I decided on mashed sweet potato but would like to put a topping preferably without nuts TIA

Butter and salt and pepper....that's all!

When I made them for the office party, everyone enjoyed this but you could leave out the nuts if you chose to:
1c packed brown sugar
1/3c flour
1/3c butter
1c chopped pecans
Combine brown sugar and flour; cut in butter and add pecans.
Top sweet potatoes and bake for 30 minutes.

I have never seen one....but if I were to do it, I would mash a cup of sweet potatoes and add 2 teaspoons of salt to them. Then mix 1 package of yeast with 1/2 cup warm water and stir in flour until it becomes rather stiff, but still able to be stirred, then stir in the sweet potatoes and keep adding flour until it's stiff enough to knead. This ought to make enough for 2 10 inch crusts. The crust will be very tender and not "snappy" and stretchy like ordinary dough. I would not hesitate to substitute sweet potatoes for the pumpkin in this recipe. I don't have a trouble with cream cheese frosting being light and fluffy. I think it has to do with the proportion of butter, cream cheese and butter. Pumpkin cake 1 cup brown sugar 1 cup white sugar 1 cup vegetable oil 4 eggs 2 cups all-purpose flour 2 teaspoons baking soda 1 teaspoon baking powder 1 1/2 teaspoons ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground ginger 2 teaspoons pure vanilla extract 1/2 teaspoon salt 2 cups pumpkin puree or cooked mashed pumpkin cream cheese frosting, below 1/2 cup chopped pecans Directions for pumpkin cake Mix sugar, vegetable oil, and eggs in a large mixing bowl; mix well. Sift dry ingredients into a separate bowl stir into oil mixture, beating well. Stir in pumpkin puree. Pour batter into two greased and floured 9-inch round layer cake pans. Bake at 350Â° for 35 to 40 minutes. Turn out onto racks to cool. Frost pumpkin cake with cream cheese frosting and top with chopped pecans. Cream cheese frosting 1 stick butter 8 oz cream cheese 1 pound powdered sugar 1 teaspoons pure vanilla extract Beat cream cheese and butter together, beat in sugar and beat until well blended....add vanilla.

We had really cheap potatoes here for about a week last summer. Don't know what got into me, but I ended up with 15 pounds of potatoes. I made up batches of scalloped potatoes (baked and froze them). But back to your question -- I peeled, cut, boiled and seasoned potatoes. Drained and cooled them - then packaged them and froze for future mashed potatoes. Just defrost, heat, mash and add your usual ingredients to finish up. Be sure to cook off the excess moisture after draining (that's something I always do anyway, but particularly important before freezing). I use a Food Saver vacuum sealer for freezing. If you have a vacuum sealer, you could prepare them to the mashing stage and seal and store in your refrigerator for a few days without a problem. I would reheat in a double boiler or in a bowl over hot water.

This is really good with the nuts, but you could leave out and replace with more corn flakes.

Melt 1 margarine/butter, add 1 C brown sugar, 1 C pecans and 2 C crushed corn flakes. Sprinkle over baked casserole and return to oven for 10-15 minutes

We love it over sweet potatoes!!

We have used a recipe for years of a sweet potato casserole with marshmallows on the top. [g] I know...not the healthiest choice, but we cut back on the sugar and cream that is mixed into the sweet potatoes, so that it is barely 2-3 T each of light cream and brown sugar in a large casserole. A serving actually ends up having about 1-2 marshmallows on it. Not too bad. :-)

How about some Brown Sugar, Cinnamon and Butter or...

I've heard of some recipes with coconut... never tried it but sounds good.

You could leave out the nuts here as well.

TOPPING:

1/3 cup flour
1 cup brown sugar
1 cup flaked coconut
1 cup chopped pecans
1/3 cup butter, melted

Combine all above ingredients until smooth. Pour into 2 qt. casserole dish. Mix all topping ingredients and spread over sweet potato mixture.

Bake at 350 degrees for 35 to 40 minutes.
