Best affordable not-nonstick roasting pan???

Does anyone have a recommendation? I'm looking for a good, heavy roaster for turkey and rib roast, etc. I like to make gravy right in the pan afterwards, so it needs to distribute heat well. And it must have a rack, though I actually prefer the flatter, lower type to the V-shaped ones... I have a non-stick one that my MIL gave me but we don't use Teflon any more for health reasons.... Can anyone recommend a good pan under $100?

Try Macy's for hard anodized roaster WITHOUT nonstick coating. They usually have them on sale, I think Calphalon makes a good one.

non coated are best! much better heat conductivity and distribution. non stick cookware doesn't heat up as well.

I'm looking for something that will hold a large turkey or a large prime rib. I used to use gas & I could put my roasting pan right on there out of the oven & make gravy or sauce & get up all of the brown bits in the pan. Since my pan won't work on my induction cooktop, I lose a lot of those nice brown bits because the pan usually isn't hot enough to deglaze it well enough. I'll check around for a restaurant supply. Thanks! By the way, I was REALLY unhappy that I let my husband talk me into switching from gas to induction, but I will never, EVER go back! Except for having problems finding this one pan, it's been the greatest thing to happen in my kitchen!

All clad stainless roasting pan - aluminum core?

Aluminum adds conductivity, stainless adds strength and protects from reactivity. Whether a pan actually warps also depends on the relative thicknesses of the metals. Thin stainless will warp more than thick stainless. Effectively clad stainless/aluminum combinations should not warp when used as directed, if the metallurgy and engineering are done properly. All-Clad's claim to fame is its metallurgy. I've never had a problem with warping when using AC stovetop products, although I do not care for the handle design, which is the main reason I no longer use them. I do believe the SS roaster, however, is a vastly overpriced product that does not perform as promised. Had I bought it, I would return it, too.

I believe it's a coat of silicon that gives it the non-stick covering, and it's heavy-duty type foil. I've only found it in 12-inch wide, 35 sq. ft. rolls, but I live in the middle of nowhere and the newest/latest/greatest may not always be available. My broiler pan for my toaster oven is pretty small - easily covered with a single width of foil; and if I need a foil packet for foil dinners, I just make them. Wish it did come in the pop-up foil sheets, but alas.... -Grainlady

We also got Emeril cookware for the induction top. I really like it...it has drain holes in the lids and the lids are clear so you can see how something is simmering or boiling without removing the lid. They are also reasonably quiet...some pots can be noisy on induction. Of course the best for induction is cast iron...either plain or enameled. Just make sure there aren't any burrs on the bottom of the pans or they may scratch the cooktop.

Not really an answer to your question, but you could try using a standard (non stick) pan, and use buttered parchment paper in the bottom,

Julie, I don't need any sort of non-stick function, sorry I wasn't clear about that. In fact I dislike it for many reasons: one being the chemicals and the other being that I prefer to have nice browned bits in the bottom of the pan that I can deglaze and make into yummy gravy :)

...so, I should be looking for anodized aluminum rather than stainless?

I wish I could afford the one that goes with my other classic All Clad pans, but it's way too spendy!

stacyneil, the A-C roasting pan HAS come down in price in recent months. Now both the Large and the Petite roasting pan are $159.99 most everywhere, and good discounts/deals on top of that can be found.

I just ordered the large roasting pan (which comes with a non-stick rack as well as lifters) from Bloomingdales. Got it with the Black Friday 20% off plus an add'l $25 off, which brought it down to $103 + tax, and free shipping. They are not showing the Black Friday promo anymore, but if you call the cust svce #, you can always ask if they can still apply the promo/discount(s) for you. It never hurts to ask (worst they can say is "no"). They've been very helpful in the past as well, and sometimes seem more than willing to extend special promos/discounts when asked.

I bought this one. Cook's Illustrated actually rated it higher than the All-Clad. This one is slightly bigger than the All-Clad and is not as heavy. I usually don't mind the weight but with this kind of pan plus a large turkey, I think it would even be too heavy for me.

I bought mine at Bed, Bath & Beyond with a 20% off coupon so it came out close to $100. I've used it several times already -- love it!

I had the anodized version of the calphalon pan. The rack looked exactly the same and was painted. The paint started to come off while the rack was being used in the oven.

I have an All-Clad roasting pan with the V-rack. There is a feature - might be good or might be bad, anyway I wanted to mention in case it helps you with your decision. The bottom of my pan has a channel running around the edge. Put another way, the center of the pan bottom is slightly raised. When browning meat in fat, the melted fat runs into the channel, leaving the meat high and dry. The meat does brown well there, but the stainless of the pan also scorches and blackens at those dry, hot spots. This is not a big deal, but requires a bit of extra scrubbing. If I were to buy a roasting pan again - which I won't, this one has lasted >15 years and will outlive me - I'd look for one without this channel. Otherwise, the All-Clad is a high-quality, sturdy piece with good handles and a nice thick bottom for browning.

Thanks, everyone, for your input! I really appreciate it. it sounds like that Calphalon one might be the way to go. Looks like they have a 14" for a little less, too, which might be a better size for us.

Just curious, haven't recived my pan yet, but we got the large one because it seems like it would be more versatile overall (in addition to roasting, have been wanting one for water baths--think creme brulee, for ages). We do roast chicken a lot, esp during the winter. I should be ok making a 3 1/2 to 4 lb chicken in the large roasting pan, right? I know the small roaster would be the perfect size for one chicken, but can't see getting both sizes (at least at the moment--even Santa has his limits, as does kitchen storage!).

DH and I are so tired of scrubbing the sticky grease off our glass Pyrex baking dish, so we're very much looking forward to using the A-C roaster.
