Comments (20)I made some salmon cakes and a big, colorful salad. Robert had his on a crunchy bun; I put mine on the salad. I tried a new Louisiana style remoulade sauce which turned out so great! I make my patties with canned salmon, finely chopped onion, celery, and green pepper, an egg, a couple of tablespoons of mayo, same of panko, and one tablespoon of coarse corn meal. It's a gloppy mess before being cooked but soon turns into a perfect patty with a browned, crunchy crust. Comments (15)Rigitoni with meat sauce, garden salad, long crusty french log, real butter (always). I put some apples in the oven with butter, cinnamon, and brown sugar right before dinner so that was dessert. The kids have been asking for french toast so tomorrows dinner/supper will be french toast, bacon, and a small fruit salad. Comments (22)It was DiGiorno Pizza (thin crust supreme) a salad and non alcoholic beer. We make two meals out of the pizza, so lunch is ready for today. But I want to tell you about our breakfast this morning. Decided on the spur of the moment to go out to a local Mom and Pop restaurant that is known for really big servings. We both ordered a "Keto Scramble" new on their menu. It was to die for! Three scrambled eggs, mixed with ham, sausage, bacon, many colored peppers, mushrooms, onions, broccoli and topped with shredded cheese of your choice. No carbs. but plenty of fat. It was so good! And we each had enough left over to bring home for supper. DH is insulin dependent diabetic, so not a meal he should eat every day, but maybe we will go back once a week....See MoreSupper Time on Thursday!
Comments (14)Supper was a lemon ice bar and 3 little pretzel sticks at 8 pm. That is because we went out for a late lunch to celebrate our 60th wedding anniversary. I had a salad, 2 crab cakes with a dijon mustard sauce and a veggie saute of brussels sprouts, onions, and carrots. DH had a salad, steak fries and an open face steak sandwich which was topped with an egg and cheese. Then we shared a dessert of bread pudding topped with vanilla ice cream, caramel sauce whipped cream and a scattering of blueberries and strawberries. Yes we both over ate!
