Please help me fit a large refrigerator into my kitchen design

We are redoing our kitchen and I need help creating a design to fit a large refrigerator and avoid having to buy counter depth one. The current refrigerator I selected is 36"D with handles. Following Consumer Reports advice, only JennAir makes a reasonable counter depth refrigerator (from size to energy efficiency to price to noise factors). However, it is still about a $1000 more than standard depth. And, I would really prefer to have more space in the refrigerator.

Some of the ideas I've had so far was to create a little niche in the wall behind it but that will gain me about 2" max.

Another alternative is to create a pantry on one or both sides but we're thinking of getting IKEA so I was told that their installation vendor company can only 'bump out' their cabinets by about 3".

Any other design alternatives?

Please help!!!
