Laminate Question (Bathroom Vanity)

Hello,

I posted on the Bathrooms board, but thought I'd through this out to you all as well. I think this board has more activity. I need to replace the vanity top in my son's bedroom. It is laminate and will not go with the new tile that we will be adding. I had thought of going with a stock granite countertop at Lowes or Home Depot, however my 48 inch cabinet requires a 48" top since it is sandwiched between a wall and another attached cabinet. (pic attached). I can't use a 49" top since I don't have room for the overhang. If I choose to replace the existing laminate with new laminate, what is involved? Do I replace the entire board/counter? Do I put the new laminate on top of the existing laminate? Can I peel the existing laminate off? Any ideas?
