay for lunch today because I'm feeling so guilty about lunch on Tuesday, lunch on Wednesday and I have theater tickets on Saturday after which we go out for dinner so I was going to make a nice dinner tonight. Then DH reminded me that he had a luncheon meeting today so I stayed for lunch after golf. Just had a hot dog then had to go to Trader Joe's and order flowers for our golf luncheon on Tuesday and then went and visited a friend in the hospital. I left here at 7:15 this morning and didn't get home until 5:15. I might as well go back to work. LOL I'll probably have an Activia and some fruit for dinner. DH says he doesn't want anything but will probably have a salad later.

    Sounds like you got a lot done today, Patti. I don't think I'll be able to get anything done around here until next Wednesday.

    I had late afternoon unexpected company. My meal was almost ready when they showed up. A little dried out from sitting, but it was okay. People are more important than eating at the 'right' moment.

    I sauteed chicken livers with mushrooms, baked a potato, and had french style green beans.

    I picked up a nice sourdough loaf and a bunch of cold cuts/cheese yesterday, so today, we had a huge sub sandwich.

    Raven, I wished you a happy birthday above, but Happy Anniversary, too. I can't think of a better place than the beach to celebrate just about anything. Sounds heavenly!

    Gazania, you're right. Harry has never understood it, either. Besides coming home to a neat, clean house it's sort of like that thing mothers used to say about wearing clean underwear. I mean, what if we were hospitalized in a different state and my daughter and sister had to come in and see a dirty house?? Crazy, isn't it? After the workout your DH has had today, he'll be hungry as a bear. You could probably feed him raw meat and he'd devour it. :0

    Glenda, glad your back isn't hurting today. For as little as you ate at GC, you should have taken the chicken, too. And maybe dessert!!

    Jasdip, Harry has plain Greek yogurt just about every day for lunch with fruit in it. Do you remember how much you used of each to make up for the buttermilk? The other night at Chili's the people across from us ordered fajitas and they sure looked good. They had a combo of beef and chicken.

    Patty, when we lived almost next door to each other, my sister-in-law and I had a pact. If anything happened to me that I was unable to get home or died, she would rush over to my house and clean the top of the fridge, and I would do the same for her.

    Georgysmom, I would just love to see your calendar!! I say we should enjoy every minute we can while we're able.

    Shirley, you are so right. Company is much more important--especially if it's someone you like a lot. Your dinner sounds really yummy and worth waiting for.

    Jean, nothing like a really fresh sub on really fresh bread. That sounds so good--even if I did just finish eating.

    Mary, glad you're able to work. Just about everybody likes hot dogs and baked beans. Good old American food. We are leaving for Indiana on July 2 and leaving Indiana for Florida on July 6th. It will take us 3 days each way because Harry has to get out of the car and walk a little every once in a while to keep his blood from clotting. So we should be home on July 9.

    Gazania, whew--glad to hear at least two other people are obsessive/compulsive. :-) You're worse than I am, though. I'm so short I never think of the top of the frig! LOL!!

    Are you serious? You can't buy lettuce? Wow!

    alice, you don't know, so, I don't keep my house stocked with cooking fixings.

    Of course, I can buy lettuce, but for the amt I needed, the rest of the lettuce would go bad.

    I don't cook for myself, and when I have company coming I buy what I need for that particular meal.

    Had an uncooked chicken breast in the freezer, so thawed it out and cooked it. It as from a meal that I had planned and didn't need that much chicken, so luckily I had the one breast in the freezer.

    I eat out daily for my main meal, thus needed lettuce for one sandwich.

    Most people know that's my lifestyle.

    Patti, 2/3 cup yogurt and 1/3 cup milk.
    My recipe calls for 2 cups buttermilk, so I did 2/3 cup yogurt twice, and 2/3 cup milk. The muffins were perfect!!

    I used regular plain yogurt, not Greek, but I'm sure Greek would work fine.

    had a bowl of cereal as I had the last skinny tv dinner for lunch...dh finally got home in time to go to bed..so am drinking his diet coke he got on the road...for dessert, lol...

    Yesterday was Teriyaki chicken, chicken Rice A Roni and a big pan of roasted veggies - crookneck squash, zucchini, crimini mushrooms and onions. Hubby raved about those veggies all night! How the heck did I live to 50+ and not know about roasted vegetables?

    I can't believe someone would criticize you for taking a little lettuce, Glenda. Good grief, people....get a life. I've been known to take a piece of chicken home for my cat. So who cares?

    Well, we had an unusual supper last night. I have wanted to have some fried artichoke hearts and found some frozen ones at the supermarket, so thawed them out but didn't get a chance to fry them for my lunch, so fried them last night, and we had sliced tomatoes and cantaloupe.
