Replacing trim on doorways/baseboards - help!

Dh is doing a remodel of our bath and small mudroom. Initially, it was to be a quick thing - mainly replacing tile of the adjoining 2 rooms, the vanity/sink and the toilet. Now, it has evolved into vaulting the ceilings in both and adding skylights.

He wants to change out all of the trim surrounding the doors and the baseboard trim also. He intends to continue throughout the house and replace all of that trim (eventually).

I had no idea he really planned to do this, and I have to decide by tomorrow (isn't that always the way? Well, in my house it is!).

He likes the look of rosettes in the corners of the doorways (is that what they are called?). I am unsure that I want that in the whole house - they seem difficult to paint (we like ivory trim) and dust collectors.

I am looking for any suggestions and/or pics of fancier trims for doorways and baseboards. Also, isn't there some sort of rule about scale concerning baseboard trim height? If anyone has a link to that info, I'd love it. TIA
