Stud height limit with 24' spacing, balloon framing

Finally after 3 years of planning we can start our kitchen/family addition.

First question, I wanted to use the new 24" stud spacing with 2x6's but now I've heard there is a height limitation on the studs. It will be a 20x26 foot room with a high open shed roof (matches house)with a loft over the high end. We had planned on balloon framing it and hanging the loft off the wall and supporting it with a beam. Opinions......

Also, we plan to use a slab because we want a radient heat and don't want/need the basement. We've remodeled in the past and when building new walls we've built on deck and tilted them up, nailed down. I feel stupid asking this but how do you tilt them up or can you when you have the bolts sticking up out of the sill plate???

Thanks, we are also looking into doing this with SIPs.
