I made a meat sauce for pasta...onion, garlic, celery, carrot, mushrooms, green pepper, sauted in olive oil, lean organic ground beef, penzey's pasta sprinkles, pepperoncini, S&P, red wine, tomato sauce...came out delish!

Mexican Train,today. Grilled salami, cheese on rye. Tonight, oatmeal.

Just came home from "breakfast for dinner"...french toast, bacon and vanilla

Take out Kung Pao chicken rice bowl from the deli. Had appointments and errands to run all day and I knew I couldn't be bothered to cook :-)

I was in the mood for 'comfort food' tonight, so have gathered the ingredients for tuna and noodle casserole! Always a favorite for my tummy.

I saute chopped celery, onions, and mushrooms, and add to a bechamel sauce. Stir in tuna and pour over flat noodles. I'll stream some fresh broccoli and maybe some peas as sides.

Sue, would love to have had some of your homemade noodles.

Chili & lime chicken burger (from Trader Joe's) in a bun with lettuce and onion. Sides are an ear of corn with a little butter spray and Tajin seasoning, bread and butter pickles.

Sue, so glad to see your post. I think of you often and miss hearing about your wonderful family dinners. Your grand must be getting big! I ordered an eggplant sub and it was very good. I only ate half so will finish it tomorrow. I had some strawberries with whipped creme for dessert.

It started snowing lightly on my morning walk with the girls.

We'll have hamburgers in a couple of hours.

Going out tonight. We've been painting the inside of our house and are no longer staying there because we have moved all of the furniture out in anticipation of a new carpet delivery in a few days. We are tired and don't feel like cooking. The resataurant has a cup of soup and half sandwich special. Will probably have that; it's just the right amount of food for me.

Marinated tri tip steaks on the grill with a big salad. We don't really need a side dish when we do steak.

I made spaghetti. ( used a jar sauce to go with the hamburger and onions that I fried)

It was DiGiorno Pizza (thin crust supreme) a salad and non alcoholic beer. We make two meals out of the pizza, so lunch is ready for today.

But I want to tell you about our breakfast this morning. Decided on the spur of the moment to go out to a local Mom and Pop restaurant that is known for really big servings. We both ordered a "Keto Scramble" new on their menu. It was to die for! Three scrambled eggs, mixed with ham, sausage, bacon, many colored peppers, mushrooms, onions, broccoli and topped with shredded cheese of your choice. No carbs. but plenty of fat. It was so good! And we each had enough left over to bring home for supper. DH is insulin dependent diabetic, so not a meal he should eat every day, but maybe we will go back once a week.
