What are you having this evening? It has been a busy day so hubby will have a chicken pot pie, a salad and or strawberries and watermelon. What are all of you having this evening to eat?

Am on my own tonight. Made some cole slaw with the first head of cabbage fresh from my garden. Earlier, I made pumpernickel bread. Debating whether to have a hot dog or just heat up some cheese sauce and dip the bread.

I topped a Wasa cracker with refried beans and horseradish cheese, warmed in the microwave; Plus a bowl of homemade vegetable soup. I had a big lunch so didn't want anything heavy for my dinner.

It was so cold for us in northern Alabama yesterday morning, single digits. I pulled a meaty leftover roasted chicken carcass out of the freezer, removed the meat and started simmering the bones and skin for broth. All I wanted for supper was a big pot of chicken stew. I was thinking, as I chopped a cup each of whole carrots, celery, and onions to add to the seasoned stock after I removed the bones, that this was such a perfect, wholesome, simple dish. I added a few simple seasonings and served the stew in warmed bowls, Robert's with a serving of egg noodles. So delicious!

We went to Popeye's, for the first time, last night. Finally. We've been seeing the commercials for at least 15 years and one finally opened in a nearby town. Everything was too spicy for me. I ate a couple of bites of chicken and the biscuit. Gave everything else to hubby. He liked it, but the portions are so small. After he ate both of our dinners, he came home and had a big bowl of cereal with fruit.

I made a big pot of split pea soup, with some chopped ham, carrots and onions. I made pumpernickel croutons to add to your bowl, if desired. Pea soup is a big favorite in our families. The sprites from next door and their grandpa shared our supper, and the older sprite was my assistant in the kitchen. She is ten and has been passionate about cooking for three years. Seriously! She made an apple crisp for dessert; she selected it from my grandmother's recipe box. I'm going to give her that box when she's 16.

It was DiGiorno Pizza (thin crust supreme) a salad and non alcoholic beer. We make two meals out of the pizza, so lunch is ready for today. But I want to tell you about our breakfast this morning. Decided on the spur of the moment to go out to a local Mom and Pop restaurant that is known for really big servings. We both ordered a "Keto Scramble" new on their menu. It was to die for! Three scrambled eggs, mixed with ham, sausage, bacon, many colored peppers, mushrooms, onions, broccoli and topped with shredded cheese of your choice. No carbs. but plenty of fat. It was so good! And we each had enough left over to bring home for supper. DH is insulin dependent diabetic, so not a meal he should eat every day, but maybe we will go back once a week.

Some sliced turkey with gravy over bread, a favorite comfort food from mym childhood. I roasted a turkey breast a week ago.

Since we don't have Thursday "Survivor" night for PIZZA -- We can have pizza anytime. Tonight we will be eating(about half of) a very big pizza with Itallian sausage, peppers and onions. It's homemade!

I have to weigh in at Weight Watchers tomorrow morning, so it will just be water/tea for me lol, but I sure wish Hayjud would send me the other half of that Pizza.

I forgot to take the pork chops out of the freezer! DUH! I had grilled ham, munster cheese sandwich with pickles and a few chips. DH had a meatball sandwich. I think it's time for ice cream.

I had half a hoagie made with that Schwan's Philly Beef Steak, some grilled onions and melted cheese. It was pretty good!
