This is last minute so I guess it doesn't quite qualify as a casserole - but its good anyway :-) Following are some others that I like a lot. APPLE PUFFED PANCAKE 6 eggs 1-1/2 cups milk 1 cup flour 3 tablespoons granulated sugar 1 teaspoon vanilla extract 1/2 teaspoon salt 1/4 teaspoon cinnamon 1/4 lb. butter 2 apples, peeled, cored and thinly sliced 3 tablespoons brown sugar Preheat oven to 425 degrees. In blender (or large bowl) mix eggs, milk, flour, granulated sugar, vanilla, salt and cinnamon until blended. (If using a mixer, batter will remain slightly lumpy.) Melt butter in a 12 inch quiche dish or a 13 x 9 glass dish in the oven. Add the apple slices to the dish and return to the oven until the butter sizzles. Do not let brown. Remove the dish from the oven and immediately pour the batter over the apples. Sprinkle with brown sugar. Bake in the middle of the oven 20 minutes or until puffed and brown. Serve immediately. 6-8 servings. Melt butter, sugar and corn syrup in saucepan over moderate heat. Pour into 9 X 13 pan. 2. Slice bread into 6 slices and place on top of the sauce in the 9 X 13 pan, press together to fit. 3. Classic Crowd-Pleasing Tuna Casserole 3/4 cup green pepper, diced 3 cups celery, diced 2 onions, diced 1/4 cup butter 3 cans mushroom soup 1 1/2 cups milk 3 cups shredded cheese 24 oz. noodles 3 cans tuna (9 oz, each) 1 1/2 cups mayonnaise 3/4 cups pimiento 1 cup slivered almonds (optional) Cook green peppers, celery and onions in butter. Combine mushroom soup and milk. Add with cheese to vegetables, stir over low heat. Cook noodles, drain. Combine with tuna, mayonnaise and pimiento.. Pour sauce over. Top with almonds. If you want to freeze it, do it at this point. Bake at 425 degrees for 1/2 hour. Serves 24. I have it down to a science now, but I freeze my family sized portions in ziplock bags and just thaw and dump into a corningware dish to cook. I also freeze the occasional really large casserole dish of this (maybe half the recipe), since we rarely have big crowds at our house. Enjoy. If you don't like tuna, this can also be made with leftover chicken or turkey.

I would not hesitate to substitute sweet potatoes for the pumpkin in this recipe. I don't have a trouble with cream cheese frosting being light and fluffy. I think it has to do with the proportion of butter, cream cheese and butter. Pumpkin cake 1 cup brown sugar 1 cup white sugar 1 cup vegetable oil 4 eggs 2 cups all-purpose flour 2 teaspoons baking soda 1 teaspoon baking powder 1 1/2 teaspoons ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground ginger 2 teaspoons pure vanilla extract 1/2 teaspoon salt 2 cups pumpkin puree or cooked mashed pumpkin cream cheese frosting, below 1/2 cup chopped pecans Directions for pumpkin cake Mix sugar, vegetable oil, and eggs in a large mixing bowl; mix well. Sift dry ingredients into a separate bowl stir into oil mixture, beating well. Stir in pumpkin puree. Pour batter into two greased and floured 9-inch round layer cake pans. Bake at 350° for 35 to 40 minutes. Turn out onto racks to cool. Frost pumpkin cake with cream cheese frosting and top with chopped pecans. plllog, I also love sweet potatoes just roasted with butter, s&p. My family loves this particular sweet potato dish. Easy to cut back or omit the brown sugar. I know some people might also want to omit the nutmeg. (LOL, sorry if this is another URP!) Sweet Potato Casserole With Walnuts Can be made up to 2 days in advance. Keep covered and chilled; bring to room temp for baking. 5 cups baked, mashed sweet potatoes 8 oz. cream cheese, softened 1/2 cup butter, softened 2 eggs, beaten 1/4 cup (packed) brown sugar 2 1/2 T. dry sherry 1/2 tsp. salt, or to taste Optional: 3/4 cup walnuts or pecans, chopped 1/2 tsp. nutmeg (preferably freshly grated Preheat oven to 350. With electric mixer (not food processor) whip all ingredients, except walnuts and nutmeg, until light. Stir in walnuts and put in buttered casserole. Spread evenly and grate fresh nutmeg over the top. Bake for 45 minutes (depending on pan size). Note: I usually mix in the nutmeg instead of sprinkling on top. Instead of mixing the nuts in, you can top the casserole with them...candied nuts are another option for on top. ETA - I use an oval baking dish for this...11x8x3.
