Kitchen Subway Tile Grout Color - Neutral or Gray?

My husband and I are having our kitchen remodeled. The cabinets are being painted black, we are adding stainless steel appliances and new granite (biano romano). The floor tile is 12x12 beige/gray with a cream/light gray grout. The dilema is related to the subway tile backsplash grout color. I love the look of the light gray (1/16 grout line) but i am worried that there will be so much going on with the movement in the granite and floor tiles that calling out the grout in the subway tiles will be overkill. Should I use a more neutral grout for the subway tiles? The tiles are an off white/cream (biscuit and i am also questioning whether the gray will look out of place since the tiles are not a bright white.

Thoughts? Has anyone used the Laticrete Silver Shadow? If so, is it a true gray or does it appear blue gray?
