How many coats of primer? Not sure about new BM product !

A question for you loyal Ben Moore users (I noticed there are a lot of you here!):

I usually use Ben Moore Fresh Start primer. But I'm also usually painting over old painted surfaces.

I'm now priming the new sheetrock in the kitchen and adjoining rooms, and I am using BM's new Eco Start, zero VOC primer. The can's coverage rating is slightly more than the Fresh Start, and it says the same thing as Fresh Start: 1-2 coats.

But I've put a coat on and I can clearly see the drywall mud seams and patches through it. I guess I will need another coat, huh?

Does it always take 2 coats on fresh drywall because it's so absorbant, or is this product not as good as my usual BM primer? (I really prefer to use it; VOCs scare me as a breast cancer survivor and highly chemically sensitive!)
